Other patrons were correct, the walls and tables could use a scrubbing and the ladies' toilet is a bit of a carnival ride. We arrived at 4pm to meet my parents and the place was maybe a third full, happy with noise. It took a while to have anyone acknowledge our arrival and then another wait to have our drink orders taken and menus brought. Another wait for food orders and that's when three of us found out they were out of bread so the banh mi selections were not going to happen and we needed a minute to recalibrate. Ma and I noticed different things about the new menus. She felt they had a better (she even called it fancy) explanation of the dishes; I noticed the menu had been Americanized in a manner one might expect for Seguin. For instance, you won't find the words bánh mì anymore, they're just listed as sandwiches. There was only one employee on the floor tending all the tables, and she was doing her best. The food's still very tasty when it does arrive, which is why I'm still OK with it despite a couple rough spots. Mr R had his usual bun (giant bowl of rice vermicelli) which looked beautiful. Both my Midwestern parents chose chicken fried rice when their chicken sandwiches were unavailable--only ma took her leftovers home but they both said it was tasty and truth is the servings were sizeable. I went rogue and chose beef skewers off the appetizer menu, and they were delicious! The skewers came nicely presented and impressively charred. The beef was sliced thin and ribboned on skewers--since I wasn't sharing with anyone I ate them right off the stick and only made a bit of a mess on my shirt. The sauce was perfect and every bite tender excepting pleasurable little crispy edges here and there. Two guys came out front for a smoke break when a lull arrived and the remaining tables (including us) had been served. I assume it was the owner who came to check on everyone and apologize for the unusual wait as they were understaffed. I snuck Mr R a fifty which paid for most of the tab at the counter. When Mr R added the remainder and said to keep the change, he said the owner handed the entire tip straight to the waitress which was nice to hear. Seguin's not a town of adventurous eating so I hope this place keeps doing what it needs to survive and the kitchen keeps serving up the good stuff. If next time it's won back a star or two, I'll be thrilled to bits. read more

So Mrs. R and myself were meeting her parents for dinner and decided on Vietnamese. As usual, when I get Vietnamese and there's a broad selection, I opted for the bún, or, as is listed on the menu, vermicelli with grilled meat. I went with the pork and an egg roll on top. As usual, the bún with sauce was delicious, with noodles, grilled meat, vermicelli, and veggies blending in a wonderful combination. The portions were huge and filling, but also tasty and well done: they don't sacrifice quality for quantity. Only issue is that the service was a bit slow, but that's because they're currently short staffed. There was all of one person serving everyone, and I can only imagine how short-staffed the kitchen was. Even so, the manager came out to talk to people at individual tables to ask how their food was. Mrs. R. got a beef skewer from the appetizers, and my in-laws got the chicken fried rice, whose portions were so generous that they couldn't finish. All told, outstanding food, and I hope that they manage to hire some new help soon so that service is a bit quicker. read more

Full disclosure- I am a recovering Californian. I have been living in Texas since December 2024, from the San Francisco Bay Area. I have not had Pho since I left California. I ordered the P2 Pho, which can be ordered with 4 different meats. I ordered the Kid size bowl, as the Regular sized bowl looked big enough to swim in to me. The heart of any Pho is the broth. This broth did not disappoint. Beefy yet delicate enough not to overpower the other ingredients in the Pho: vegetables, meats, vermicelli, etc. The kids sized bowl was perfect for lunch. I am certain that if I had ordered the Regular bowl, I would be taking a nap. Must return to check out the other dishes on the menu. read more

Absolutely incredible! The quality is amazing; it is always super fresh, nice and hot(or cold as appropriate), and it is deceptively filling; I have yet to have something I dislike from them. In addition to some of the best Iced coffee I have ever had, which was a peasant surprise, they also have the most incredible bone broth I have ever had in a restaurant; it is truly a homemade, stewed for hours flavor profile. This broth is magical- it truly helps the body, soul, and mind in one bowl. I have a degenerative arthritic condition, and the pho is my go to during flare when I hurt so badly I do not want to put food in my body. It soothes my joints, calms my GI, and puts me in a relaxed state when even my anti inflammatory medications are failing me. It's like a hug for your stomach. And of course, it's absolutely delicious. (They also have fantastic noodle dishes, and make a top class bang mi, with some of the best bread in town). ... but that broth is like a family member. A nice clean place with attentive service and a pleasant atmosphere. I went there in search of Pho and ordered the large bowl of beef. I was served a generous helping with the companion mint, jalapeno, and bean sprouts. I was not pleased that the broth was so heavily seasoned with cardamom that it was overpowering. got takeout pho from ordering online, came home and a couple slices of the beef was raw. would be okay if i was in the shop but the broth they sent with my order was definitely nowhere near hot enough to cook it. additionally i ordered the pork and shrimp spring rolls which usually turn out to be the fried lumpia style rolls, but here it was the fresh summer roll style which isn't what i was looking for. come here quite often, since around 2018 and i think the quality has been slowly declining since opening. also i got a quarter meatball lol i ended up boiling it all together to cook the meat so i don't waste but i was looking forward to just sitting down and eating read more

The restaurant is open and spacious. They appeared understaffed because a few of the tables were empty but had used dishes on them. The food was good and they give big servings. I'd give it a higher rating but the dirty condiment bottles are just a sticking point that I can't ignore. read more

