"Truthfully", this is probably my favorite barbecue spot in Houston. In general, it works like most barbecue joints -- you go through a line and order by the pound or get a plate, with the sides as you go through the cafateria style line. Their selection of meats and sides is really above average compared to a lot of places. Every side I've tried here I've actually liked. They use Martin's bread, and they'll give you your accoutrements like pickles, escabeche, and the like. If you like those, make sure you ask for extra up front -- there's no stand to go grab them later, so you've got to get them when you go through the line. Large seating area with many large tables and a full service bar. The seating does get a little filled up when they are busy. I suggest coming early and being in line before doors open. I had Jalapeño cheddar (they were out of the pepper jack that I would have gotten). The casing is fairly thick and hard to cut through with plastic utensils, and the inside is fairly dense. They do some specials each day but I went with three meat plate with two sides. Speaking to a regular in line and she mentioned that turkey is great and tater tot casserole. Came here right when opening to avoid a line and found the experience to be okay. The flavor of the brisket was good and it had the ring you'd expect, but the temperature was very lukewarm. The tatertot casserole was interesting and the corn pudding was my favorite side! The brussel sprout were okay, a tad sweet for my palette. The house sausage was seasoned well and had a good snap to it, but similar to the brisket the temperature was also very lukewarm. Overall, I'd say it's okay. We were in the area visiting a friend in the hospital and were able to check this place out before they closed on a Saturday. We have been wanting to try this since we saw the Texas Monthly list. I called when we were headed over and they said "they were sold out of everything except brisket and sausage." That wasn't a problem for us since that's what we were going to order. We got in line around 7. There were about 50 people ahead of us. By 7:20 they made the announcement they were just down to chopped brisket. Again, we were ok with that too. Delicious BBQ! Lines seem long, but thats just the tight entrance space. I didn't get it, but I saw the beef ribs and they literally look like a dinosaur's leg humongous. I got the jalapeño cheddar sausage. It's not spicy, but definitely flavorful. The brisket is just amazing. I love that if you're not sure what side to get they'll let you sample a little bit so you can decide. The corn pudding is so delicious but I get it. It's not for everybody. Brussels sprouts are a top choice as well as the mac & cheese. The tea is super sweet so I recommend doing maybe a half-and-half, but they also have other drinks to choose from. I'm visiting Texas with my dad, he thinks this trip is about "learning the different cities." I'm here for BBQ. We showed up around 6pm and hit a 30-minute wait, which felt fair. Ordered about 3 lbs of pork ribs and half a pound of brisket. Let's start with the miss, I asked for fatty brisket and got mostly lean. That's not a small detail, it's kind of the whole point. The lean brisket lands around a 6, solid enough but lacking the richness you want. The few fatty pieces we did get were much better, around an 8, and honestly would be pushing a 9.5 if they were served hot. The ribs are where things get frustrating. Flavor, great. Texture, exactly what you want. But they came out warm, not hot, and that matters. If these ribs were served properly hot, they're easily a 10. As is, they drop to about a 7, which feels like a missed opportunity more than anything else. Cole slaw was a surprise standout, fresh, balanced, easy 9. The baked beans were pretty good as well, maybe slightly sweeter than my taste, but still solid, an easy 8. Service was genuinely good. At one point my dad mentioned needing silverware, and a staff member overheard and brought it over without us asking again. Small moment, but it stuck. All in, this is a place that's very close to being excellent but misses on execution in ways that are hard to ignore, especially at around $130 for two people. If I could land at a 3.5, I would. This place does get pretty busy and the parking can be challenging. They have this window where you can see the staff seasoning the meats. All of the staff were friendly and upkeep the place really well. They give out samples of the brisket at the counter which i thought was neat. They had moist brisket, turkey, banh mi, sausage, and more. The variety of the menu is pretty unique for a bbq place. The inside is very spacious compared to other bbq places. They even had a bar around the corner. I tried the jalapeño sausage which had a little kick to it and I think some cheese. Then I tried the moist brisket and that was fatty and juicy. The ribs were also pretty soft and had a crispy outer layer. The Brussels sprouts were nicely cooked but not too heavy on flavor. Finally got a chance to try the infamous Truth BBQ. Parking is a little bit hard to find but there's an HEB nearby so if you really need to, you can always park there and walk over. I went on a weekday and during prime lunch hours and the time it took me to get the food