I have been dying to try this place and FINALLY made it!! Let me say I got here before opening time around 10:30 a.m. and was able to catch all meats and sides! The variety of options they have made my heart happy as I am a person to want a little of everything! WAIT TIME & ORDERING: You have to form in a line till opening time and well worth it! Ordering is at counter, then condiments, drinks and then dessert. NOW FOOD: The Brisket was delicious and savory. I added the pickled carrots and pickles with onion on top of the barbecue sauce and was the cherry on top! I also had the brisket taco with the fixins it comes with and it was so fulfilling I didn't even need any barbecue sauce. Let me tell the pork ribs chef kiss and the meat fell right off the BONE and even the bone was tasty. I had the El Cinco sausage went perfect with the meal without out being too overpowering or spicy. You can use barbecue sauce but definitely not needed. SIDES: Cowboy beans and Mac and cheese are a must try! They are like no other place I been to and taste soooo good! In addition, to the street corn pudding. I wanted to try the others but thought I would leave for my second trip back. I will say these side complimented the brisket and so flavorful! SERVICE: The staff was very kind and helpful! Shoutout to the staff member assisting with the fixins/desserts she is the bomb.com and made going through the line easy. You could tell everyone of the staff members care and work hard to make sure the customers are taken care of! OVERALL: The food was SUPER DELICIOUS and I definitely stuffed my face. I regret I did not have room for dessert but will be back to try! Also, be on the lookout for specialty items that are not on the regular menu or on the weekends. I would recommend eating the meal with a Big Red or a Mexican coke.

Expect a line! We arrived an hour early and still waited a long while. My Yelp friends and I enjoy checking out BBQ spots all over TX. Came here for the first time on our way to San Antonio from Htown. Service - was fair, you of course order at the front and they bring out your food like most bbq spots. They did check on us twice while eating which was good. We ate outside on there back patio which was pretty spacious. Food- we shared a meal with 3 kinds of sausage, ribs, burnt ends, brisket. The jalapeño & cheese sausage was good. The plain sausage was ok, and the chorizo style one was not great to me. The brisket I didn't care for. And not a fan of burnt ends but it was ok. For sides we got the beans, which I liked, and there version of Mac & cheese. Which I don't think I would categorize as that. More like a creamy pasta dish. Noodles very soft and very soupy which I know some like that texture. I think if it was titled as "cheese pasta" rather than mac & cheese then maybe I would have accepted it more? The very best thing I ate was the burger. And we split that 3 ways so it was just two bites. It was amazing, def recommend that.

This was honestly one of the best BBQ experiences I have ever had. I showed up around 9:30 am and did not actually get my food until about 1 pm, but it was absolutely worth the wait. We ordered a lot of things including the brisket, pork ribs, beef and jalapeño cheddar sausage, mac and cheese, street corn pudding, potato salad, BMF, beef cheek pastrami, brisket burnt ends, Moroccan smoked spiced lamb ribs, Chinese sticky ribs, and the baked sweet potato topped with butter pecan and toasted marshmallow. Pretty much everything we tried was incredible and honestly better than all BBQ places I have had in Texas. The meats were the real highlight. Everything was super tender and basically melted in your mouth. My personal favorite was the pastrami beef cheeks. If I had to limit my order next time, I would absolutely make sure to get the pastrami beef cheeks, the pork ribs, and the lamb ribs. The sides were also amazing. The mac and cheese was rich and comforting, the street corn pudding was packed with flavor, and the sweet potato with butter pecan and toasted marshmallow was surprisingly great and a really unique side. There was also a lot of seating. Overall this was an incredible meal and one of the best BBQ spots I have been to. If you are serious about Texas BBQ, this place is definitely worth the trip and the wait.

