I was able to visit yesterday in the early afternoon and I had high hopes since I knew it was a Michelin Bib Gourmand. The moment I walked it it had such a cool, modern but also retro vibe that was a perfect atmosphere for dinner. I took a seat at the bar and it was the best choice because i was able to get my food immediately, and see it being easily made as well. I started with the wakame salad which had a great vinegary taste, and the vegan dumplings which we super filling. Next, the Toki wings had an such a unique batter taste and had a good amount of meat on them. The star of the show though was the mala garlic tonkotsu, which I would probably drink straight if I could. It starts off as a light flavor but the packs a deep punch, different from typical ramen spots. The chashu was unique in being a thin strip, but it didn't miss any of the char or taste. Their new dessert thats being rolled out next week, Purin, had a complexity of flavors from the flan, the sauce, and the crunchy nuts on top. Summary: Temper expectations Don't get me wrong, the food wasn't bad, just that I went in with much higher expectations. The chicken on our steamed bun appetizer was slightly overdone. The ramen and mazeman were decent. We actually liked the drinks but don't think the drinks by themselves would draw us back. Service was good but not exceptional. Note that they have a mandatory service charge 18%, which is fair, but wasn't communicated. Location wasn't the greatest and parking could be tricky although we lucked out. The ambiance was really good. Good options with the inside and patio seating. Not sure how that would fair on a really warm day. HECK YES Toki Underground has come to Baltimore! I've tried their DC spot a few times and was pumped to see them expanding, better yet so close to me. I've been stalking their socials to see the designs, ideas and opening dates. After a soft launch they opened up Yelp reservations and I was able to make a reservation very easily! We arrived at the newly opened restaurant with excitement! There is parking available but street parking was ample. When we arrived we were seated promptly. The space is upbeat, detailed, and purposeful. From the open kitchen to the skateboard moving above your head - you can tell a lot of thought has gone into this space. We sat at the counter and were greeted by several staff members. The service was impeccable! Friendly and very thoughtful. I've had a lot of ramen but still had questions, the server was super helpful and made recommendations I probably wouldn't have gone with. My favorite dish of the night was definitely the pan fried pork dumplings. You get six dumplings on top of a sauce that is very flavorful. Within the sauce there were notes of garlic and scallions with addition to fresh scallions on top. I went with the red miso ramen and my husband got the curry ramen. Both were excellent dishes with very flavorful noodles but I felt the red me so could have used a little more flavor or saltiness. I will try it again with the spice bomb added! I'm excited to keep discovering all the little design choices within the restaurant and try more menu items. Make sure to check at the bathroom, they are a lot of fun! Coming from LA, I have had ramen from the best places outside of Japan. The restaurant is in a cute place and the bathroom is pretty quirky - imagine The Shining..pretty cool experience. The skateboard deck fans were very cute. Interior was legit. Ordered the Chicken Shoyu. I expected the noodles to be a certain elasticity and gauge, these were not. I think they just dropped in a bag of Bihon (Pancit noodles). The broth is also too salty. However, loved the chicken that came with it..reminded me of Korean samgyetang chicken. One easy thing I would suggest is to raise the serving temperature of ramen. It came out just warm - just north of tepid. Baltimore just got another superior ramen spot. The space is large, but still feels intimate. The main dining room is open to the kitchen, so you can watch as the magic happens, and there are several counter seats that put you feet away from the action. We tried a variety of items from the menu, and they were all superb. The curry ramen was rich and had layers of flavor. The vegan ramen was so much more interesting than the usual vegan option. It was spicy, but had a mild sweet undertone from pickled beets, and also came with some sort of mushroom bomb that added depth and richness. For the ramen you also have the option to add an "endorphin bomb," which is a very tasty spice blend that will likely make you sweat, curse, and cry for your mother. The real star of the meal was the mushroom Dan Dan. I'm not entirely sure what made it so good, but it was silky, lush, and really just something special. The pork belly bun was a close second best, coming deconstructed so you could add the sauce, kimchi, and slaw to it in the ratio of your choice. Met my daughter and her friend last night for dinner at Toki Underground and had a wonderful time. Such a unique decor, cozy high tables around a bar area but it was not noisy at all. I'm not one for drinking but the girls had ordered two different kinds of sake and I discovered I REALLY like Ozeki Nigori sake. It's creamy, velvety, and a little sweet and I did not have my usual allergic reaction to alcohol (my face turns red, and I have some trouble breathing, which is why I don't typically drink!) We ordered many appetizers: Dumplings 3/5 (pork filling was a little hard/mouth feel was off) Cloud shrimp 5/5* - the kimchi kewpie mayo aioli was so delicious, I used it on the bao bun too! Pork belly steamed buns 4/5 - came with cucumber slices, scallions, a grain mustard/mayo aioli which was not as good as the kimchi kewpie mayo aioli and the pork belly was very thinly sliced and a little tough Chicken kaarage 4/5 - flavorful small pieces of chicken with kewpie mayo aioli Then we tried three of their ramen: red miso, classic, traditional tonkatsu We frankly couldn't tell that much difference between the red miso and the classic in terms of the soup flavor. Only the tonkatsu tasted significantly different and I liked that one the best: 4/5 - largely because of the quality of the pork belly (see note on bao bun - similarly very thin slices and tough meat which is weird for pork belly). It's also hard to rate ramen in Baltimore well against ramen in Jtown in LA or Tokyo! But if you're in Baltimore and looking for good ramen and apps and that Ozeki Nigori sake, give Toki Underground a try. read more

