Outstanding hidden gem! I originally tried to come on a Saturday night at 9pm and it was a 2 hour wait for 3 people. So, I tried my luck on an early Tuesday night and was seated at the bar right away. It is a small space so I see why it fills up quickly on a weekend. Check in at a desk when you enter and then take a staircase down to a basement level for this small bar. The waiter was excellent. Very friendly and great with offering opinions on drinks. I had the 'Venus' drink in mind when I arrived because the photos looked great. However, they introduced a brand new menu today! Thanks to my waiter I was able to narrow down a different drink and he even assured me if I didn't like it then they would make another. Great service! This place is known for its unique cocktails and theatrics for some of them. I ordered the Noir, which was excellent! At $20, it comes in a unique metal ring and has garnishments. A mix of cherry vodka, black tea soda, lemon, bergamot, and oud it was sweet and did not have a strong alcohol after taste. Tastes light despite having the same alcohol as other drinks. For non-drinkers they also offer two mocktails on the menu, but don't expect the same cool glasses or theatrics. There is a small dining menu and desert options too. If you make a reservation, then you will be seated at a table for the pre-fix tasting menu. Also, note they charge 18% gratuity to every bill regardless of how big or small your party is or what you order. (So expect your $20 drink to already cost about $25.) Drinks range from $17 all the way to an expensive $30 for one cocktail. Seating can be a little tight. Expect to show your ID and vax card before entering. A restroom is available. This place has always been on my list and my friends and I finally got the chance to try it one night. We sat at the bar which was cool because we got to see the bartender making every drink and there is so much creativity that goes behind these drinks. The drinks are pretty but that's pretty much it. It was quite difficult for us to finish our drinks (one of us didn't even finish), especially given the price. We go to speakeasies a lot so we're used to $18-$24 per drink but this place was a lot more and not as worth it. It just didn't taste good at all - 0/3 of the drinks we ordered were good in our opinion. I would personally go elsewhere for cheaper drinks that I actually enjoy drinking. Thyme bar in general is an intimate and classy environment. The bartenders are probably mixologists or just very experienced in mixing drinks properly because the cocktails they curate are amazing. At the moment they are only accepting reservations for their tasting experience which is $85 per person for a 5 course experience that includes, a shot, two cocktails of your choice , and one an and a dessert of your choice. An 18% gratuity is expected at the end of the experience. Thyme bar is an extension of Chanson. It's located in the basement area of Chanson which they created into this intimate bar area. I wouldn't call it a speakeasy per day but it's a cool little spot that's great for a date night or with a small group of friends. Our server was great! Very friendly and attentive and explained to us how the experience works and what each selection would be like for the cocktails. Overall, had a fun girls night and enjoyed every bit of the experience. From the shot disguised as an oyster to my truffle fries, cocktails, and the dessert. It was sublime. The experience is definitely not on the cheap side, but definitely a cool experience to try out or for a special occasion. I've been wanting to visit Thyme Bar since their opening, and finally got my chance! I made a reservation through their website, but at 5pm on a Saturday there was plenty of open seating. We sat at the bar (nice because you get to watch the drinks get made) and were quickly approached by a very helpful server. The cocktails here are incredibly intricate and have a ton of unusual ingredients, so unless you're extremely knowledgeable, the server's advice is crucial. And most of the cocktails here are about $25, so choose wisely! I also loved that the menu showed how intricate the presentation of each cocktail was, with a cute little floral legend. I got the Primrose & Rye, which came in a nest with burning incense at the base - pretty good, tasted like a Whiskey Sour! My friend got the Health Bloom (similar to a mojito in appearance), which was my personal favorite, even though it doesn't come with any intricate presentation. My other two friends ordered the Ambre Nuit (comes in a lantern! pretty strong) and the Eucalyptus Watercolor (my least favorite, personally - just because the flowers at the base are edible, doesn't mean they taste good). As a lover of craft cocktails I was really looking forward to visiting Thyme Bar as the menu and pictures looked amazing but sad to say unless it was an unusually bad night the visit left much to be desired. Customer service: We arrived 20 minutes early and there were about 4 open tables but the hostess told us they were booked so we have to come back, ok I can respect that but when we came back the same 4 tables were still open. When we were finally seated we were given water in dirty cups, we requested new cups which we did not receive until after our last course. We were seated approximately 