I've been wanting to take my wife here for awhile. The hotel and the surrounding complex are beautiful and I figured the restaurant must be top notch as well. My wife and I enjoy fine dining more than most and do this quite often. We made a reservation on OpenTable and showed up 5 minutes early. The decor in the restaurant is quite nice and exactly what you would expect at this price point. We were taken to our table right away. We sat there for 5 minutes watching the staff continue to walk past us and not once did anyone even acknowledge us. A group of four were seated right next to us several minutes after we were seated and someone immediately came to their table. We were now a little annoyed, but waited several more minutes and still no one acknowledged us. The restaurant was only half full, so the staff was clearly not too busy to attend to us. At this point we got up and walked out. We told the hostess on the way out why we were leaving and she reacted as if we said we had a great dinner. She didn't apologize, she didn't get the manager, she didn't say they would make it better next time. She simply said thank you and good night. We're we dining at Outback Steakhouse or something at that price point, we would be far more understanding of being ignored. However Sustenio is supposed to be a high end restaurant, and is priced like a high end restaurant, so we expect a certain level of service. At this price point we can go to any restaurant in San Antonio we want and often dine at Fleming's and Myron's when in the mood for a top notch experience, as the food and service have been impeccable each time at these restaurants. We will never return to Sustenio and will spend our money elsewhere next time we are in the mood for a nice dinner out. read more

Service was fast and friendly (albeit a awkward - the waiter couldn't pronounce some items correctly) Appetizers (butternut squash soup, tamale tart, caesar salad, flounder ceviche), amuse-bouches and breads were all great Entrees (lemon sole, striped bass, sea scallops, lamb) were, with the exception of the lamb, a letdown - prepared well, but some of the flavors just weren't right. The molecular gastronomy approach was interesting, but the foams didn't actually make the dishes better, which is important. It was expensive - average entree price was about $35 Overall, up until the disappointing main courses, this was on track to a solid 4.5 stars, maybe 5, but the entrees didn't maintain the pace set by the food leading up to them. We'd go back but probably try different entrees. If they let us down a second time, we wouldn't return. read more

I rarely ever give a restaurant 5 stars, but Exec. Chef David Gilbert has put together a stellar crew at Sustenio... Stephan Pyles brought David in from Dallas to run Sustenio and from the looks of it... He's going to do quite well. The Restaurant in in the Eilan Hotel so the prices as expected will be a little higher than a stand alone restaurant, however, the quality of food is amazing. As the name Sustenio implies the restaurant is founded on the "Local is Better" principle, they strive to bring both local and sustainable food from farm to table. They have an in-house meat processing facility and will soon be starting a Charcuterie program as well. I would recommend coming in sitting at the Raw Bar and having the Chef's Tasting menu... We enjoyed ourselves. The ambience was nice and the service was satisfactory. The desserts were probably our favorite part. Didn't seem too crowded for a Saturday night, but not sure if that is because of the location. If you have never been there, it was a little difficult finding where to park. read more

My husband and I had dinner there for our anniversary as we were staying in the hotel and it is the one restaurant there. I'm a bit of a food snob and found the food to be below average. For apps, we had the crab tart and the duck and foie gras. The crab thing was like a chicken pot pie with crab. Gross. My Duck thing was so bad that I took a few bites and left the rest. I am not a picky eater at all and usually can eat anything, so for me to leave 3/4 of an app on my plate means it's bad. BTW- it shouldn't even say foie gras because there isn't any. It looked like a brownie square of duck meat. That's it. For dinner I had the lamb, also average. Husband had the chicken which was good. But for these prices and for being in a really beautiful hotel, I have to say it was really disappointing! I mean, when you go to check in to a nice hotel you just expect more. I would not spend the $ on this place. Maybe you would find it to be good if you have no palette and find Domino's pizza to be an acceptable meal. read more

First off bartender Jen was amazing very friendly and had a lot of suggestions I went with her choice pizza and beer. The pizza was amazing honestly!!! The crust is light the sauce flavorful but not to much cheese and pepperoni perfect! I can't tell you how extremely happy I am to have found this hidden gem!! We visited for Culineria week as date night. Husband had the french onion soup and reported it was good. I had the tuna ceviche and got a good amount of tuna. Scallops were well cooked but lacked some salt. Steak was a bit past medium but had a great sauce. Favorite of the night was the side of mac and cheese. Outstanding food, drinks, and service. I came here for dinner and had halibut, wood-fired oysters, ahi tuna ceviche, and sweet potato casserole -- all of which exceeded expectations. We just wrapped up a 4 night staycation at Eilan. Sustenio is the properties restaurant. We had 3 meals total at Sustenio and none disappointed!!! We had dinner the 1st night. This is such a beautiful hotel. The ambiance was great, the services was pretty good but the food was just "ok". We were quite disappointed. This was our first time at the restaurant with friends. I think we were all expecting the food to be amazing, but it wasn't. My husband had lamb, it was over cooked and only given very small amount for an entree. Our friend had the brisket, and he said it tasted like it was from H-E-B . Then to end the night we had the camp fire dessert., the presentation was awesome, but the taste was horrible. It tasted like a smoky fire in your mouth. Having a Smokey taste is one thing, but it tasted like chewing on a log out of the fire. Very disappointing. Not sure if we will be back. read more

