They give you the entier collar! I also liked the yaki ika which was very tasty, not rubbery at all. They have a lot of ramen on the menu which was a crowd pleaser for our group. We started with the wontons in chili oil. They were ok, decent sized and had a nice bite to them. They chili oil was flavorful without being too spicy. Need to make reservation for this place on a weekend night. We did and were seated not long after arrival. Staff was courteous. Our waitress politely took our orders and another waiter helped her bring out the food. I ordered the chirashi for myself and ika for the whole table to share. The other members in my party ordered other items on the menu. Our waitress cleaned up the finished plates while we were eating so that the table wasn't too crowded. The chicken was perfect. I was craving ramen and went with Tan Tan and it hit the spot and then some. The decor was unique and interesting and service was friendly and efficient. Prices were fair and they had a decent selection of differing dishes. My only complaint was that I was unable to get my egg completely hardboiled instead of softboiled. I tried the veggie ramen, and it was SO good. Savory broth that had enough flavor, but wasn't too salty, had a good amount of well-cooked noodles, and lots of yummy toppings. Overall, good experience for my first time at Tatsu. There is another sushi restaurant down the street that still has my heart, but Tatsu is a close second. The service was great. The place overlooks a parking lot in a strip mall, so it might not be the most appealing ambiance, but the food makes up for it. A little pricey, but definitely good. The Tatsu roll was delicious, and I highly recommend the spicy chili wontons (they aren't too spicy, despite our server warning us.) Overall, 8/10 experience. Ramen broth was rich and creamy, lots of toppings, generous pork portions. The rolls were crafted, ingredients fresh. The one downside for me was the abundance of large flat screen TVs playing sports. If that's your thing, sure, but just take the food home and watch it there?
