    Carrillo's Caldo - Karioka

The aroma of sizzling meat tantalized our noses well before we ever reached the blue capped tent of…read moreCarrillo's Caldo, situated in the middle of Marine Park in Juneau. As we rounded the corner southbound on Marine Way, we saw a cloud of smoke wafting in the wind, and a huge line of people. Would we join it? Of course; the smell was too good to pass up. The line ended up taking about 20 minutes, and soon afterwards we sat down at a nearby picnic table to eat. Combo 1 ($19) - This combo dish comes with two skewers and rice. We went with one of each skewer: Chicken Skewer - Fantastic char on the exterior with blackened almost charcoal-like crunchy bits, but no burnt acridity at all. The skewer is covered with a supremely tasty sweet and savory glaze. The caramelized glaze penetrates every bite of the meat. The chicken is a little dry, but the flavor is phenomenal. (5/5) Pork Skewer - Similar to the chicken, great char, great flavor, but unfortunately the meat on this skewer is a little too far gone in terms of moisture. It's almost like eating a pork jerky given how desiccated the meat is. (4/5) The rice is not good. It's very undercooked with a disturbingly firm texture, making it difficult to eat. The only way we could stomach eating it was liberally pouring condiments on top. Luckily, the truck has a plethora of condiments to choose from. There's white vinegar, spicy apple cider-ish vinegar, and plenty more. Even with all the flavor enhancements, we ended up not finishing the rice. (1/5) We also ended up ordering dessert here: Karioka ($5) - Pretty nice sweet skewer... or at least it would be if it had been fresh. I could tell that the inside used to be bouncy since it seems to be made from glutinous rice flour. It's fried, so there's a doughy chew as well, but it's too far on the firm side, indicating lack of freshness. It does have a good coconut flavor and the outside is nicely sweetened. I think the exterior used to have a crisp sugar shell ala tanghulu, but again it's softened by the passing of time and moisture degrading the dessert. Still, it's tasty enough and nice to eat. (3/5) If I'm ever in Juneau again, I'd visit Carrillo's again, but for the chicken skewers only! I would definitely not get anything containing rice again. Maybe Filipinos like their rice undercooked and hard, but not me!

Very tender, flavorful pork. Whole dish was gently sour, allowing the ginger flavor to still come through nicely. Longanisa and bbq pork skewers are the easy choice for Filipino food newbies. These were well executed here. The strong sweet/savory flavors are complemented/cut by the plainness of white rice for a tasty, filling experience. Together - this is Filipino comfort food at its meaty/carby best.

The vibe is more of a western style diner and they do serve standard American diner food as well. But I would just stick to the filipino menu! Stuff tried Pork Sinigang: nice and tart! This broth is truly healing when it's cold outside! Made with pork belly, cabbage and green beans, this hearty version of sinigang is one of my favorites! Lechon Kawali: there really is no way to go wrong with fried pork belly! Freshly fried and crispy! Beef kare kare: served with eggplant and green beans, everything smothered in a thick peanut sauce. If you like your kare kare a bit on the funky, ask for the house made housemade bagoong. It's pungent! Bicol Express: a bit on the saucy side than what I am used to but had great flavor and not too spicy. Longanisa: not sure if they were made in-house but they are yummy and fatty! The place always seems quite empty but most of their business it seems is from togo orders. Because of the slow in person business, sometimes you have to holler in the kitchen to see if they are really open! Nice folks!

My food came sizzling on a plate with very little wait time and the rice was perfectly cooked. They have boba tea and so many other things to choose from. If you're visiting or just out with family you should stop by. FYI I do not give 5 stars very often.

Bernadette's Fast Food - Meat Comparison. Bernadette's on the bottom, Carillo's on top

Is this an indication of faster service? Or is it because the food is worse? We ended up picking a pork skewer to compare. Pork Skewer ($8) - The first piece I ate seemed to be superior to the Carillo's version - still with the sticky sweet savory sauce, but a fattier and juicier piece of meat in the center. Subsequent pieces destroyed my initial impression. This business seems to be using very low quality cuts of meat, filled with fat and gristle, making the meat very difficult to chew and eat. In addition, some pieces of the meat taste old, as if they are close to rotting, kind of a nasty flavor that made me not want to finish the skewer. I guess the only real advantage as that the skewers they serve are larger than that of Carillo's? (2/5) Well, I certainly learned why the blue tent had a longer line... Maybe the chicken skewers and other food served at Bernadette's are better? I'm not sure, but I certainly won't be revisiting.

The menu offers most of your popular items. I spied sisig so I definitely had to get an order of that. I also got an order of lumpia and turon. The sisig was a smallish portion wrapped in foil but it was really delicious. This version tasted different than others I've had at restaurants and there was a definite spicy kick to it. The lumpia and turon were also quite good with a crispy outer shell and plentiful filling. Service was friendly and it took a few minutes for the lumpia and sisig to be ready for us and the turon was premade so we only needed to grab one from the stack on the cart. Since Bernadette's is a food cart, you could say the ambiance is the surrounding port area which is a scenic place to sit off to the side and eat your tasty meal.

It's the experience I really enjoy, the staff is friendly and the food is good. Their menu rotates quite a bit and you have to be open minded going in and willing to try new/different stuff. My favorite dish is Bikol Express, Pork with coconut milk and some zest. Taro leaves, sweet and sour wings and adobo are also wonderful. I usually avoid adobo, pancit and spring rolls because our town is overrun with those Filipino staples, but adobo is good none the less. I also enjoy the TVs with the goofy(by American standards) shows, the mixed in English you can barely tell what's going on. This is not a fine dining restaurant, it's very much a hole in the wall experience, don't expect much else. the $10 2 item meal also comes with soup, but you have to ask for it. An off menu drink/desert which is tasty is called Halo Halo. Give it a try.
