This restaurant is worth of it's 4.6 stars. The food is excellent. I had the special which was a braised lamb shank with mashed potatoes. The meat fell of the bone in a delicious sauce. My wife had the shrimp scampi which also had a delicious sauce and was full of shrimp. My son had the homemade raviolis which he finished in 2 minutes. It was served in a bolognese sauce, which was also scrumptious. Our server Alise was very nice and came multiple times to see how we were doing. She was very helpful. This place is amazing! The food is off the charts fabulous! I had the homemade ravioli and my husband had seafood pesto- both were so good you wanted to lick your plate. But also their pomegranate martini was the best- very yummy! so much so, we had to stop by the next evening just to get one-before caught our flight home that evening. We arrived but didn't have a reservation. They were able to seat us at the bar immediately. The bartender was attentive and friendly, always had a smile on. Our food arrived promptly and were perfect portions. Scallops appetizer was delicious--tender w w wonderful smooth sauce. Our baby kale salad was delicious. We were excited based on the reviews but unfortunately were disappointed. The salad, bread, and drinks were all good. Pasta was good but smaller portions than expected. The steak and langostino was very disappointing--the butter sauce was very herby and completely overwhelmed the rest of the food, the steak was rare (ordered med rare), and the langostino was mushy. Desserts were good, though the tiramisu was a bit heavy. Also, while they were very busy, it took over an hour to get our food. My only issue is every single time I've gone here (3 times) they've brought me the wrong food and then I wait for the right food and my compensation is usually a small piece of bread with honey butter. Love me some Italian food and I haven't yet found a good place in Bend until NOW!! We went in pretty early around 5pm and the place was about half full. We were greeted with friendly people and given an amazing booth by the window. I have to say the service here was top notch. Claudia was kind attentive, helpful and just the right amount of great conversation and recommendations. My wife ordered the Sea Scallops, and I ordered the Beef Carpaccio Appetizers. Now I've had some scallops in my life but let me tell you this Chef knows what he's doing. Not only were they picture perfect they were cooked to perfection. Best Scallops I have ever eaten, hands down. I'm so happy my wife was willing to give me a couple bites. Not to be missed. My beef Carpaccio was delicious with the fresh toasted bread. YUMMY! I ordered the Hand Made Ravioli with Meat sauce and she the Duck Ragu. Pasta was cooked perfectly and the portion sizes were just right. The amazing flavors were diverse and I don't know how they could have been better. Desert was Chocolate Torte, Tiramisu and they had Basil Gelato. I think that's what it was. Excellent dining here at Salute with even better service from Lianne! Three of us celebrated my husband's birthday about 2 weeks ago on a Tuesday evening. The ambiance is classy without being stuffy. Food was very good with very minor changes I would have made. However, I am the first to say I am very particular. This is probably more a reflection of my pickiness vs. their chefs' talents. My scallops were a tad undercooked for my taste but that's the key, for MY taste. For others, I'm sure it would have been perfect. I like mine solid and still tender. These were a tiny bit soft. Flavors were excellent! The butternut squash risotto didn't taste at all like it had butternut squash in it but it was yummy! I would definitely order that dish again. I ordered the last tiramisu, served in a very cute jar. I like my tiramisu to be very creamy and light. This was a bit heavy. I think I might prefer the square cake-like form factor. My husband and our friend loved the osso bucco, zero complaints from them. I sampled a bite and yes sirree, it was tender and flavorable. Highly recommended. Lianne's service is what put my rating over the top from 4 to 5. Lianne knows the fine art of being attentive and friendly without being intrusive. We were one of the last parties finishing up, and not only were not given the bum's rush, Lianne even chatted with us as she was working. Last night (12/22/25) was my first trip to Salute Restaurant and Bar. Honestly, I rarely write reviews, but our experience from start to finish was exceptional: the service, the atmosphere, the quality of food and attention to detail. This may be the best restaurant in central Oregon. It is primarily an Italian restaurant with a few modern twists on the entrees. For example, they have Beef Carpacio, Spaghetti Carbonara, Handmade Ravioli, Tagliatelle. My dish was the Black Truffle Risotto -- best I have ever eaten: the temperature, consistency, balance -- simply wonderful! My extremely picky wife ordered the Scampi al Limone and as a native Argentine with long experience eating fresh pasta, she was impressed. Others in my party said the shrimp was a extremely fresh and flavorful. I sampled the chicken marsala, the special of lamb shank, and pasta -- all wonderful. The dessert menu is well structured and we enjoyed the Chocolate