Finally! An awesome ramen place in Baltimore has finally opened. Toki not only has delicious, slurp-able ramen but also has a wide array of mouthwatering appetizers. My friend and I went for New Year's Day lunch and indulged on the brussel sprouts, pickle plate, kimchi, pork potstickers, and the shrimp bao buns. The appetizers were all amazing except for the potstickers which came out cold and crunchy to the point of almost stale. Delicious food in a nice intimate setting! Stopped by Toki Underground for dinner as it has been on my list of places to try. First off, the service was amazing. Our server was really knowledgeable and I respected that he asked us upfront about any allergies or dietary restrictions and had a bunch of suggestions based on what we said. The food was delicious as well! I tried two appetizers: the sake-battered cauliflower steamed buns and the shiitake-yake. For the sake-battered cauliflower steamed buns, I thought all of the items to make it complimented each other well but I wish the steamed bun was a little bit fluffier and the cauliflower a little bit crispier. The shiitake-yake was like a potato dumpling with shiitake and some other veggies stuffed inside. The exterior was crispy and the inside soft which kind of gave me a hash brown vibe. For the ramen, I tried the Toki classic. The ramen broth was nice and rich and the chashu pork belly was very delicious. Also, I liked that they used Chinese broccoli as the veggie in the ramen as Chinese broccoli has a nice crunch to it. Overall, would definitely recommend coming if you're in the area! Toki Underground is a creative ground for Japanese Izakaya-inspired ramen and foods. Located in Baltimore's Harwood neighborhood, Toki Underground develops a modern and slick space in an otherwise unsuspecting location. The ambiance is thoughtfully designed here to be intimate but casual enough to bring a small group for an outing. Upon arrival, staff are quick and eager to recommend and advise. The menu is curated to showcase Japanese classics plus adaptations from other Asian cultures. The karaage was crispy and juicy, paired with a lemon and aioli to cut through the subtle fats from frying. Definitely would recommend this appetizer. The pork belly bao on the other hand was divine. Though filling components were separated and had to assembled individually, each ingredient shined and delivered in taste and quality. The pork belly was one of the crispiest pork belly slices I have ever experienced. I would say this dish is a must have coming here. Finally, the Toki Classic Ramen is unique experience if not a satisfying meal by itself. The toppings of scallions, Chinese Broccoli, soft egg, pickled ginger, and nori were quality but not the main show. The broth and noodles were by far the most interesting features of the ramen (as should be). The broth upon initial contact was underwhelming to be frank. It was less rich than typical ramens and didn't really taste like anything special. However, given enough time to introduce all the components of the ramen together, you experience something truly new. The pork topping dissipates a rich savory flavor while the flora components introduce a subdued but present flavor of freshness. This ramen is innovative with its transformation over time and thoughtful additions of different toppings. Overall, a dish worth trying. Overall, Toki Underground is a breathe of fresh air to Baltimore's local food scene. I went to the Jinji chocolate Valentine's dinner with my partner and we were both thoroughly impressed. Both the quality of food and the portion sizing were extremely well worth the cost of the meal. I personally loved the additional menu items for the event, such as the Seared Duck Breast in chocolate and orange sauce, as well as the passionfruit drink "My Bleeding Heart". Having been to the one in dc numerous times, I was excited that they opened up a location in Baltimore! It's a little bit bigger than the dc location, which is great to serve more people. I had made a reservation even though we went for like a senior citizen dinner around 5:30, lol. We had no problem parking right out front at that time of day, and we were the only people in there when we arrived, but it quickly started to fill up on a Friday evening. We enjoyed the pan-fried pork gyoza, the pickle plate (which I was expecting pickles, but it was actually pickled things, which was a fun surprise!), I had the Dan Dan Noodles (no shrooms, add chicken), and hubs had the Brontosaurus bowl. Toki Underground has hit the Baltimore food scene and what a wonderful addition it has made! The space is larger than their DC location, and many of the same items are still at this location. I walked in and was warmly greeted by the staff. I loved how spacious it was inside, and that there was a comfortable heated patio connected. The bar area is perfect and the decor was edgy and very fitting for their unique menu. My friend and I split some great quality sake, which was perfect for the cold day. Additionally, I got the classic Toki broth and shrimp bao. I absolutely love their classic broth and wish I had more room for their ramen, but this was a perfect introduction to this location. They were kind enough to let my friends and I dine 30 minutes before they closed the kitchen, and still gave us excellent customer service. It was my first time and I'm honestly giving it a five because of the