Seriously, these were the best dumplings I've had. The way the seasonings were caramelized on the bottom with a little crunch, had me in a chokehold. They were seasoned so well. We wanted to confirm whether a few menu items that were marked "out" were still unavailable. Instead of simply answering our question, the gentleman at the window raised his voice and said, "When it's listed out, that means we're out of it." When we matched his tone, he then asked whether we knew how to read and why WE were being rude. We were taken aback by the unnecessary attitude. We were only trying to clarify availability, and the interaction felt unprofessional and disrespectful. Responding to the owner: We did not "freak out." We politely asked about availability because several items on the menu were marked as unavailable, and we wanted to clarify what was currently being served before ordering. We were taken aback by the tone of the response we received, and unfortunately the follow-up reply here reinforces the experience we described in our original review. We were respectful, did not raise our voices until AFTER you shouted at us and as for the low class comment, I think you've spoken for yourself sir, that you indeed are the president of the low class/low intelligence committee. Also, the fact that you felt the need to chime and shout such snide response to us, especially AFTER the young gentleman at the window already responded to us, shows what kind of person you are. You can try and twist the story however you want sir to try and do damage control but you literally shouted verbatim, "What? Yall dont know how to read the sign?" Georgetown-Outstanding food truck!! We were out for Thursday night bingo at the Southfork Fun Food & Brew food truck place! Definitely will return to the Stretch the Noodle truck. We had some great chow mein & fried pork/shrimp dumplings as well as fried chicken dumplings. DELICIOUS, although a little bit spicy for me. Next time I would order with no spice instead of mild. Extremely disappointing experience. My wife has been so excited to try this place and we finally got the opportunity to do so today. The food was absolutely delicious, HOWEVER, the old white guy taking orders is awful. As my wife and I were waiting for our food at a nearby table, we overheard him yelling at his wife in the truck saying things like "I hate your f****** mouth" you "f******* b****". And it absolutely stunned us. It ruined the entire experience for us. We will not be going back to this food truck. I was in the area and my first thought on my way home was to stop here to get food for dinner. They have relocated to the Killeen Food Truck. Thankfully, there was no line. I ordered the Sichuan Spicy pork bao since they ran out of them last time, pork and shrimp pan fried dumplings, Dan Dan noodles and Biang Biang noodles. They have adjusted the spice level to just mild, medium and spicy. I ordered something in between medium and spicy so this time I can focus on the flavor instead of the yummy hot pepper. Everything was delicious and their food is consistent. All handmade to perfection. I liked that the bao came with meat. Dan Dan noodles still great. My favorite is still the pork and shrimp pan fried dumplings and Biang Biang noodles. I would definitely drive out for more since it was delicious. They have great customer service. read more

Horrible service, had an experience where a simple question about whether items were available or not was asked and in return was received with an attitude and whether we the customers knew how to read. Easily could have been avoided if simply the person at the register would have answered instead of choosing to throw attitudes at your customers when you're not even working the window. Proceeds to then say "you people and your problems [issues]" not sure what he meant by this but given the situation we can infer really anything here. Honestly if there wasn't the chime in and thinking you're the smartest in the room, all would have been avoided. I heard about this food truck from a local food group after they apparently went viral. Waited it out 2 weeks and went on a Friday at opening. There was only one other person in front of me but as soon as 4 pm had hit, the line quickly formed. I read a lot of comments about the rude owner. I don't think the male owner is trying to come off as rude. They honestly looked overwhelmed and he was just straight forward to get things moving quickly. When I went, not everything was available and it was reflected on the chalkboard menu. I ordered one of each noodle that was available - mild, pork dumplings & a spicy pork dumpling. I received a beeper, paid and waited 20 minutes for my order. My favorite was the la mian. Tender, flavorful beef with a delicious soup that still had a bit of a kick. The chao mian was also delicious. I was shocked at how addictive it was since it's just a stir fry noodle. Dan dan was my least favorite. It was good, just a preference on not loving dan dan but wanting to try it. I wish they had the shrimp and pork dumplings but the pork was still good. Not the best dumplings I've had though and not something I would get next time. I would also skip on the spicy pork dumpling next time. It's big and filling but I found it to be soggy when soaked in the sauce. I got everything mild so my kids could eat too but they found it to be too spicy so for those who can't handle any heat, there will still be a hint. I can't imagine waiting 3-4 hours but I was happy to try with the 20 minute wait. I do wish they had the shrimp and pork dumplings and the biang biang noodles. Honestly, I was looking forward to eating here after all of the hype that it garnered on social media. The wait time was not very long at the Killeen location during lunch on a weekday. The staff was friendly and helpful as well. The food, though very aesthetically pleasing, was not the best. The broth in the beef noodle soup was very much soy sauce and water heavy. The noodles, though handmade, were not tremendously special. In some cases, they were very tough. I would recommend people try this, especially if they're not familiar with Asian cuisine, but I will not be returning. UPDATE: Owner is rude and judgmental (see his response to my initial review where he said I must've been expecting "magic noodles." Though I didn't love the noodles, I was both honest AND supportive, as I recommended others to try out the food!). Owner cannot seem to accept criticisms and makes assumptions about my experience eating Chinese cuisine (I am an immigrant ???) I hope others have a better experience than me. read more