Sustenio is a wonderful diamond in ruff of San Antonio cuisine. Recommended for a date night, fantastical food experience, or just a good evening with great company as the food is sure to match. We had difficulty finding the location and I am not a huge fan of the architecture of the complex, but the interior of the hotel is nicely finished. The decor of the restaurant itself is unpretentious and fairly simply elegant. Regarding the earlier reviewer's note about the wine, that is ubiquitous for fine dining. Sustenio, however, will let you bring your own wine in for a moderate corkage fee. Genre: New American Southwestern with touches of Asian and Molecular Gastronomy influences. Price: High End Atmosphere: Perfect Food: Out of this World! Perks: Complementary valet Highly Recommended: the Tasting Menu, or Tuna Ceviche, Beet Salad or the caesar salad, Pork Belly, Wild Boar, and every dessert on the menu (even though I am not usually a dessert fan, each one impressed me). Local food items with a sustainable mindset. Unusual and widely varied, the menu is well thought out and incredibly balanced. There are Stephan Pyles Classics (tamale pie, his famous caesar salad, and rib-eye) perfectly set against a myriad of strikingly brilliant morsels of modernity. The one critique I have is that the restaurant itself is still working through some growing pains. The service was wonderful, but the signage to get there is not yet complete and the hotel still has unfinished rooms so there weren't many people in the restaurant when we got there. I am glad, however, to have found this place before it has come into its own, as once the word gets out, and the complex is closer to completion, I know I will have to fight tooth and nail to get a table here. read more

Went for the second time last night. The service is beyond amazing. We were treated like royalty and Chef Herdman even paid a visit to our table to wish my wife and I a Happy Anniversary. We started of with an amazing take on shrimp cocktail that was fantastic. My wife had seared scallops with spoetzal Mac and Cheese. I had red snapper over fried green tomatoes. It was the most well prepared snapper I have ever had. Crispy skin, with light airy meat beneath and perfectly seasoned. For dessert we were treated to a different take on banana cream pie. I had these awesome little malt balls in it that gave it a crunch and some texture. This has become one of our favorite places to dine. The food is great, but the service cannot be topped. read more

My bf & I decided to give Sustenio a test try before we actually dine here because all the Yelp reviews seem so wishy-washy. Sustenio happy hour is from 4-7PM, 1/2 price drinks & appetizers. We were greeted by the friendliest bartender ever and both my bf & I didn't really know what we wanted to drink so we asked our bartender for advice. He told me to give him my mood and flavor then suggested me to try the cucumber gimlet. It was the best cucumber drink I have ever had. Many of the complaints are all about the service here, but I received an impeccable service, I don't know if it's because it was empty when we went but I am definitely coming back soon to try their food. read more

Really nice location in a luxury resort. Wasn't expecting the food to be so modern based on the menu. Loved the shrimp cocktail- beautiful and deconstructed. The fried chicken and inked Mac and cheese were also delicious. Dessert (butterscotch pudding) good. Ordered 2 types of ceviche, specified no cilantro, they came with cilantro in them. Server apologized and was going to take them back, but others at the table ate it (and enjoyed it). Servers should know what ingredients dishes are made with. Friendly service. Very disappointed on how we were treated. Had reservations for 6 for Fathers Day Brunch. Never had been here before and read in the paper about their Father's Day brunch with cigars and raffle. At first server was attentive and wished my husband and other dad at our table happy Father's Day. He brought the cigars and drinks. Food was excellent. Omelette station plus meats and sorts. We felt rushed and our bill was given to us and we were still ordering drinks. We were never given a raffle ticket as we found out when we were leaving that we should have received it. Spoke to female manager and all she could say was that she was sorry. The waiter was great aside from a bit of poor communication when ordering from the happy hour menu. When inquiring about the menu, we weren't informed that the prices only applied if you sat at the bar, so our tab ended up being significantly more. The appetizer, soup and salad came out in a decent amount of time but the main entrees took FOREVER...probably 30+ minutes after we got the other food, and the restaurant was not that busy. The food was definitely tasty except the taco shell on the brisket tacos; the meat was excellent though. Their house bread is really good, just greasy. I ordered the snapper, which was good but the portion seemed small. I don't know that I would go back just because it's a bit overpriced in my opinion. read more

Four words: Just tried too hard. We went here for an Anniversary Dinner and I would sum up the experience as noisy atmosphere, ok food and very good service. The restaurant is located in the Elian Hotel off of La Cantera. Free Valet parking is included with your meal, which is nice. We arrived a little early and found our way to the bar which has a nice open layout with comfortable chairs. The beer menu was more limited on local selections than I would have thought. The cocktail and wine lists were very good though. We were seated at a table shortly after getting our drinks and noticed that the ambient noise level was pretty high. We did our best to ignore it and ordered Rock Shrimp Ceviche and Butternut Squash Soup to start. Prior to our food getting there the chef sent out a couscous medley to cleanse our pallet and it really set the stage for what we thought would be a great meal. The Ceviche was interesting but not very good. The sauce covered up the taste of the shrimp. The Butternut soup with bacon-pear chutney was delicious though! I highly recommend it. For entrees we ordered Lamb with Risotto and Scallops with Vegetables. The presentation of both dishes was very good. The taste was better than average. I found the lamb to be a little over charred and couldn't shake the charcoal taste. The risotto was just average. The scallops were actually pretty good and the vegetable ensemble it came with was excellent (some of the best Brussel Sprouts ever). We opted to get dessert as well because we had heard a lot about the Flexi-Chocolate. It turned out to be so-so at best. I know they are just getting started so we might go back but for now stick to the JW Marriott or the Westin. read more

My husband and I came to Sustenio on one of our first dates around Valentine's day about 5 yrs ago. The experience wAs unforgettable. They had a special menu for V-Day which included a 5 course meal along with wine pairings. Every dish was delicious. The ambiance is quiet and in the middle of the Eilan Hotel, feels very upscale and luxurious. The service wAs impeccable. We plan on heading back next months to celebrate 5 yrs - I'm hopeful for a similar experience. read more
