The Hudson was absolutely wonderful from start to finish. The service was impeccable, from the hostess desk all the way through payment, and the ambiance made the whole evening feel special. The food was just as memorable. As someone who loves Yorkshire pudding, I was delighted to see popovers served as the bread course, especially with the delicious garlic butter. The scallops crudo had the most amazing sauce, and the English pea soup was one of the most beautifully presented dishes I've had. It was so good I honestly wanted to drink it straight from the bowl. My A5 wagyu was cooked to perfection, and every detail of the meal felt thoughtful and elevated. I dined with a friend, and we both loved the experience. We were so excited to try this place coming off a Vegas foodie trip last weekend. I was hoping to keep the good food trip rolling but was quite disappointed. The place is really nice, decorated great. I can't rate the cocktails because we skipped them tonight. But the food was such a bummer. Here is what we had... - crab claws. Super watery as if they've been bathing in ice water (not sitting on ice). - Cabbage Savoy. I love cabbage and this read so well on the menu but had some very strange flavor to it. We barely touched it beyond a couple bites to make sure we didn't like it. - asparagus. Would've been perfect if simplified with some salt and pepper and citrus. It was lathered with some creamy green sauce we didn't care for so yet another dish with just a couple bites out of it. - wagyu hanger steak. Not much flavor. Had to send back to get the cook the right temp. Very unevenly cooked upon return. We ate most of it. We ordered the chimi- verde sauce but it was basically olive oil. Black cod. It was ok, nothing special, no good sear or grill on the fish. No punch of flavor like you'd expect from a good cod. Unagi fried rice. This was the only dish we agreed we liked enough and it still had an interesting flavor, like mint. Kung Pao Brassicas. This was OK but again had interesting flavors (not kung poa) that were turning us away. Our server was super sweet but not very attentive, I think she perhaps was new to the industry. For example she didn't think to ask about two uneaten side dishes and if there was an issue. I think overall our tastes differ from the chef so this could've been amazing to them and others but unfortunately not for us. As a seasonal resident to Bend, we enjoy the opportunity for experiencing the old favorites as well as new establishments in our community. Last week we choose to dine at the Hudson with friends that had come for their annual visit. Our evening started off with a prompt and friendly hostess taking us to our parties comfortable table. We were greeted by our waiter Reed and he kicked the night off as we imagined with a quick introduction to The Hudson and started our drink order as we reviewed the menu along with a survey of the wine list. Much to our surprise, we were informed that most of their wine list is 50% on Wednesday evenings. This allowed us to take some additional liberties in choosing our wine selections for the evening. Though we saw may favorites on the list, we utilized the expertise of Zach, the Hudson's Sommelier. We enjoyed all of the selections that Zach suggested as they were well matched to our described tastes and meal preferences. One of our guests can be a bit out spoken about his wine preferences and the back and forth between the two of them was interesting to be apart. We were highly satisfied and were surprised that we were able to purchase additional bottles to take home for the same cost! We enjoyed several of the appetizers including the Wagyu Beef Tartare and the Wood Grilled Caesar! Both were excellent with their own unique tastes that I have not previously experienced with similar items. Our entrees were impressively delivered with precision by multiple team members. The table was for once quiet and the fun of experiencing masterfully prepared food began! I enjoyed the Pork Porter House and fried rice while my wife her Black Cod and Pommes. The portions were great and I was able to do it all over again the following night with my leftover. Came here with my sisters for a special night out away from the kids, and it was absolutely wonderful! We sat upstairs in the beautiful bar and had fantastic service. Tae was our server, and she was amazing--she gave us a great pasta recommendation and suggested several share plates that were perfect for our table. We ordered oysters, two different salads, the crab toast, a few martinis, and some excellent desserts. Everything was delicious, but the tiramisu is an absolute must! We celebrated my mom's retirement here and the staff took such good care of us, I mistakenly set the reservations for only 2 and they accommodated all 5 of us plus a baby, they got a vase for our flowers and even found us an extra chair when we needed it. We got free Champaign toasts and a special opener for the occasion. The food was incredibleeee too, like seriously good, comparable too Ariana's and Bosa's quality or better. Extremely pleased with the service AND the food at the Hudson! Our server Reed, and our somm Zach went over the top for our meal! Who serves popovers as a warmup? The Hudson does and they were delicious! Six of us ordered from all over the menu and everything was flavorful including black cod, hanger steak, and pork tenderloin. The wines that Zach recommended were equally as great and Wednesday was 1/2 off wines. We had comfortable seating and the ambient noise level was minimal even though the restaurant was almost full. Fun date night but wouldn't go again. I liked the low lighting, but the tables were close together and it ended up being loud. Waitress was in training but did a good job. Started with drinks, my whiskey sour was good. We had steak tartare for an ap. I was upset that the focus of the dish seemed to be the toppings and seasonings rather than the steak itself. I also felt that it was a bit heavy handed on the olive oil. We were served a lovely flavorful sourdough with the tartare, which I felt was just another thing to take away from the flavor of the steak. We