Decided to give Big Fred's BBQ a try since I was in Selma to get gas at the Costco. They are located on the I-35 frontage road right past Evans Road and before Retama. They are open Wednesday through Saturday. A nice couple in the food truck helped me out. They have a large menu of meats and said they had all the meats on the menu today. I opted for the two meat combo with brisket and turkey. Had green beans and mac & cheese as my sides. Some of the best sauce in the area. I could have used another serving. Not overly sweet and may have included mustard. Brisket was good, but not great. It really needed more smoking time to get a thicker smoke ring and cold have benefitted by more bark. The turkey was tasty and had a good smoke flavor. The green beans were cooked with bacon and seasoned with pepper. I liked the flavor, but the beans were too mushy for me. I had the Big Daddy sandwich which was quite large and loaded with brisket, pulled pork, and smoked sausage along with mac and cheese. All the meats were outstanding. First time here and everything was delicious! We ordered two 2 meat plates that came with 2 sides. The pulled pork was delicious and was rich in flavor, the brisket was so tender that I could cut it with my fork, the green beans were truly southern and rich in flavor, and the potato salad was amazing! They have a lot of parking available and the staff is very welcoming and friendly. As always, when I'm on the road, I turned to Yelp to find me something good. Well, I failed...because this wasn't good it was fantastic. I had the brisket platter with macaroni cheese and potato salad sides, and a can of Diet Coke The brisket was awesome. Cooked to tender but not over cooked and dried out. Competition level brisket, The macaroni and cheese was outstanding and the potato salad was good. Don't miss the macaroni and cheese... My only regret is not buying a beef rib and smoked sausage link to have for breakfast tomorrow. ABSOLUTELY DELICIOUS!!! We had the 2 meat plate with brisket, pork ribs, mac n cheese, and potato salad. We also had the smoked wings and those were so good, way better than the fried wings you get at other places. The owners are very friendly and provide a lot of entertainment for their customers. There are yard games, fire pits and even live music sometimes. I love that they also have restrooms, hand washing sink and a water fountain for drinking. Service was good. However, whether it was because we went so late (near closing) or something else, the brisket, ribs, and pulled pork were dry. Tastes like liquid smoke for the smoke taste. They give you one tiny serving of bbq sauce to go on all of it (about 2 tablespoons) (total of 2 servings for 2 plates). Chicken leg quarters were juicy but the skin was like shoe leather. Potato salad tastes store bought with sweet pickle relish (not a fan and didn't finish it). The beans were almost non-existent. If they were low on them, they should have told us so we could have ordered something else. It was almost all bean juice with a smattering of beans. Green beans and macaroni and cheese were tasty. BBQ sauce was tasty but they should give you one portion per meat. Won't be returning. read more