service and the ambiance. I obviously can't speak to everything on the menu but my server was super nice and he didn't like hover. He read the room and knew when to approach and when to not interrupt mid convo/excitement. My friend and I shared the pork dumplings and kimchi. I got the Toki classic ramen and my friend tried one of the broth less noodle dishes. The ramen and broth were both delicious and the portion was generous! We opted to share the miso-butter-creme cookies. Really unique! It was the perfect blend of sweet and salty. I took off a star because it was uncomfortably hot in the room we were seated in. We were in the side room (that was really cute, I could see it having a cool vibe when the weather is nice!), it just got very warm (and I'm generally a person that runs cold). The moment I heard that Toki Underground was coming into Baltimore, I was excited, then I saw that the restaurant was going to be less than half a mile from my house, and I jumped for joy. I had lived in DC before coming to Baltimore, and I cited in those long lines to slurp up some of the tastiest ramen around. I'd always go with the Classic, but then supersize it with extra noodles, nori, and egg, and there would still be plenty of broth. So when it came time that the restaurant opened it was a whole new ball game. Reservations take a lot of work to go by, as with any new restaurant, not to mention when you get in there; it is a small space. My wife and I made a 5:00pm reservation, the first service of the day and the only remaining reservation. The building could be more inconspicuous in Greenmount but closer to 28th Street. There is artwork, but one landmark that can help is a rainbow archway that serves as an entrance to a community garden across the street. My wife and I were seated and promptly served by Shelby, who was fantastic from start to end. The only blemish that I have is the lack of a beverage program. There was only one cocktail on the menu. A pork belly old fashion; however, it left my wife wanting more; it was an old fashioned with a piece of pork belly on top of an old fashioned, there was a hint of smoke, but it just felt like it lacked something. The restaurant does collaborate with Peabody Heights Brewery, a Yuzu Gose, and it does well with the ramen, whether you take it spicy or regular. I have faith that the beverage program will improve, the restaurant has been open for less than a month but will continue to get better. I would go with my usual, but I did want to try other items on the menu, so I went with the Mazeman; although tasty, I am going to lean back on my usual with the occasional time I will do something different. At the end of the evening, we added a round of beers for the staff because you can do that, and you can see that they are working hard and will continue to work hard so long as the community and beyond will continue to show. There's also a parking lot, which gives you another incentive to check it out. The increase in space also allows you to take in more of the decor and art while you wait for your food. I'm no ramen expert but I really enjoyed my meal at Toki! The decor and overall vibe of the place is so cool, I love when businesses take the time to make the interior of their restaurant stand out. I've heard people say this location is larger on the inside than their DC one but I found spacing to be a wee bit cramped, I sat at the bar with a lovely young lady and it felt like we were elbow roommates lol. I'm sure it intended to be that way to give the authentic ramen bar experience. It may even be a neat way to get to know your neighbor and talk about the restaurant together if you're an introverted lil baby like me. We've been a few times and enjoy that there are a few extra options showing up on the noodles list depending on what proteins are available - but I haven't been able to tear myself away from their classic bowls to try the visiting ones yet. A night out with the bestie. We popped into this corner spot to enjoy some ramen on a chilly night. We didn't have a reservation, noted for next time and suggested for future patrons. I think from social media and what I have seen from the DC location reviews I expected more. Like other reviews mention, it's not located in the best area. We ended up parking on a neighborhood street around the corner since the street parking directly in the front of the restaurant was filled when we arrived. We loved looking at the decor choices and enjoyed the open kitchen style since we sat at the bar. The food was ok, especially for the prices. Our server was very nice and checked in on us, but it was very slow to receive our food. The two of us dined for about 1.5hrs, mostly waiting for food. We got the karaage chicken appetizer, kimchi ramen, and pork belly mazemen. Overall we expected our serving sizes to be a bit bigger, with more protein served based on the prices. My boyfriend added pork belly to his meal for $6, however, the amount given was two small pieces. The ramen soup base was good, but thicker than we are used to. The mazemen sauce had good flavoring but they put too much sauce that I had a pool left in my bowl at the end. It was a little odd that the outside of our bowls were sticky and messy as well. The pork belly did have a nice crispy, charred crust. Chicken karaage tasted good and crispy, however, like the items before, we wish the serving size was a little larger. This place used to be so so good and they have changed several recipes for the worse (the breading on fried chicken was incredible and is now really bad) and removed several items from their menu and I'm not entirely sure what's going on but I don't think I'll be back unless I hear things have turned around. I really want this restaurant to be good and so I hope they figure it out! read more

So disappointed, I think possibly the worst ramen I've ever had unfortanately. Service was fine, but I think the owner needs to revisit the menu. read more
