The guanciale was well cut, not overly fatty, and not burnt or crispy, so it added full flavor and wonderful texture to the dish. The green onion also added a lovely dimension to the dish. We will get this glass again. Next, clams. This is a MUST GET! The broth was outstanding and a different vibe from your typical "clams in white wine broth". Next, Pork Belly. I usually love Pork Belly, and this was mentioned as a must try a lot in the reviews, so that's why we got it. But the Pork Belly is definitely Pork Belly-ing here. Great option if you don't like seafood, but if you do, go for the Halibut instead. We had a couple next to us who got the Halibut and I could smell that we missed out on that dish. So I would highly recommend you get the Halibut (even though we never tried it. I can just tell it's amazing). Dessert was Spiced Chocolate Pot De Creme. Again, fantastic! The medium steak was perfectly cooked, fries were crispy and tasty (even more so when dipped into the emulation), and the beef cheeks needed nothing more than a fork to split into the right size mouthful. When we sat down, we shared that my wife has a dairy sensitivity and the server paused for a moment because most of the dishes are typically cooked in butter. After checking with the chef, we learned that the chef said it was no problem to replace the butter with oil.
