The…read moregood things: very inexpensive, the roast pork in the pork banh mi is juicy and flavorful, and the bread is on point, a perfect baguette. So why three stars? Taste and volume! The banh mi was like 75% bread by volume -- I had to hunt for my pork to make sure it was in there. But even the veggies were less than I'd expect, and they tasted more like raw shredded carrots/daikon than pickles. There wasn't a good balance of filling to bread, nor was that beautiful contrast of fat, acid, crunch, and sweetness that IMO defines the proper banh mi. Similarly, our fresh spring rolls were solidly sized, but they were primarily filled with noodles and bean sprouts -- with no mint or basil! I have trouble understanding a spring roll with zero herbs in it. If this were the only option in the neighborhood, maybe, but with Tau Bay and Lu's right next door, this will not be my go-to.

I got my orders in within 5 minutes and received my dishes within another 5 minutes ( I felt due to it not being busy when I arrived). I took some photos of my dishes before I consumed them for my review and as I waited patiently for my to-go orders and to pay my tab. Prices were decent as well, ladies' restroom looked ordinary just like the original restroom from the previous owners. The atmosphere was busy and casual, music was jivy, parking was shared with other small businesses. I spent $59 plus tips (round up). Details: I felt that the eggrolls were a little more on the expensive end for just 4 small/medium sized eggrolls, but that's ok since it was my first time here so I just had to try an appetizer to start off with. Their eggroll sauce as light and savory just as expected with a hint of spice/kick to it. I ordered 4 eggrolls for appetizer, the Special pho with grilled pork slices, chicken lo mein and pork bbq banh mi to-go. Pho broth was sweet and savory (I had originally asked for some sugar to compliment the broth as I always do wherever I go and whenever I order pho soup but ended up not needing it at the end). If you're the type of individual that prefers sweet and savory pho broth then this is the place for you! All I ended up adding to my pho broth for some complimentary flavor was a little sriracha sauce and one small spoonful of chili in oil, and squeezed a sliced of lime along with all the other garnishes like basil, and bean sprouts I opted out the 2 slices of jalapenos. I finished my Pho but couldn't finish my 4 eggrolls (only consumed 2 out of 4). I received my to-go orders and paid and went home. I tasted the chicken lo mein and took 2 bites of my banh mi at home. The lo mein noodles were clumped together and chewy with no flavor but a hint of spice from what looks like black pepper seasoning? As for the banh mi it was good not too extraordinary but more on the saltier end for me. Would I recommend this restaurant? sure only if you're not on a budget, and willing to splurge. Would I go back to try other dishes? maybe only when it's a special occasion for me/once in a blue moon. Would I invite my friends and family to this restaurant for their first time? It depends on their taste buds and budget. I enjoy supporting new and small businesses and I will continue to do so. Until next time Pho An keep up with the tasteful flavors and great guest services!

I ordered the pho, which was simply beef and meatballs. The broth was homemade, basically the same as what a Vietnamese friend made when they had our family over. Yes, you have to adjust the broth, if you're into pho. And yes, you have to ask for the fish sauce, and the sugar is in packets. The service is impeccable. The dining room is in order, without stacks of boxes in the hallway, and clean. There's plenty of parking. The bathrooms are clean. The owners treat you with kindness, a smile, and gratitude for your business. All these things count a lot nowadays. By the way, their homemade Tiramisu is out of sight! Warning - rant and support for local business: I was sad to read all the 1 star reviews. Most of it was for the blandness of the broth, and comparisons of this place to authentic spots in Frogtown, St. Paul. A little bit of history: they were here long before Maplewood Mall food court is now filled with Asian fare; even before Pho King showed up in the food court for those who remember. Back then, Vietnam Star was the only viable Asian option in these parts. By these parts I mean around Maplewood Mall and Costco. Here's the thing, the primary clientele here are Anglos, not Asians. In fact, today for lunch I was only 1 of 2 Asians in the dining room. So my expectations are adjusted accordingly. It is not in Frogtown, even though that's technically not that far away. But when you're shopping in Maplewood, Frogtown might as well be in Wayzata. So when I'm around here, I know the food in the mall maybe more to my taste. However, sometimes I don't want to sit in a big mall full of people, watching my back, pay a lot of money for small portions, and be treated like crap on top of it. Sometimes, I just want to go to a nice place, be treated like a human being, and sit down in a booth to have a big bowl of pho. So what if I have to adjust the broth? I'm in Maplewood for crying out loud. Let's all be fair and support local businesses that are trying to make it work.
