My wife, Cheryl, and I are weekly diners on Mondays at The Bistro Restaurant @ Fantasy Springs. The Monday crew of chefs (and their assistants and trainees) are top-notch. They provide delicious specials and a variety of savory menu items--all of which are better than any restaurants of this type in the Coachella Valley. Special mentions for Santiago and Claudia, along with other chefs who do an extraordinary job in the kitchen! Their 'specials' are always outstanding, and creatively presented in a truly elegant fashion. Among the servers, Maria, Justin, Hanna and Javier always pay attention to each customer, providing excellent suggestions, along with their perfect and tremendous service! The bussers, Matthew, and David, are also excellent at doing their job of keeping everyone happy as they pay attention to every need of the diners. They never miss a thing! Rosie at the front/reception is friendly, always mindful of all customers... and she definitely has our backs when it comes to the weekly reservations we never fail to make before leaving the restaurant. When asked, we recommend The Bistro to everyone we know. Usually, we do not make recommendations--but for THE BISTRO, it's no problem at all. Our group of 9 ended up at The Bistro based on reviews for a birthday dinner in a private room, unaware that it was in a casino resort. We enjoyed ourselves despite not being a group of casino goers. The private food allowed us to be noisy without guilt, the service was great with constant attention to our needs, and there were food options for everyone. Many restaurants bring out the food lukewarm, but the presentation was classy & the food hot. Small hidden fine dining restaurant in Fantasy Springs Casino. Had the Kobe Beef Meatloaf which was simply amazing! Such an off choice for me but my husband had mentioned one of our friends had had it before and it was surprisingly tasty. This dish did not disappoint and the mashed potatoes were creamy and tasty also. Don't let the photo fool you, it was a large portion. The Strawberry Blonde cocktail is not to be missed! This drink was sweet and delicious, it will sneak up on you as it is a bit strong to have on an empty stomach. Prices are really good compared to some of the other steakhouses around town. Service was a little slow in the beginning but the drink server took our food order. After ordering it did not take too long before our meal was served. read more

I will unfortunately never return to this establishment and based upon my experience I would suggest it gets boycotted. The food was slightly above average for taste/presentation, etc. It was a little on the pricier side when compared with value. That is OK, my wife and I enjoy going out on the town and eating at new places and this is often the case. My issue with this restaurant most likely stems from management driven policies in regard to the dress code. The dress code, as posted on their website states no hats and no tank tops. I usually wear a mix of business casual to formal wear, and I almost always wear a tweed or flat cap. I find it kind of difficult to see distaste in this type of cap, but hey, I can see some value in a dress code. To preface, I am a disabled combat veteran with facial and head scarring, so I wear a hat because I am sometimes insecure about it. As we walked into the restaurant, I observed two females wearing hats. I observed other females wearing daisy dukes so tight there was camel toe while also wearing tank tops. As I observed this, I thought to myself, great...I can wear my hat. Immediately the hostess told me I must remove my hat. I explained the situation with my scarring, and she said it didn't matter. I then pointed out the women wearing hats and half nakedly eating steak, to which she shrugged her shoulders at. After being seated, and quite honestly getting frustrated, I put my hat back on. I was then notified by the waiter that I needed to remove my hat. I again explained my position on the matter (scarring, the women wearing hats, etc.) to which he stated, "it doesn't apply to women". Regardless, it was my anniversary, and I did not want to cause a scene disturbing the time I had with my wife. But you should know, this policy is being enforced in a sexist manner and after I explained my disability you basically told me "Too bad". If I could swear here, I would. We've been going to The Bistro for the past 8 years and it is our favorite restaurant in the CV! We are locals (year-rounders) and do not gamble, but we are always happy to drive to the casino for dinner here. The menu has a lovely variety, so I can have sushi, seabass or pasta with seafood and my husband is in heaven with all their meat dishes! Food is delicious and portions very generous! Bread is amazing! We were trying to think if we've every had an even "so-so" dinner there and we have not!! Service is always wonderful and the BEST (huge) martini's EVER! read more

I liked this place immensely. The decor is dated and could use a major fix BUT their fish entrees are great. I loved my fish so much I wanted to come back the next day. The sushi that I tried was just okay so I would pass on that and try some other appetizers instead. The wine list here is also a keeper. You can go high end for decent fair prices which I always like. I'm never cheap but getting a New Zealand Chardonnay at $30 that was better than a $100 California one was a super find. They also have a selection of great wines for $25 which I appreciate after the $30 bottle selling at $90 junk at another casino down in Palm Springs. The waiters are also very attentive and there is no snob attitude which is silly at casinos. All in all we were greatly impressed. The room does need a major revamp but if I have great fish and wine and people are nice to me that's all I need. read more

Went out for dinner with my mom last night and was wearing a hat. The hostess say's " sir, I'm sorry but you're going to have to take your hat off if you want to eat in here". "I said oh ok, no problem" Meanwhile the couple behind us the woman is wearing her hat and being seated and they never told her to take her hat off. Bus boy comes to the table and I said "hi, I was told to take my hat off but the woman over there is allowed to wear hers?" He says "women are allowed to wear hats, men are not" I said "well that's a little sexist, no?" He goes " well let me ask the manager". Meanwhile i notice another male wearing a hat inside. Female manager comes over moments later and says sir, the gentleman has a condition and that's why he's allowed to wear it, you may wear yours now if you'd like. I got the well done New York steak, and holy crap it was good. It was worth all the wait, you're able to get it with baked or mashes potatoes. They give you freshly baked bread and wow. It's hot and ready for you to eat and with the olive oil they give you together, is the best. The place is beautiful and the workers are so kind and friendly. Had superb dinner last night January 1st, staff are attentive my water glass is always filled:) ate here with my hubby and we enjoyed the food and ambience. It's quiet so we had a relaxing dinner. Food is ok, had the sea bass which was good but the based rice is uncooked, I'm not sure if that's supposed to be cooked like that but I eat rice everyday bring Asian and I can't just eat that rice they've used. An unexpected surprise! In our ongoing travels to find great restaurants we were attracted to the menu at The Bistro, located within Fantasy Springs Hotel and Casino in Indio. Boy were we glad to find this outstanding restaurant. The opening dish was one of the best french onion soups ever: with sweet, carmelized Vidalia onions and lots of Gruyere cheese....we ate every drop. Our appetizer was a delicious, well-crafted shrimp tempura & salmon sushi roll. Excellent recipe and very fresh. And our entre' was one of the very best productions of a Miso-Sake Glazed Chilean Sea Bass, served over sesame ginger steamed rice with ponzu butter sauce with cherry tomatoes. It was a large generous portion of fresh sea bass with just the right amount of Miso sear and perfectly cooked: absolutely delicious, and a real standout (we order sea bass often so we know this is among the very best anywhere). We also discovered a very tasty Cabernet from Cooper and Thief. Thank you Justin for outstanding service and a warm friendly attitude. We'll be back! read more

Came last night with my husband and two youngest kids (1 and 2)... great experience. We sat on the patio and yes there were a million flies lol but that's to be expected. The live music is really loud but if you have kids it keeps them quiet (pro tip!!). The service was great- very friendly server we had. Everything we ate was delicious and tasted fresh made to order! Great flavors textures and balance. The portions are generous. Oh the lemonade is super refreshing not sure if they make it fresh too tbh. Meals and experience are worth every penny!
