Sushi Amane is a true gem for omakase lovers. The precision and artistry behind each piece are unmatched, with the freshest ingredients and flawless execution. The intimate setting adds to the experience, making it feel personal and special. Our waiter was very attentive and warm and was very knowledgeable on each dish. While pricey, the quality justifies it--every bite is worth savoring. A must-visit for sushi connoisseurs!

sushi AMANE had been on my bucket list for some time, but it's not easy to score a rez there since the small space only accommodates 9 patrons. Upon arrival diners are escorted separately down a flight of stairs into a basement area. Then we wended our way through a few rooms to finally enter sushi Amane's lair; I kept thinking that this well hidden space would make a great safe house! The decor is spare with cinderblock walls and blonde wood, and mellow jazz music created a nice peaceful vibe. Seating was very tight. This was my first experience of eating Edomae style sushi. Edomae is a style of sushi that was invented in Tokyo about 200 years ago as a cheap fast food snack for laborers (imagine that?). Edomae involves treating some of the fish with a cooking or curing element before serving it, and fish should be sourced only from Japan - preferably from Tokyo Bay although that is not practical anymore. We started with a bottle of Mimorusugi sake chosen from their nicely curated menu. Our sake was decanted into a small metal pitcher to keep it cold. Nice touch. Each course was artfully served in beautiful handmade dishes with much care. Among my sushi favorites were golden-eyed snapper; white shrimp; toro sashimi and rolls; and luscious Hokkaido uni. Also enjoyed the abalone with matsutake mushroom. A small bowl of flavorful miso soup and sweet tamago (egg custard) ended the feast. Chef Hayashi is highly skilled and very friendly. During our short chat it was revealed that I had lived in the same small town in Japan as did the Chef's older brother - a small world indeed. Wonderful and unique experience overall.

Probably one of my favorite omakase experiences in the city! Haven't heard too much about this place before booking a reservation, but was pleasantly surprised. Everything was super fresh and well prepared. The rice was always fresh for each course and a bit on the warmer side, which I prefer. Great selection of pieces as well - nodoguro & uni rice appetizer, ebi, uni, otoro, chutoro, and hairy crab were some favorites. Would have liked to see scallop on the menu, but not a big deal as I'm sure the pieces are dependent on what's being flown in. The service was also great - cleaned the platter between each course and our water glass was never empty. I noticed that the chef always gave each course to the female diner first, which actually hasn't happened in the previous omakases I've been to. A small thing but definitely appreciated! I usually prefer more nigiri and less appetizers, but there was a great balance and felt full, but not uncomfortably so afterward. I was also looking forward to the tamago course and it did not disappoint - definitely one of the best and more unique recipes I've had and would buy a whole block of it if I could.

We went here to celebrate our anniversary and this was our first time here. We'd been to Mifune upstairs about 4 times so we expected Sushi Amane to be even better and it did not disappoint! Service was impeccable and all the dishes were perfect! The chef is also very nice and accommodating for those that want to take a lot of pictures and videos! At the end of the nigiri before moving on to the hand roll, they do ask if anyone wants to try the special that wasn't included or have another piece of something they've already had. This is of course a la carte and extra on top of the omakase. My husband got another piece of the white ebi, which was his favorite while I got the special which was hotate. For me the best is tied between the chūtoro and the uni. I wish I'd gotten another piece of them. There is no dessert included but the last piece is the tamago. It tasted so heavenly, almost like flan, that it might have as well been the dessert! Overall, we left very happy and satisfied and will definitely come back again!

Delicious upscale omakase place deserving of its Michelin star. The service was attentive and great as well. Really stood out for its amazing quality fish and well seasoned rice. A quiet 8 seat dining area makes it a good place for conversation. They serve a good collection of Japanese wine and sake here too.

Overrated Michelin one star omakase. Came here for a birthday celebration and was super excited for delicious sushi. The location is the basement level of Mifune (with a small sign outside for Sushi Amane) so if you're looking for the restaurant, be on the lookout for Mifune New York. Upon entering the restaurant, the servers ask you for your ID and vaccination card/QR code before letting you in. The servers then took us to the basement. In the basement, there was a small nine seater sushi bar which was pretty typical, but outside the sushi bar there were random tables and chairs which made the basement seem unfinished. After we ordered our sake, our dishes started arriving. There were only a few pieces that really "wowed" me, which was a pity give its rating. Overall the sushi had too much soy sauce so most pieces tasted too salty and the amount of wasabi was inconsistent - too much in some pieces and not enough in other pieces. Additionally, the service was not on par given the price point paid. Most Michelin restaurant servers are diligent enough to notice whether the customer is left handed or right handed given the placement of utensils. Although I typically don't tell the servers I am left handed (I simply place my utensils to the other side), all other high ended restaurants I've been to will notice such detail and accommodate accordingly. I had deliberately switched placement of my utensils throughout the night with no acknowledgement from the servers. Moreover, we ordered a bottle of sake and were basically pouring the sake ourselves for the night. Honestly it's not that big of a deal - if I had been paying for medium price point for my dinner or if this had not been a Michelin star restaurant this would not have mattered. However if you are charging customers for premium price, then the customer service should be premium as well. Fairly disappointed with the food and service as this had been a birthday celebration, won't be coming here again.

Sushi Amane is worth every pretty penny for a standout omakase meal. The omakase includes 4 small dishes, 9 nigiri sushi, hand roll, and miso soup. Everything was absolutely perfect. Seriously, not a single piece wasn't executed perfectly. Of course I did have some favorites such as the chu-toro and uni. The soy sauce was clearly house made and I think my friend asked about 5 times how they made it lol. We would both buy several bottles of it if given the opportunity. The miso soup was also fantastic and put other miso soups with takeout sushi to shame. Some secrets will never be shared- guess we just have to revisit!