50 minutes before our hostess came to take our order and probably waited half an hour between courses. This was quite surprising to me given the limited menu comprised of only desserts, drinks, and appetizers coupled with the fact that there were 7 tables with mostly parties of 2 (yes I did the math because it was just that bad). The waiter was really attentive but not sure what is going on with management. Drinks: The presentation on all the drinks was GORGEOUS just as they are pictured in social media so if you are looking for beautiful cocktails or inspiration as a content creator then this is your place. Liajiao Mule: Mules are probably my go to drink when I'm not at a craft cocktail bar but this one sounded interesting with tobasco and mint chutney. I did not taste any of those flavors, it tasted almost like a regular mule unless that was the intent? If so they did a great job of hiding what sounded like a much more exciting cocktail. Thyme & Pellucid: Definitely forward on the Aloe but not in an overwhelming way more like a bit heavy handed on bitters. This drink came with a saline dropper to enhance the flavors. This was probably the best drink I had and the only one I finished. Light and refreshing. Primrose and Rye: The worst drink of the night. It just tasted watery and tart. I was expecting something more booze forward. Definitely did not finish this. Chatpata Fizz: Another BEAUTIFULLY presented drink but it ends there. This one comes with salmon skin to enhance the flavor. I am a vegetarian so I did not eat the salmon skin and cannot attest to whether it would have made things better but I can say that somehow the cocktail had a fishy essence and I did not finish this cocktail either. Food: If you are doing the ticketed experience go in knowing this will not fill you. I had the aranchini, which I tend to stay away from as they tend to be heavy, such is not the case here they were probably nickel-sized and you get about 5. These were not memorable and the quality subpar. Dessert: I didn't know you the dessert was pre-selected vanilla ice cream. Probably the highlight of the night outside of the presentation of the cocktails so I asked for the dessert menu so I could order something else given the rest of the experience was mostly inedible. What I received was more vanilla ice cream on the house for the long wait and pistachio eclair instead. read more

Came here after a work event because it was close. We were thinking of having one more and my friend found this "speakeasy." We had to wait about 20 minutes. After about 10-15 min I asked to see a menu and realized drinks were $25+. We decided to stay but the price would definitely keep it to one. I picked a drink with whiskey and peanut butter. All the drinks were IGable - unique glasses, foam, flowers, and mine came with a macaron and smoke underneath. Everyone enjoyed their drinks. Mine was delicious and even came with dessert. We also ordered truffle fries which were thin but still crunchy on the outside and fluffy on the inside. They were addicting especially with the aioli. We came here in a group since the drinks are beautiful. You have to buy tickets in advance on their website - they have two option tiers (emergence 2 drinks, euphoria 3 drinks) with some exclusive drinks in the more expensive ticket tier (euphoria). Our group purchased the 2x drink 'emergence' experience. I wouldn't say the drinks themselves taste spectacular, but everything is very beautifully presented. It's definitely very insta-worthy and a lot of the drinks come in custom containers (planetarium, flower vases, etc.). I ordered the truffle fries which I thought were great (shoestring / thin fries are my favorite). They ran out of macarons so they upgraded us to the soft serve ice cream for free. I thought the ice cream was good but didn't taste strongly of the flavors (black sesame?). The bar is located in Patisserie Chanson if you're having a hard time finding it. I would recommend you check this place out if you're looking for a very visual experience. Magical. Thyme Bar is magical. During our last visit to NYC, my husband suggested we swing by to grab drinks after dinner. I had not done any research on this place prior to our arrival, so I was blown away by the swanky, underground cocktail speakeasy. The space is beautiful, chic, and intimate. Perfect for dates and small group gatherings. I felt like I had been taken back in time to the 1920s in this softly lit, historic pre-war cellar. We got a coveted seat right at the bar - ideal for a bar like this where you can watch the bartenders in action. What Thyme Bar is known for is showing cocktails through art with botanical elements. Many of the cocktails are influenced by art and/or movement, and there's a unique emphasis on the visual component of cocktails. The menu is split into Le Jardin and Floriography. Drinks range from $16-22 for Le Jardin drinks and $25-30 for Floriography. While all the cocktails are crafted gorgeously, the ones under Floriography focus more intently on the presentation aspect. I chose the Hana Ni Arashi (Flower in a Storm) after a recommendation from our bartender. This is Iichiko Saiten sochu, ginseng infused Suntori Toki whisky, London Essence ginger beer, kummel, and lime. My husband selected the Chatpata Fizz, which is Ilegal Joven mezcal, chatpata