I'll start by saying: this is going to be long -- but worth it, just like the line at Burnt Bean Co.. I'm not a BBQ expert. I just love good food. So when my husband suggested a little road trip from San Antonio to Seguin for barbecue, I didn't know what to expect. We followed the GPS to Seguin, TX, and turned the corner to Burnt Bean... and immediately saw a line stretching an entire block. I looked at him and said, "Is this really worth it?" MY ANSWER...YES. ABSOLUTELY, WITHOUT A DOUBT, YES. We arrived at 12:17 p.m. on a Sunday. The line was long, and I was skeptical. But we had made the drive intentionally, and my husband had been talking about this place for weeks after seeing it on YouTube. (I refused to watch the videos because I wanted my reaction to be completely unbiased.) And honestly, he's usually the one compromising for everyone else, so this time we were going to do what he wanted. One of the reasons we committed to the wait was the staff member who regularly came outside to update the line. He wasn't rushed or shouting quick announcements. He was friendly, warm, and genuinely engaging. He'd share what was still available, what had sold out, and even chat a bit with the customers in line. That small act of hospitality made a huge difference. In a time when good service can feel rare, this felt intentional. Even the employees at the neighboring shops were welcoming as we waited outside their doors. Not a single negative comment when I would walk in and mention we were waiting in line for Burnt Bean. One shop owner even held my purchases until after we finished lunch without hesitation. That sense of community added to the experience. We waited exactly one hour. All 3,600 seconds were worth it. When we reached the door and saw that this small-town spot had earned not one but two Bib Gourmand distinctions from the Michelin Guide (2024 and 2025), I was shocked in the best way. Inside, the line continued cafeteria-style but far cleaner and more polished than any cafeteria I've seen. At the carving station was Chef Ernest Servantes himself, though I didn't realize it at first. Even though we'd studied the menu board, we still felt undecided once it was our turn. And not once did we feel rushed. No one barked orders. No one pressured us to move along. The entire line moved calmly and respectfully. I ordered a half pound of turkey, and Chef handed me a sample of the juiciest, most flavorful turkey I've ever tasted. One bite and I was sold. As we moved down the line, Chef called out each order clearly and calmly to the team. Proteins first, then sides. When we received our tray, I immediately noticed the care in the presentation. Nothing slopped together. No bean juice running into another item. As someone who doesn't like her food touching, I deeply appreciated that attention to detail. You could feel the pride. At the condiment station, another kind employee greeted us, shared a bit of history, and offered not only pickles and onions but conversation, and again, no rush. While I thought he was just being kind to us, while we sat to eat, I could hear him talk to everyone who went to his station in the same kind manner. What struck me most was the atmosphere: I knew nothing about the restaurant or its concept before walking through the door, but I did not need to know it, because I could feel it, taste it, smell it, and see it. Even with a line out the door, it felt like being at a family Sunday BBQ. It felt like home. It felt like we were at my husband's tio's house, and we were the "bougie primos," sitting in the AC, listening to tejano music on the radio. The staff genuinely seemed happy. Proud. Invested. And the food? Exceptional. Simple flavors executed perfectly. Juicy, hot, fresh. It truly felt like love was infused into every bite. The restaurant didn't have that heavy smoke smell that clings to your clothes. It wasn't about theatrics or giant smoke stacks. It was about quality, care, and intention. For dessert, we chose the Peach Cobbler Taco and a slice of carrot cake. It was about $140 for lunch, drinks, and dessert, and worth every penny. Even the ice cream accompaniment was fabulous. Nothing here felt standard. Chef Ernest later came around to check on tables. During our conversation, I realized that everything I had been feeling, the warmth, the pride, the purpose, it was exactly what he intended to create. That's when you know you're experiencing something special. Before leaving, my husband wanted to see the pits outside. Chef came over again and shared more of his story, learning barbecue from his father and grandfather, opening during the pandemic when restaurants were closing, building from backyard cooks to earning national recognition. A humble guy from Uvalde, Texas, who clearly pours heart and heritage into every plate. His passion, tenacity, and commitment to excellence are obvious. We came for BBQ. We left with an experience. And we'll absolutely be back.