was ~45 minutes. Line moves pretty quickly and given how popular this place is, I have no complaints. Nice staff AND HUGE portions. A 3-meat plate is normally just right for me but it was MORE than enough. I will say I had better brisket elsewhere but the ribs and pulled pork were delicious. Truth be told, Truth BBQ was just okay. Maybe you BBQ aficionados just have a different palate than myself, and that's okay, but I personally couldn't justify the 40 min wait. I was super disappointed that beef ribs are Saturday only! BOOOO! While you wait, they do give you a little sample of brisket once you make it to the front. The sample was super tender, so we ordered a 2 meat plate with brisket and pork ribs, as well as an additional 1 meat plate for extra brisket. Each plate comes with 2 sides, 2 slices of bread, and they also give you sides of pickles, pickled red onions, and pickled veggies. I really loved how colorful and full all the sides made the plate. Pickles are a nice way to cleanse the palate between bites! I personally do not care for sliced bread that isn't toasted, however these were very soft and fluffy, so my daughter ate one whole one. Our sides of choice were the tater tot casserole, corn pudding (basically a creamed corn casserole), potato salad, and baked beans. The sides are where it's at! The selection of sides is what brought me to Truth over all the other BBQ spots in the first place, so I was happy they didn't disappoint. Both the tater tot casserole and corn are a bit mushy, but I personally love that texture. The baked beans were soft and sweet, and the perfect complement to the other savory potato sides. BTW The potato salad gets topped with bacon bits! I asked the man serving the pickles if I could have a little extra bacon, which he wasn't stingy about at all, so I def appreciate the customer service! The pork ribs were tender but nothing to write home about. The brisket was super tender where the fat was, but pretty dry on the bottom half. Finally got to try truth and now I'm mad I waited this long!!!! Came about an hour after opening to an already 3 lane line. So parking took about 5-7mins to find. I was in Houston for 2 days as part of a stopover to Japan, and I had my friend take me to some of the best that Houston has to offer. The mac n cheese was creamy, and the chopped brisket had a lot of fat and juice...which I know some people don't like excess fat, but I was perfectly okay with it. The corn pudding was great as well, it's not something I usually find up north where I live. My friend decided to add a tub of brussel sprouts and asked me to try it. I'm normally a brussel sprouts hater, but oh my goodness...it was amazing!!! I don't know what kind of broth and flavours they added to it, but the brussel sprouts are definitely a must try here. It's over the counter service here, so don't expect much. However once you're inside it's quick serve and you're out in 30 minutes or less. Highly recommend this place! As for the food itself: Beef rib: (4/5) it was pretty good but for the price I would have liked more flavor. While any side will probably be delicious, I enjoyed the tatertot slaw and corn pudding which is essentially tatertots prepared with cheese and some resemblence of a coleslaw but with potatoes. The corn pudding is corn bread, but more mushy. Both were good. As for the brisket, pork ribs, and sausage? Yeah they were pretty great, juicy, and tender. Eat it by itself or with their 3 sauces, it's delicious regardless of what you do. So if you don't know which Texas BBQ to eat, start with the Truth. Second time here. First time for my wife. This place is just Awesome. The look, the smells, and overall experience is something else. The aroma of smoked meats hits you as you pull into the parking lot. Both times I've stood in a line waiting for them to open. Both times as soon as the doors open the line moves at a good pace. They have there system in place to keep things moving along. In no time you're seated at one of the many tables ready to enjoy some of the best bbq you've ever had. I visited Truth BBQ this weekend and overall had a solid experience. The atmosphere is warm and welcoming, and the staff really stood out! They were incredibly friendly, let me sample sides, and checked in often throughout the meal. The line was no joke (about 45 minutes), but I did appreciate the water station while waiting. Food-wise, everything was good, though not perfect. I was bummed the beef short ribs are only available on Saturdays since I came on a Sunday. I ordered the brisket plate with three sides--the brisket was solid, mac and cheese and corn pudding were both tasty, but the coleslaw was underwhelming. Definitely one of the BEST BBQ's in Austin Texas. My group and I went to another location for their BBQ and while it was good, it wasn't anything compared to this BBQ spot. This is the TRUTH! We had the brisket Philly sandwich, pork ribs, and the Jefe (brisket sandwich with grilled sausage). Everything was finger licking good! One highlight was the tater tote casserole which was somehow moist and crunchy at the same time. Pork ribs were fall off the bone good. We brought a pound a brisket home to give to our neighbor and they did a nice job vacuum packing it for our flight. read more