Brand new Fresh handpull, bao and dumpling food truck called Stretch The Noodle Tx just arrived from Portland. They're located at the South Fork Fun & Food Brew park in Georgetown and i am thoroughly impressed. They can easily beat out all the options in Austin imo. The fresh noodles had an irresistible bite, creating a truly addictive texture. This would be the first time where I had the peanut based Dan Dan noodles where it was enjoyable and not taste like peanut butter nor drowned in oil. The la mien broth was bold flavorful with solid vegetables that didnt taint the broth. The meat was fall apart tender. As for the pork and shrimp dumplings, they stood out with a chunky whole shrimp nestled within, and a perfectly crisp, pan-fried bottom. They're open mainly weekends and only in Georgetown for now as they get started. The park itself has beer, playground and other food trucks. read more

We love this newly discovered good truck. We have had the vegetable, pork, and chicken dumplings. They are all excellent with a tangy, vinegar type dipping sauce. My husband got the pork fried rice and he said it is the best that he's had, not salty but very flavorful. I had the stretched noodle number three unfortunately I can't remember the exact name of it. I love spicy food and I ordered the medium but be forewarned medium is very spicy. The dish was huge. I'm sure I could make several meals out of it. So, I came here specifically for the biang biang noodles, and was really disappointed with those, but we also ordered the dan dan noodles and chow mein, which were both phenomenal. The wait was 2 1/2 hours, even though we got there half an hour after opening time on Sunday, so if you're not absolutely dying to try them like I was, I suggest waiting a bit until things calm down a bit or going early, but DEFINITELY check this place out! For the biang biang noodles, I loved watching them get stretched to order--the owner has some serious skills--but unfortunately the sauce really let the noodle quality down. We ordered all three dishes at a medium, and the biang biang noodles were by far the hottest, but it wasn't the wonderful mala spiciness where different chilis and Sichuanese peppercorns blend together in mouth-tingling loveliness. This tasted more like tabasco or some other vinegar based sauce was reduced down into a thick paste so that it just tasted super hot and slightly sour, and every millimeter of the dish was coated in sauce, so I couldn't taste the actual noodles at all over the aggressive tasting sauce. When I've had biang biang elsewhere, they put the sauce in the middle of the dish, which allowed me to drag the noodles through as much or as little sauce as I wanted, and let me really taste the actual noodle. I've seen a lot of love for that dish from other posts though, so maybe I just had a odd batch. Also, I would love to see the option to add meat to this dish for an upcharge. (I didn't ask if that was a possibility because they were absolutely slammed with the long line, so maybe I'll ask in future when things have calmed down.) The dan dan noodles and chow mein were a totally different experience, and I'm kind of obsessed with both dishes. The dan dan noodles barely had any heat, which was a little strange for that dish--and again, we ordered all three dishes at a medium--but they were soooo good! This dish really showcased the noodles themselves the best. Perfect mix of chewiness and softness, and such a good flavor. The ground pork was awesome too--strong star anise taste, and a beautiful balance of sweet and savory. This was probably my favorite of the three, but the chow mein was the most surprising dish. I honestly didn't really want to order the chow mein because it seems like such a standard dish that you can get anywhere, but it knocked my socks off. I'm so glad my friend wanted to try it!! This one was the perfect medium spicy out of the three. (I'd never had spicy chow mein before, and I'm hooked now.) The dish wasn't greasy like it often is elsewhere, and we ordered it with beef, which I highly recommend. It seemed like they use the marinated beef that's also in their noodle soup and then wok fried it, which meant it was incredibly flavorful and juicy, and had a wonderful char on the outside. All three portion sizes were excellent as well. The owners were both incredibly nice, and I'll probably try to go early on a Thursday or Friday to try to skip the wait, but I'll definitely be back! read more

The service was horrible! An older gentlemen was taking our order and we only ordered the dumplings and requested no chili oil, he made a face but I let it go and just acted like he had a chip on his shoulder. We literally waited over 30 minutes for 1 order of dumplings and so I went up to check what the hold up was about. I was trying to ask how much longer since it's a long wait. He proceeded to ask me if I was number 2 (they use a numbered pager to notify you when your food it ready) I informed him I was #5 but its taking awhile, he said since I'm not #2 I have to wait. He kept talking over me while I was trying to inquire why the wait time was so long for an order of dumplings. He replied the pager will go off when the food is ready. I told him I know how the pager system works but he was giving unnecessary attitude that I walked away. As more time passed he walked around to his other waiting customers explaining that they were having issues with the dough and apologizing but completely bypassed me and my friend. When my dumplings were finally ready almost 50 min later I asked him for a second set of chopsticks, he was again short with me and try blaming the fan as to why he couldn't hear me but that's not a good excuse for poor customer service. I will never go back there again and by the looks of previous reviews regarding customer interactions it's a pattern and not a one time incident. read more