My wife and I were really excited to try the No.1 rated BBQ spot in Texas by Texas Monthly, we live in San Antonio so it wasn't a super far drive. We opted for Sunday brunch since we passed by on Saturday and the line was a 2h+ wait. We arrived Sunday morning @6:30AM since they open the doors @8 and were about 10th to enter! It was a bit disappointing to see that they didn't have everything available but also understandable since they tend to sell out on Saturdays. What we got: The Casanova - Their version of chilaquiles with brisket AND Barbacoa. It was really delicious, salsa was not spicy at all but I eat a lot of spicy foods, would definitely recommend Blue October - Croissant , brisket, egg, jalapeño, cream cheese and strawberry Jam. It was delicious, croissant was very fluffy and light. We ended up eating this later in the day and took it to-go when we were there. Small Menudo - I'm not a big menudo person and I even liked it. We got this for my wife and she loved every bite of it, it was spiced very well and super flavorful! Order of Beef Ribs ( 2 per order) - These ribs are the reason I removed a star. I was most excited to try them and they were the most disappointing. They were also the most expensive thing we got here. They were very small for "Dino" sized as advertised on their menu. The ones we got were 80% straight fat so there wasn't a lot to eat unless you like just eating rendered fat. I probably wouldn't get them again El Cinco (House sausage) - The flavor was alright, I wanted there to be more of a snap when eating it and more flavor. Good thing to try but also probably wouldn't get again. Potato Salad - Nice and bright flavor, really nice pairing with the brisket and what you would want out of a BBQ potato salad Banana Pudding - Super yummy! The pudding itself was really light and fluffy with a cinnamon sugar chip to top it off! Would definitely get again Prickly Pear Lemonade - By far the best lemonade I've ever had! If you love prickly pear or lemonade this is a must try! Peach Cobbler taco - They only have this on the weekends but it was really yummy. Comes with a delicious scoop of cajeta (I think) ice cream with peach cobbler inside a cinnamon sugar fried tortilla. We got this to-go Overall this place was pretty good, is it the best in Texas? I haven't had everything so I'm not sure but I'd believe there's better out there. I'd still recommend to come and try the food, most of it is pretty good!

In my personal opinion, it's not the best BBQ we've had in Texas -- but it's still a must-try if you're ever in the area. We arrived shortly after they opened, and it was honestly wild to see how many people were already waiting. I'll never get over the dedication of folks who line up outside before opening! We ended up waiting a little over an hour before getting inside to place our order. The menu is straightforward and easy to navigate, the staff is friendly, and they do a great job keeping the line moving as efficiently as possible. For sides, my personal favorite was the potato salad, while my husband loved the mac & cheese. What we ordered: Brisket -- Normally what we look forward to when we visit a place, unfortunately, it was a little dry on the day we visited, so we ended up using quite a bit of sauce. Jalapeño Cheddar Sausage -- Very flavorful and meaty. I would have liked a bit more jalapeño heat, but still very good. Pork Ribs -- We don't usually order ribs at BBQ spots, but these looked too good to pass up. They were tender and fall-off-the-bone while still having a nice bite. Hot Cheeto Queso Mac -- Extremely filling -- this could honestly be a meal on its own. Cowboy Beans -- I didn't try them myself, but my husband said they were solid, just nothing particularly standout. Potato Salad -- Refreshing and exactly what you want from a classic BBQ side. The owner was walking around checking on guests and making sure everyone was enjoying their food, which I always appreciate. You can tell he takes pride in his craft. I love seeing the support they're getting and wish them continued success!