Crèmeux Cake -- a flourless chocolate cake with chocolate-hazelnut crèmeux: divine. My sister, who lives in Bend, tells me that the restaurant has been under new ownership the last two and half years. Chef and owner Jeremy Buck is running a gem. My wife and I hit this joint last night. holy cow! the food is stunning,. We are both foodies, and I'm a chef. Clams with Chorizo in a wine reduction is impossible for me to pass up. Chef's version didn't disappoint. Two different clam types was a perfect way to get ready for what's about to come next. She had the Carbonara and I had the braised lamb. To say I get access to the best lamb for cooking is a total understatement. I have 60 head of hair sheep (not wool sheep) on my farm in Idaho. They are the best breed for eating lamb, and we eat a lot of lamb. Chefs dish is a stunner. Very slow, braised shanks drenched in a wine mirepoix doesn't suck. It was literally perfect. If you like a mild, savory lamb dish, this is it!! My wife's carbonara was very authentic. I've made it many times and chefs dish doesn't disappoint. I'm also a winemaker and they have a really great wine list. We had the Super Tuscan and Montepulciano, both showed silky, inky black fruit and made the perfect pairing. The the bar tender is a rock star. Efficient, friendly, and fun. I'm glad we sat at the Bar. Dessert for me was the Cannoli. Also authentic,and done to crispy perfection. She had the eggnog gellato and added a splash of Angels Envy Bourbon. What a combo! 6 generous pours of wine, appetize, 2 entrees and 2 desserts was $190 Before tip. I've lived in Bend for 3.5 years. I don't often treat myself to nice meals, but recently I treated myself to Salute and it's the best meal I've had since moving to Bend, so much so that I returned three days later to eat again. The meat on the antipasto is some of the best I've ever had. While the Chicken Marsala wasn't the largest portion, it was delicious, and I did have a small amount of pasta left over to take home. The beef tagliata was also delicious and cooked just right. The prices are higher than what I normally spend going out to eat, but it was worth it. This may sound extreme and will perhaps highlight how often I don't treat myself, but after I ate there the first night, I called a friend to tell her I had finally found a restaurant in Bend with food that made me feel human again. We love Italian food and Salute hit the 3 star mark. We had made made reservations but still had to wait a little. Not a big deal but something to note. Food was hot and the portions were good. Seems like these days portions have shrunk while the cost has grown. Restaurant is very loud due to the small space so conversation can be difficult if the restaurant is full. Went to Salute on Friday for the first time. I was very impressed. It's a small restaurant, so reservations are important. Although it's a lot easier to get one than at Ariana's. Okay, this by all accounts is not Ariana's,but I didn't expect that. The food and beverage menus are small, but sufficiently varied. I had a nice arnies first and an excellent Nebbiolo with my main. My wife wanted to share the baked Brie, but I convinced her to go with the scallops as they would be less filling. The sauce under the scallops was a bit sweet for my taste, but the scallops themselves were expertly cooked. Absolutely deliciously fresh and delicately cooked , and there were plenty of them to share. I had the lamb Osso Bucho and my wife ordered the short ribs. I preferred my osso bucho and she preferred her short ribs. Although she did leave me some for breakfast. The Osso Bucho was superb. I don't know how they made that rich smooth umami infused dark brown sauce, but it was fabulous. The short ribs were in a more traditional , but still delicious tomato based sauce. The one I make at home has more red wine in it, but this one is so much easier to acquire and still delicious. We decided against ordering dessert. I was tempted by the tiramisu, but I had eaten all of my osso bucho, and American restaurants tend to put too much sugar in their versions of European desserts. Can't say about their version, but the description sounded authentic. The service was impeccable. read more

Superb! Negroni was perfect with the yummy gorgonzola stuffed figs wrapped in prosciutto. Delightful flavors. The pistachio crusted halibut was moist and ample. The black truffle gnocchi were delicious but a little dense. The unique corn sauce over the gnocchi and thin sliced zucchini was an unexpected creamy mouth feel and tied the dish together in a tasty savory way. Then dessert.... the Charlotte! Pure heaven with the hazelnut meringue and the persimmon sauce made it truly memorable. This is a very special place. Went here for the first time tonight. Can't say enough good about our server, Tim. He was funny, professional, attentive without "hovering" if you know what I mean. The food was excellent. We went for Happy Hour but will be back for their regular menu. We started out with the bread and the olive and almond appetizers, all 4 of us had the cesar salad, it was wonderful, two of us had the amaretto shrimp with polenta, it was excellent and the others had the spaghettin carbonara and the alfredo pasta both of which was excellent.
