As for the condiments I went messy with mayonnaise, spicy brown mustard and of course I had to get it Mikes way which is an olive oil blend and red wine vinegar. As I walked through the doors during lunch hours on a weekday day the place was quite busy, but the line was moving steady and fast. There were many tables to sit at with also a sitting bar to enjoy your sub while looking out the clean glass windows and admiring the finer things in life. They have a pickup station where all online orders will be waiting for you as soon as the item is ready. As I walk up to the station, I notice a brown Jersey Mikes bag with a receipt of my order and my name written on it. I went ahead and picked it up and proceeded to find a seat to unwind and fill up my tummy. The sub was wrapped in paper that was perfectly packaged while the bag was sealed with a taper. The sub was looking stunning and fresh as to where I couldn't resist any longer and I knew I just had to dig in. The bread was airy and soft with a nice snap back but yet very pillowy. The first thing I noticed was the splash of red wine vinegar and olive oil that coated the sub very well. The finely shredded crisp bright green lettuce and the taste of sweet vine ripe tomatoes made a huge impact on the meal. The pungent red onions and sour dill pickles mingled in the rest of the flavors while the condiments of mayonnaise and mustard added a creamy smooth finish to this masterpiece. Everything tasted great and the quality of the food was suburb and outstanding. Near the end of the line, they use tongs to toss the salad well with your chosen dressing. My wife had 2 different dressings, both on the side. Then you can choose bread. I chose none. My wife chose what looked like baked of fried pita bread chips. Adding protein to the salads drove the cost by $3.95 (chicken) and $4.95 (salmon). My wife ordered a tea - that was $2.75. With tax and 15% gratuity, our lunch out cost $38.89. Not inexpensive. We both felt the lettuce and vegetables were all fresh. The proteins were great too. She enjoyed her ginger tea as well. The amount of Gyro meat was adequate (it was carefully weighed during assembly), not over abundant. The Tzatziki sauce was definitely lacking. It was there but it wasn't flavorful. The Greek dressing was decent and the amount of lettuce was good as well. The store wasn't busy around 1 pm on a Saturday. The indoor seating area is quite large. There were ceiling fans going and it kept the interior very cool. We put on our light jackets. I found the place to be clean as well. If I was at the east end of town and wanted a quick Greek meal, I would eat again at Stop-N-Go Gyros. Likewise, if I was on the 287 corridor, I'd definitely stop at Gyro Stop.

There's a small bar tucked into the back corner, several four-person tables, and a couple of wooden booths along one wall. When you walk in, you order at the counter window. They give you a number for the table, you grab a seat, and they bring the food out to you. The staff was friendly and polite, checking on us here and there without hovering. I went with the Texas Trinity Platter: brisket, pork ribs, garlic & pepper sausage, and Mexican street corn for my side. I also ordered a Brisket Tostada. The brisket had a nice smoke ring, decent bark, and that Central Texas, Mex-Tex seasoning profile. What I enjoyed most was the seasoning wasn't too salty or laid on too thick. It added flavor without masking the beef. The pork ribs were moist and close to fall off the bone, but still held together enough to get a good bite. There was plenty of smoke, and again, the seasoning complemented the pork instead of overpowering it. For the sausage, I chose the garlic & pepper. It had a good snap, was juicy inside, and had a light garlic flavor with a little pepper coming through. The texture was a medium grind with a good balance of lean meat and fat. But the surprise for me was the Brisket Tostada. The tostada was crisp and thick enough to support everything piled on top. There's a thin layer of refried beans, thick slices of brisket, a little salsa verde, cotija cheese, and a drizzle of Valentina's. And yes, you can actually pick the thing up and eat it without it falling apart or turning soggy. I'll admit I was eating it a little faster than usual--not because I was worried about it falling apart, but because it was that good. LOL. The salsa verde helped cut through the richness of the brisket and beans, while the Valentina's added a little extra kick without taking over. The Mexican street corn was also well seasoned without being heavy-handed and worked well with all the meats. For a first visit, Hurtado's checked a lot of boxes for me.