Recent visit with new Executive chef Tomoyuki Hayashi (former Michelin star Executive Chef at Sushi Azabu). Been to Sushi Azabu couple of times when he was there and was very impressed with the sushi omakase (had them in my top 5 sushi omakase in town as I wrote in my yelp review at that time - 03/14/17), so I knew the omakase here was going to be just as good, or even better. First off, price went down; it's now $200, instead of $250. Second, Hayashi san does include otoro and shiro ebi, which were not included with the previous chef, well at least in my visits. Unfortunately, still no small dessert at the end. But, only $200 for this high level of omakase, I can live without it. Service - much improved, excellent. Also, nice to be surrounded this time by more 'mature' patrons. Highest recommendation Will be back again soon. : 10 calendars

TLDR: Intimate authentic omakase with an upcoming star who apprenticed under legendary Chef Saito. You will be served by one of the best, with ingredients of the highest quality but you will feel a serious lightness in your wallet. You are committing to a $650+ meal for 2 with no alcohol. When I had first read about sushi AMANE and who the chef was, I had immediately added this to my Bookmarks. Chef Shion apprenticed under Takashi Saito of three Michelin-starred Sushi Saito of Tokyo. I did foolishly try to book Saito on my last trip but that didn't work out. This meal was an incredibly generous birthday meal from my significant other. This is an experience for purists, there is no music in the background, all eyes are on Chef Uino as he serves out each course. With the kind of experience he has had, I guess I had relatively high expectations. Every course we served you could taste the detail, the preparation. All of the fish and seafood were of the highest grade. The seasoning is on the more minimal side, leaving each protein to speak for itself. A slice of abalone, a perfect cut of octopus, pen shell between a thin sheet of crisp nori; each plate showing his expertise. The hairy crab with vinegar in it's own shell was very tasty. Now the nigiri. All of the pieces were great and were executed flawlessly but none of them except one - really wowed me. There was a steamed sushi piece that was unique and in all honesty, I thought this was the best piece. Better than the toro or the kinmedai. The soup was good, the hand roll was enjoyable but again, neither really seemed stunning. The tamago was also one of the moistest ones I've ever had, which while unique; I didn't love. Despite all of the omakases we've eaten, perhaps our palettes aren't sophisticated enough to fully appreciate a menu of this level. No alcohol this set my lady back around $670 with tax/tip. That is a LOT of money for one meal, so many McNuggets we could buy! I'm not saying you won't enjoy your dinner but I don't know if you'll feel like it was worth it in the end. We are happy to have tried sushi AMANE but don't think we'll have much or any replay here.

Gonna give a review as an omakase amateur. Very personal, quiet ambiance for a calm sushi experience. Lots of interesting textures but overall the food didn't wow me for the price point. An unassuming experience. The food was methodically and carefully crafted by chef Hayashi, probably possibly because of the 7 people at our seating. I enjoyed the piece for the most part and had a great meal. Not sure if I would go again, and at this price point. Maybe I'll revisit this review when I try more omakase, but this is the best (and most expensive) tasting omakase I've had so far.

Went to this place the other day and had a great time! Sushi was very high quality, but tbh only a few of the pieces really stood out, but you can still taste and feel the quality of the fish. Really enjoyed the uni based dishes as the uni was very creamy. I also liked how there was a lot of food (4 side dishes, 9 nigiri, 1 hand roll, and 1 dessert). You will leave satisfied HOWEVER, this place gets it's strength from the overall experience. The chef is so skilled and watching him do his thing is like watching an artist make a painting. The service was also so good and so in sync with the chef and other routines. The way that plates were changed, orders were asked, sushi was given, etc, was in fine tune -- it was like watching a choreography/play Really enjoyed my time here and honestly it doesn't hurt to go by yourself (I did just that)

I was treated to the omakase at sushi AMANE by my wife for my birthday, and I loved everything about this wonderful experience. The omakase room is located downstairs from Mifune. The minimalistic space features concrete and light wood, and a sushi station that takes center stage ands sits 8 guests. Chef Shion Uino is totally in control; the impression I got is of an incredible attention to details, while at the same time the chef also appears completely relaxed. In fact, the omakase was a very relaxing experience. It's just you, chef Uino, and super-fresh, delicious seafood. The only other people you will ever see is a waitress that takes drink orders, and one assistant that brings bowls of vinegar-seasoned rice to the chef when needed. It's hard to pick favorites out of a long selection of dishes, all unique in flavor and presentation, all super-fresh, and all delicious, without making a disservice to the chef, but I will try: - Abalone and tako with fresh wasabi. - Salmon roe with yuzu. - Hokkaido hairy crab served in its own shell in a sauce of Japanese black vinegar. - Trio of uni (2 from Hokkaido, 1 from Kyushu). - Saba (mackerel) with spring onion. - Nogoduro (red throated seabass with daikon). - Kohada (gizzard shad). - Hotate (scallop) and roll. - The 3 different cuts of tuna (maguro, chutoro, o-toro). - The cooked sushi. - Unagi. - Tamago (egg omelette) to end the dinner. I wanted the evening never to end.

Incredibly overpriced for very little food. The idea of an outdoor Omakase was quaint and interesting. But the food was very lack luster. Would not recommend this place Service was good though and it seemed like they cared and were attentive. But not at the level I would expect for a one Michelin restaurant. Disappointed and will not return