To say I was excited to try the No. 1 BBQ spot on Texas Monthly's list would be an understatement. I visited during the off-season in winter and opted for Sunday brunch figuring the line would be more manageable, which turned out to be a great call. The wait was about an hour, but it went by quickly. I ended up chatting with the older couple in front of me and even joined them to eat, which made the experience even more memorable. But on to the food. I was pleasantly surprised that the full BBQ menu was available alongside the brunch offerings so I decided to do both, brunch on the spot and BBQ to take home. The brisket huevos rancheros was easily the best version I've ever had incredibly flavorful and very filling. Everything I took home was just as impressive. The brisket was moist, the jalapeño sausage was juicy and the queso mac was ultra-creamy with a satisfying crunch and a kick from the Hot Cheetos on top. There were so many great options that it was hard to choose, which makes a return visit a must. Bonus points for the owner personally stopping by to check in on our experience and for the free beer.

Heard about this place last year and it has been on my list to try. The first time we came was last year, as we were on our way to Canyon Lake. We got there about 10:30 am, and the line was wrapped, wrapped, and wrapped some more, with the last guy holding a sign of the things they were sold out of already, which was pretty much everything. We knew that this wasn't going to be the day for us to try it, but based on the smell filling the air, knew that we'd have to make it back out. The second go was a success. We did some research and knew that we needed to be there early to get in line. We were coming from Houston, so we got up early and left by 7 am to get there around 10 am, I believe. There was already a line in place, and people were prepared for the wait. The location is in the middle of the downtown square, so all the parking says 2 hours, and we knew we'd be there longer than that, so we found some side street parking by a cute cafe that was a quick walk over. People had their chairs out, some coolers, and some speakers with some tunes going, so they could just hang out and chill. I'd recommend doing the same! Burnt Bean opened right on time at 11:00 am, however, being that we were about #20 in line, the line did appear to move rather slowly. We waited maybe about 25-30 mins to get in and get food ordered. Thing to note, they have one guy cutting the meats as you order, another person for ribs and slicing some other things, and then the owner, that was firing up some shrimp for their Lent special. So there's not a ton of people working the meats to make the line go faster. I will say though, the employees were great. Super helpful while we decided what we wanted, and to ensure we got enough for us to all try, as we were going family style to try a little bit of everything. They answered all our questions, and were super patient. As you move down the line, you can see all the sides, and then at another counter, you can order desserts separately. The variety we went with was the a mix of lean and moist brisket, pork ribs, and sausage. There were 3 types of sausage: regular, jalapeño cheese, and an el cinco sausage. In addition to all of this, we ordered burnt ends, the Red Onion Cheeseburger and fries (on special that weekend), Kings Ranch mac & cheese, and cowboy beans. Ooof I'm full just thinking of it all again!!! I'll start off with a mix of my likes and end with my favorite! The brisket for me was really good. I am a lover of more of the lean brisket, and this to me was good, with just enough seasoning on the bark, I loved it with the BBQ sauce, the mustard-forward one, just seemed to elevate it more. The sausages I didn't care too much for, but in all fairness, I haven't come across a sausage that I absolutely love from the variety of BBQ spots we've gone through on our TX BBQ tour. The ribs were absolutely delicious! They were fall off the bone, which some people don't like, but I do! They were seasoned nicely as well, didn't need sauce, but I ended up dipping anyways!! The burnt ends, we were the first to get them that day I believe. They needed time to rest, so they weren't my favorite day of. But the next day!!! BABYYYYYY, I wished I had more, they were super tender and tasty, so note to self, or myself, if it's early in the day, that will be a to-go order so they have time to do their thing! The sides, I am more of a sweet baked beans kinda gal, so the flavor wasn't my all time favorite. If they were sweet, I'd go all in, because the texture of the beans was really good. I almost think of a chili bean, for those of you that like beans in their chili, this would be a good bean for that!! Don't come for me! We also got the mac and cheese, which you never really know what to expect with mac and cheese now a days. It could be baked, creamy, or a mix of the two. I like all kinds, I don't discriminate! I liked the mac and cheese, but it was missing a little something for me. Would I get it again, yes! And last but not least!! My absolute favorite item, which I don't think is a regular item, was the Red Onion Cheeseburger and fries. Most BBQ spots don't do fries, so I was excited that they had some, but this place doesn't have it as a side dish on the menu, so really, I was being extra by ordering the burger to get the fries! Hands down, best dish! The fries were home fries like I like, crispy but not too crispy. The burger deserves a paragraph of its own. It's the only thing you don't get at the end of the counter, because they make it to order. You can tell it's grilled in the red onions, and there was a really nice lace crust on the burger with the perfectly melted cheese, and just every bite was so good. We split this burger 3 ways, and let me tell you, next time, I'm not sharing!! Overall, this was a win in my book for a successful trip. One of my friends was doing Lent, and couldn't eat meat on the day we went. He ordered some to go and when he did eat it, he said it SLAPPED!