had French onion soup for a second Ap. The broth was rich and lovely. We also loved the sourdough in the soup for texture. Once again I thought chef made the seasonings the star of the show rather than letting the amazing ingredients speak for themselves. No notes whatsoever on the mashed potatoes. So cheesy and lovely. Steaks were cooked well and had a nice crust. However I only ate a little crust at a time because I wanted to taste my steak and not all the spices. Chimichurri is my fav sauce, and the Hudson's was entirely olive oil and didn't have the fresh bright flavor I love. The carrot cake really did not hit how I was hoping it would and, once again, not a balanced combo of sweet and spiced, it was just spiced cake. The lady fingers in the tiramisu were over soaked with coffee so it was a soggy mess, and the dark chocolate powder on top was bitter and overwhelming. I came alone on first Friday without a reservation, I'd say that was a fail on my part. Ordered the Kramer (a pretty refreshing take on vodka:/cran) and beef tartare. As strange as it sounds, the entire experience probably would have been better if I sat inside. I think the most impressive thing about this place is the vibe and you don't get that sitting outside . Really good experience here as a party of 4. Drinks were very balanced and vibrant. One in our party tried a recommended wine pairing that was great. no complaints. The appetizers were great the wagyu beef tartare was delicious and the shrimp toast was very unique. MAINS: The river filet steaks were cooked perfectly the open fire adds a layer of flavor on the outside, but since it is precut. I would like to see it served with a touch of flaky sea salt inside the cut of the steak. The scallops were cooked perfectly. The scallops themselves were fresh and cooked simply not as much depth of flavor as steak. the sauces on the side really helped bring the scallops together. SIDES: Their creamy mash was fantastic and the highlight of the sides. their whole potato side was fine but the sauce was the impressive take away. Some of the whole potatoes were crispy others weren't. Some didn't taste entirely cleaned. DESSERT the tiramisu was very good and light, the carrot cake isn't anything spectacular could skip next time. The banana pudding was very good. I would've loved to see the open fire flavor continue through this dessert and caramelize the bananas, sticking with the spanish flare they have here. it could've used another darker note and mimicking more of a traditional spanish plantain flavor. We came to the Hudson for drinks and an appetizer. We had a nice time at the bar; however, as we chatted with the bartender we were informed the restaurant has the rule where you have to place your order for appetizers, salad, and dinner at the same time and they will "pace" it for you. We've been to restaurants like that before and we do not enjoy that experience, therefore, we will not return to the Hudson for dinner. The atmosphere is really nice and what we had that night was good, too bad they have to implement that frustrating rule for ordering dinner, but I'm glad we found out prior to coming. The service was inexperienced and failed on multiple occasions to care for the table when drinks were empty. Cocktails are mediocre at best. There were no signature cocktails on the drink menu that even piqued our curiosity. ...and our group was comprised of cocktail people. The cocktails served were lackluster at best. The food over lacked creativity. That's okay if you nail the basics. They did not. The plate the albacore appetizer was served on was dirty. Gross. The scallops were average. Modestly sized and the flavors were meh. When you consider there were three on the plate, at over $15 each... without any side... I'm sorry. Best meal in a long time! We were fortunate enough to secure a table on the opening week. Everything about the Hudson is intentional and on point. Overall Feel: The restaurant has a great buzzy feel but maintains an elevated private and intimate dining experience. The bar is a great option for walk-in dining or a quick drink and appetizer. The spirit list and cocktail options are worth the trip alone. Meal Review: - Cocktails: excellent execution and elegant presentation. Options ranging from classics to more creative offerings including Mocktails. - Starters: Pork Belly was a highlight and a great start to the meal and definitely set-up the flame fired theme that weaves it way through the menu. French Onion Soup with Oxtail was something special as well! - Sampled the A5 Wagyu Picanha which did not disappoint and was a great share for the table. The charred purple onion is a nice touch. - Mains: Hangar Steak and Scallops. I make a lot of steak myself and find myself difficult to impress when is comes to restaurant steaks but this hangar steak was memorable it had a great flavor lots of smokiness on the "crust" with tons of juicy flavor, served medium rare. Service: Excellent service by a very attentive staff. Madison was a great server for our table but it is clear that they use a team concept to ensure excellent customer experience. There were a few things that showed this was still a new restaurant and staff, like; needing spoons after soup was served, getting dishes to the right patron, etc. All things I expect to be corrected quickly and are expected in a new restaurant. We decided to try the Hudson since we really liked its predecessor, 900 Wall. We're not the type to complain (and we didn't) but the food was remarkably awful. We couldn't even eat it. All 3 of our dishes tasted terrible. We've dined in many countries and enjoyed all kinds of cuisine, but we've never experienced anything like the Hudson. Our server was very kind and professional, but we will never return. There are much better options in downtown Bend. read more

Unfortunately, almost every globe light in the place is a bright, exposed "glare bomb." The only decent lighting is in the kitchen service area because there it is down-lit & shrouded. Everywhere else you might as well be wearing your sunglasses. ...Suggest Zafferano PolDina low voltage 2200k Micro lights at each table.