soda (jasmine, wasabi, green tabasco, smoked salt), pandan, and lime. The Hana Ni Arashi - which comes in a teapot and teacup - is smoky, a bit spicy, and refreshing. It's Thyme Bar's take on a Moscow Mule, and my goodness is it invigorating and complex. The Chatpata Fizz is served in a terrarium, decorated with moss, and houses a glass contraption with three sections inside. You can drink from the bottom and middle sections. This drink is smoky, spicy, and sweet all at once. All around us, drinks were being carefully presented to customers. Two of the cocktails on the menu, Thé Noir and Coconino Rain, were hung in front of the guests from a decorative ring secured to the ceiling. The creativity of Thyme Bar is unparalleled to anything I've seen. Your senses will awaken here and be taken on this visually and gustatory stunning journey. Service was also superb. We got seated on the corner near the door which was good as we could get the feel of the entire bar. They have those fancy fusion cocktails, good menu and fancy! The cocktails arrive in some or the other kinda uniqueness. My husbands was in a hanging container; mine was in a mushroom garden..caveat I hardly any drink! It was around $27 and just 5-6 sips of cocktail distributed within 3 tiny mushrooms, our friend got one in a succulent jar with some salmon skin. That was kinda interesting. I got this one drink where they literally were in three ceramic mushrooms. I laughed so hard when I saw this and actually am still laughing now. When I was sharing my drink with my date, I asked "do you want to try some shrooms?" ....No? I thought it was witty... This place is so unique and everyone is so friendly. You really don't know what to expect out of your drinks. One minute you are drinking what I called a sushi restaurant in a drink without the fish, so vegan friendly? The next you are drinking out of something hanging from the ceiling. Then you are drinking out of a diamond moment which I called "shining bright like a diamond." Well... given how strong the drink is, maybe "get lit like a diamond?" I so plan on going back here and trying all the other drinks. If you are unsure of what to get. Talk about it with Cory. Visited Thyme Bar on a Saturday night at 7:30pm with 3 of my friends. We bought the emergence ticket for 75 dollars which includes 2 cocktails 1 food item and 2 macarons for dessert. The downstairs seating we were given was not really setup for 4 people. It felt a bit weird sitting with 2 round tables but the bar is quiet enough that you can have a nice conversation with people across 2 tables. It's a very cute date feeling. It would have been nicer to sit at the table. I believe this happens because they ran out of 4 people seating, Besides that the service was great! You can choose any cocktail given on the menu for the 2 cocktails. I ordered a Peach Silk Poppy Fizz and Gynoecium Old Fashion for cocktails. For food I was hungry so I it the Chicken Bowl. Friends got the Prime Rose Rye, Health Bloom, Queen of night, and a drink that came in a triangle glass planter and dried ice that I don't remember the name of. For food they got Soba Noodles with chicken and Grilled Cheese with Soup. Cocktails: We each got 1 from both categories, which I recommend because one will be really pretty, and really okay looking but tasty. We did have a few drinks that tasted just meh, but I believe its more of preference. I did not enjoy the Peach Silk Poppy Fizz, it was not as refreshing as it sounded, however the Health Bloom and Prime Rose was delicious. The food was also very hearty and delicious as well. I've heard raving reviews about this place, and while I'm usually generous about leaving 5 star reviews, Thyme bar was a little overhyped in my opinion. I think the presentation fell short of my expectations because I've had really cool cocktails around the world and it doesn't really measure up, especially for being in NYC. The Aviary (used to be located in the MO hotel at Columbus Circle, now closed and rebranded after Covid-19) had way cooler cocktails and concept. It's worth a visit but I wouldn't return, and ridiculously hard to get reservations for no reason. To give you a frame of reference, I compared the cocktails here to what I've seen at Coque in Madrid because it's in my most recent memory. HIGHLY RECOMMEND this place!! Although reservation recommended, we got seated very fast after arrival as a walk-in. The service was great, or server was very nice and knowledgeable. Their drinks are amazing in both taste and presentation!! The desserts were alright IMO. Highly recommend to try Queen of the Night!! This place feels like a little escape from NYCs reality. The mixologist and owner has created a full on immersive experience. From the taste, the look/presentation & the smell -- ALL your senses will be tingling and craving for more. 10000% recommend coming here. Jameson is theee man. I went here for a work celebration/ dinner and the drinks were phenomenal and his recommendations were perfect & spot on. We did the prefix menu which gives you a lot of bang for your buck. I LOVED the drinks & dessert and my favorite bite was the truffle fries. The team does an amazing job at dietary restrictions too. My only recommendation to the team is to serve enough chip/olive/bite with the drinks that come with them.
