We ordered the 3 meat special for $14, the sides (Big beans and coleslaw) were extra; making the grand total $19. RIBS (5/5): The ribs were so tender and seasoned to perfection. I've ordered ribs from several local barbecue joints and some were either dry or was too much smoky flavor for me. I'm kicking myself in the rear end for not ordering more. Daddy J's ribs were juicy with just enough of season and smoky flavor. BAKED BEANS (5/5): Beans were tangy and sweet; very flavorful SAUSAGE (5/5): Sausage was hot and fresh but flavor was nothing really to rave about. It tasted like normal kielbasa sausage. BRISKET (4/5): While I'm not a huge brisket fan, I have to admit, it tasted pretty good. I personally feel like brisket should be injected with the same seasoning that's used on the outside. But, I understand most BBQ joints use the traditional way and I'm sure many may enjoy it just as it is. My husband ate more of it than I did and enjoyed it just as much as he did the ribs. COLESLAW (4/5): Coleslaw was cold and fresh. Although, I would have added a little more creamy slaw dressing. Rolls tasted as if they were Hawaiian rolls but that works too To me, it seems as if the ribs are the heavy hitting here! I would definitely visit again, order just ribs and sides.

I had the Casanova, a monster breakfast on a crisp tortilla base with a slice of brisket, barbacoa, two eggs, and a green sauce that rocked. We shared a plate of the beef cheek pastrami, which is reason enough to visit all by itself, and breakfast tacos rounded out the orders. Portions were large, the cooking was superb, and I will definitely be back. Next time I'll bring a chair for the line.

Don't get me started on the street corn pudding. My boyfriend loses his mind for the King Ranch macaroni and cheese. I'm a nutter for the chopped brisket sandwich. Slow-roasted brisket that melts in your mouth from the initial hit to your tongue until the last bite swallowed. Boyfriend likes the prime brisket entree-1/2pound with sides. All the spots in houston and Schulze's bbq is up there with any of them if not the best! I'm starting to wonder if Texas monthly is even a legit thing. Because this place could easily be number one. I'm surprised I've never heard of them because this is some of the best barbecue I've ever had. Some of the best customer service too! I'm so glad I stopped in. This will be my go to every single time when I'm in Seguin, Texas. Food: everything was phenomenal! The brisket was made to perfection absolutely some of the best brisket I've ever had. The jalapeño sausage, I've never had a jalapeño sausage that good! The cheese was bursting out of the seam! The tater salad oh my God! Talk about a blast from the past if you're from Houston Texas, and remember the old Heights camp house BBQ, you will remember they had Camp house potatoes. They tasted exactly the same wow I was so happy to try that because I never thought I'd have a dish like that again in my life. The brisket rice was OK. I probably would get something else. (IYKYK) Best BBQ in Texas is what I've heard and that's precisely what I experienced. Parking lots are nearby at a price ($28 for 2.5 hrs), unless you get lucky with street parking. Took us 30 min in the line, 10 min to order, and 1 hr to eat - plenty of time left on the parking meter which we prefer rather than cutting it close and getting a ticket. 2.5 hrs for parking felt rather safe for us, if you're wondering. Indoor and outdoor seating is available with plenty of tables. TVs inside for game days to indulge in 2 loves at the same time - food and sports. Ambience is warm, welcoming, and simply chill. Line up, be patient, and order to your liking. Ordering process - request for bread, ordered cold items first (potato salad), moved forward to order hot items (beans, Mac and cheese), grabbed a blueberry cobbler on the counter, and moved forward again to order precisely what we came for... the MEATS! Paid our dues, got fountain drinks, and found an open table to accommodate our party of 4. Open seating! TIP 1: They open at 11 AM, we got there at 3 PM, and they were out of beef ribs already. So keep that in mind if you're there specifically for that. TIP 2: They have 2 sauces from what I could tell - Original and Sweet Sauce. Sweet Sauce was my favorite, but just make sure both are on your table to try out. Live dangerously and mix them! Sooo good... THE TRINITY is what we ordered - or at least, that's what the server told us. The Trinity = Pork ribs, Brisket, and jalapeno cheese link. Omg... every single bite sent us to Heaven and back. Jalapeno cheese link was packed with jalapeno flavor and as if it was soaked in cheese yet didn't look like it. The brisket was the best I've EVER had - thick, juicy, savory, and now set the bar high for all future briskets. Pork ribs - 2 lbs and glazed. Oh man.. just thinking about it makes me depressed like a long lost distant relationship I know won't work out (we live in Nor Cal). Melted off the bone, juicy, smoked and cooked perfectly to... perfection. Slather your favorite BBQ sauces however you'd like and enjoy Nirvana throughout your time at Pinkerton's!

Seems like they don't really care to provide quality food. It's always cold like it was heated up from the day before, they're skimpy with the meat & it just doesn't hit the same. Even the portions have gotten WAAAY smaller. Service is still great but definitely won't be spending money on their bbq anymore. Every time we go get food for probably the last 7-10 trips, it gets worse & worse. Really disappointing because this place used to be TOP NOTCH.

My son had the same Classic Plate. We got the beans and fries as our sides. When our food was brought to us, the server didn't give us utensils. We had to ask her for them. The portions seemed small. The brisket was not hot. It was room temperature. The fries and beans were just okay. We were underwhelmed. This is Texas. Our expectations were high but we were disappointed. It could be that the order from the air show overwhelmed them and left them little strength to give attention to our order so I'll give them a little grace and give them two stars instead of one. We won't be back.