The server lady was rude! We arrived at 8:20 pm and we asked her nicely if it's still ok to dine in. She rolled her eyes and went to the kitchen to asked someone. She came out and shout she's not staying after 9pm. Instead of just saying no we can't do dine in anymore we would have appreciated it. Never encountered anyone so rude in this area. We are new in the area and was happy to find something different but was greeted with this kind of attitude. We understand that they close at 9pm that's why we asked first, but we left with disappointment because of how she acted. Would have loved to try their amazing food through. read more

(We order p1 abs p2 and the beef are it is very good and tender ) Because he wants to make sure we have a best pho in this restaurant . At the end we decide to order a crawfish fried rice home for our sons ... Nguyen cook it by himself because he want to make sure the Quality are the best... it is so nice . I ordered the Chicken Pho soup. I waited less than 5 minutes for the guy to bring me several containers with the ingredients of the soup in all of them. I asked for the soup to be cooked and he argued back saying they don't do that. I'm supposed to add the ingredients to the lukewarm broth and heat it in a microwave. What the hell kind of restaurant charges $14 and just gives you cold ingredients. Also dishes packed the majority of the tables when I went there. The restaurant and fast food industry is going down into the toilet. Theirs more pride in the Chinese buffet food next to this location. I'll never return here. read more

Denny and I love love this Vietnamese Restaurant. We've been passing by this place for several years now and since we lived in New Braunfels, TX, we thought it's another same Vietnamese restaurant all around San Antonio metropolitan areas. Well, we finally stopped by and check out this establishment. Surprise surprise! Not only the place is immaculately clean, their food is absolutely delicious! Our food server is very polite and attentive and his name is Braden (I hope I have the correct spelling of his name and not a member of the family-owned restaurant). The owners are a young couple (Vietnamese-American) who I believed after graduation established this establishment along with some family members as well. If you want to experience superb culinary of Asian cuisine, we highly recommend this restaurant. Family own restaurant! The owner and his wife are super nice! The waitresses are really nice as well. He employs local high school kids which I think is very cool on his part. The service was great. The waitress brought me a menu and took my drink order right away! I ordered the D5 shaken beef. So good. Fried rice is a 2.00 up charge. Not bad. It tasted like it was fired in butter. Maybe that was an accident. It definitely tasted different but it Was good. The beef was really tender. Side salad was excellent. The egg rolls were pretty good. I would definitely come back and try more things off the menu. Also to the two back to back bad reviews I wouldn't pay any attention to those. They really seem like a personal attack against the Owner and his family. His wife and child were very pleasant. I wish them all the success. read more

It was pretty good, we got stir fry, 2 orders of pho saigon pho and chicken pho along with some spring roll and egg rolls the stir fry, spring rolls, and egg rolls were really good but the pho honestly isn't very good, it lacks flavor and the chicken is very dry and also lacks flavor. The broth doesn't taste the best but the noodles are good. Overall the experience was nice the inside is very nice minus the bathrooms. My mom tried their ramen last time and they wanted to know what she thought of it as it was a new offering. Today I tried their crispy chicken w stir fry noodles. So good. I've been a customer here since day 1...literally. Steven mentioned yesterday that it's been 5 years! Wow! Yesterday's visit was particularly exciting because I finally got to take my partner there! She lives out of town. To no surprise, Saigon Bistro knocked it out again. Im so proud of Steven and his fam. They are the only Vietnamese restaurant in town but they are turning lots of people (my parents are now regulars) on to flavors that are not that common around here! I know that he gets unhappy customers quite a lot...it's also a really big risk being a restaurant serving ethnic food in a community with not a lot of ethnic cuisine (other than Mexican, of course). But this restaurant is sooo welcoming to all just so that they can serve everyone a piece of their country and their heart. As someone who has been coming here since day 1, I can tell you that this restaurant has had ups and downs for sure. 1. Obviously COVID was a royal pain in the ass for everyone (putting it lightly). The fact that this place is still open? Congrats! 2. Finding good help is always hard. This restaurant has dealt with issues of staffing in the past and that's going to cause quality issues and cleanliness issues from time to time. It's just an unfortunate fact. Having to train and retrain the help is difficult but a necessary part of this business. But last night, the food was as good as ever. The egg rolls are some of the best I've ever had. The way that Steven and his staff prepare the proteins is . And the Pho? It's got one of the most distinct broths over ever tasted! Tasting that food last night and having it hit just as hard as it always had makes me very proud to have this place in my community and to continue to support it. I've also brought a lot of new customers in! Here's to 5 and many more years of being a loyal patron of Saigon Bistro. If you've never been, you need to make it a plan! read more

The chicken, shrimp, and vegetables were delicious, but the beef tasted iffy. The egg rolls we're good too, but the beef on a stick was stringy and not pleasant to chew. Customer service is ok. Food was not great even after waiting about 30 minutes just for 3 sandwiches. The chicken on my Sandwich was not cooked and the bread was completely wrong for Bah mi. I really wanted to like this place from all the great reviews, but there were so many red flags. First thing I noticed was how the floor and walls were super dirty. Rice old dried noodles so much dirt just nasty. Service was fine. There were two boys loudly playing on their iPads. Even after being shushed by the other worker. The additions for the pho were not fresh at ALL. The sprouts and jalapeño slices were shriveled and dry. The rolls they use for the "Bahn Mi" were not traditional. They were like hoagie rolls. Well haven't been here in a while, last time the place was dirty. Not much has changed. Food particles on the tiles around the tables, on the wall pictures , some of the tables need replacing.