Burnt Bean Co. Headed to San Antonio for a conference and had to swing by and give it a try. We ordered the brisket, the ribs, the sausage, and the burnt ends. For dessert we order the banana pudding and strawberry tres leche cake. When I tell you it's the truth! Brisket moist and tender. Sausage juicy with a nice snap. The jalapeño cheddar was my favorite. The ribs were on point. Tender enough to see your bite but not over cooked at all. The burnt ends were moist and tasty. This banana pudding though.... Oooweeee!!! Must have. And if you like Tres Leche and strawberries, you'll love this mesh up! You're going to stand in line but they are efficient and fast. Classic bbq restaurant vibe. Come get you some of this.

My husband came in looking forward to eating some BBQ. He left feeling like he'd just visited family. The owner is the most friendly, intuitive and talented chefs in the business. The food is the best there is. We've been to so many BBQ places. This is hands down the best. It's worth the drive, it's worth the experience. Thanks so much for sharing your great flavor with the world. #1 in the business.

Continuing on my never ending quest to try all the best BBQ in Texas, my friends and I finally made it to Burnt Bean Co. in Seguin, TX. What makes this place so special? Well, they are currently the #1 BBQ spot according to the coveted Texas Monthly's 2025 50 best BBQ joints in Texas. Not to mention they also have a 2024 and 2025 Michelin Bib Gourmand. Not too shabby! I've read about the lines and the wait so we left bright and early from home and made it to Sequin in a little under three hours. Seguin is a small town and the restaurant is located right in the middle of what I would think is the town square. There is two hour parking signs throughout the town so park at your own risk if you arrive early and plan on enjoying your food at the restaurant. I drove around a little and found parking a block over in a spot with no signs. The restaurant is not a stand alone and shares walls with businesses on either side. Once the line forms, everyone is mindful of the entrances to the other places. The weather was perfect so waiting in line in the sun wasn't horrible. I would suggest bringing chairs and umbrellas in the hotter months. We were about 20th or so in line an hour and a half before opening. Once the doors open, the line did move at a slow pace considering they take one order at a time with one person carving up the meats. They have a other line for desserts and drinks. You have plenty of time to figure out what you want before it's time to order, so don't be that person that is indecisive when it is your turn. Before coming in, my research on their website suggested a somewhat small menu consisting of the usual meats, sandwiches, and about seven sides. Once you get in, you will find they have a whole other menu with specials and different kinds of meats. They also had a lent special which I thought was very thoughtful. I always go with the same meats to really judge a place. Brisket, pork ribs and sausage. We got a mix of lean and fatty brisket, ribs and each of their sausage links. In addition to the basics, we ordered burnt ends, the Red Onion Cheeseburger and fries, Kings Ranch mac & cheese and cowboy beans. The only thing we had to wait on was the cheeseburger. I started off trying each individual meat without sauces. The brisket was good, but was just slightly under seasoned. Everything else was spot on in my opinion. The ribs fell off the bone and was seasoned just right. I liked all the sausages. They had a nice snap to it and each had unique flavors. I would pick the jalapeno cheddar as a fave though. The burnt ends was my least favorite but still good. The sides were good. I really liked the cowboy beans. It was packed with flavor and stood out to me. The table favorite was the burger though. That thing was amazing. It was smoked and the onions were cooked into the meat. They seasoned it to perfection as well. The homemade fries were also very good. I washed it all down with a good ole Texas fave Dr.Pepper. They had some delicious looking desserts, but we simply didn't have the room for it. Overall, worth the drive and worth the wait. Would I say it's the best of the best? It's up there but my favorite spot closer to home still reigns supreme. I would absolutely come back here if in the area.

Ribs, brisket, sausage, thick-cut bacon, and pork chop.
    Max G.

Burnt Bean is the top-rated joint in the current Texas Monthly survey, so we were eager to try it. We arrived early and waited in line for 2.5 hours. We ordered brisket, sausage, ribs, thick-cut bacon, and a pork chop. The first 4 meats were very good. The pork chop is probably the best I've ever eaten. The restaurant is large, with lots of indoor and outdoor seating. With that much space, and having cooked plenty of meat, why do they bottle up and slow down the line by only having one person take meat orders? It was frustrating. The owners and staff are very friendly. The food gets 5 stars. How they manage the line gets 1 star.

If I were going to try to go on Saturday, what time should I arrive? Like how early do people line up for this? 8-9-10?

I waiting in line for an hour on a Thursday. On a Saturday you should be prepared to wait at least 2 hours.

How bad is the wait on a Sunday?

Bring a chair, sun block and a cooler..

What is the typical wait time to get in? Do you have to get in line early to get food?

We went on a Thursday at 1pm and we asked two ladies who were leaving how long they waited & they said almost 3 hours & they had gotten there when it opened. Where we were in line, probably would've been 3 hours too

Is it dog friendly or outside sitting?

I'm not sure about dog friendly but there is outside sitting towards the back

What I did not expect was for these tacos to show up looking like they'd been training for a strongman competition. These things are enormous. Not "big." Not "hefty." I'm talking full‑blown California‑burrito impersonators. Each one weighs about ten pounds and could double as a doorstop. I opened the bag and immediately understood why the Uber Eats driver looked spiritually exhausted. I ordered three: * Bacon, egg, cheese & potato * Sausage, egg & cheese * Bean & cheese The bacon one... listen. Something in there was giving "mystery smoke." I don't know if it was the bacon, the potatoes, or a ghost from a BBQ pit that refused to move on, but the flavor was doing its own side quest. Not awful -- just confusing enough that I paused mid‑bite like, "What exactly am I tasting right now." The sausage one was solid, no complaints, but the bean and cheese? That one was the star. Simple, authentic, comforting -- the Beyoncé of the order. Zero drama, zero surprises, just good. And the real MVP moment: they delivered to New Braunfels. From Seguin. Through Uber Eats. That's not delivery -- that's commitment. That's "we will cross county lines to make sure you're fed." Even though one taco wasn't my vibe, I'd absolutely order again -- just with a different lineup. When the tacos are this massive and the delivery radius is this heroic, you give them another shot.

Our little service dog used to go with us and after he died I was even ask about him. We moved to Seguin in April of 2023 and of all the Mexican food places we have tried this is the one we keep returning to. My husband has Dementia and often needs help getting out of his seat. There is always someone that rushes to assist me. Now days I really don't even need to ask what my husband wants to eat when we go out. lol it's always Mexican food and ALWAYS EL Patrons. Do your family a favor and go try their food. Tell them Mrs Varnon sent you. It's always nest and clean. Plenty of booths and large tables plus the bar.

The place is very nicely decorated and transports you south of the border--well done. My wife and I shared an order of four carnitas mini-tacos. Served with chopped onion, lemon juice, and cilantro, they were good, but needed salsa too. The red salsa had the consistency of ketchup and the taste was off in a way I can't describe. However, the chips are top notch and the frijoles à la charra were excellent. And our waiter was very attentive. We'll come again.
