Fantastic coffee, delicious pastries, and a comfortable space for hanging out. The service here is great and I had a really lovely conversation with the barista who made my drink. I love that they have a few options for brewing methods. I use a chemex at home, which is great, but they also use a Siphon method here. This is the only coffee shop I've been to that does this. It creates a beautifully, smooth cup of coffee through an individual percolator cup. It was really fun to watch them make it. It's quite hot, so you do need to let it cool down before drinking it. For pastries, today I got their gluten free blueberry muffin, a blackberry scone and a chocolate croissant. The gluten free muffin was among the best I've had. The blackberry scone was an absolutely standout and lived up to the hype of other reviews. The chocolate croissant had a great texture and wasn't too sweet! I love Noble Coffee!

I love Re Mix in the summer time because they open the entire wall of windows to lead outdoors to their gorgeous plant-filled patio! It is amazing for getting a summer breeze while working on your laptop. Re Mix is very popular among remote workers and students to hunker down and work all day. They have amazing ambiance with classic coffee house music, plenty of outlets, and comfy seating. Re Mix is one of the only places in Ashland where you can comfortably work outside under shade. The baristas are very friendly and if you go there enough, they will remember you and ask about your life. During the school year, the shop does get overrun by college students being so close to campus. If you want to work there, I suggest arriving early to get a spot. They have a lot of free parking behind the building so you don't have to park on the street! Much like Mix, I think Re Mix has one of the best chai lattes in town. It is the perfect blend of sweet and spicy!

The Turkish eggs were the perfect savory complement to the French toast, and even the side salad with its incredible yogurt sauce was memorable. The chai was equally outstanding, and you can tell every ingredient is chosen with care. As parents of a wonderfully wild toddler, we especially appreciated how welcoming the staff was. The patio gave her room to explore, they happily served simple sides for her, and she absolutely loved the sourdough toast. Meeting the owner, Razia, made the experience even more special. She was so warm and welcoming, and we had a wonderful conversation that made us feel right at home. We loved it so much we bought a loaf of sourdough to take home--definitely preorder one, because they sell out early. We'll be back every time we're in Ashland.

Sitting outside with a slight breeze allowed me to have a warm delicious sweet treat. I ordered the bacon omelette which was light and airy stuffed inside was a combination of crispy bacon, grilled onion and cheese. Such a yummy and delicious combination. You were able to get hash browns, home fries, pancakes, fruit and there were a couple more options which I can remember. I decided on the pancake being told they were not that big. Well my not that big and our waitresses not the big are not the same. The pancakes were great but I was not a fan of the lemon butter. I did not try the waffle, French toast or eggs Benedict but let's just say no one was talking once the food came to the table. Portion sizes are generous many of us had leftovers. The ambiance alone is great for spending time with your bookstore purchases. The service was friendly and quick. It was just the one guy when we were there, making coffees and running into the kitchen to make food. But it didn't take long to get our order. The kids had a steamer and a hot cocoa. They were a little warm for immediate drinking so maybe specify if you want your beverage less than normal hot for kids. The cocoa also had a bit of a cinnamon flavor to it. I thought it was delicious, but if you have a purist cocoa drinker in your party, again, ask! The adults drank drip coffee. It was tasty too! If you are staying in, you will get a ceramic mug, so if you want a paper cup let your barista know. The big win for me was the menu of gluten free pastries! They had regular glutinous things like burritos and quiche that looked tasty but the gluten free!!!! They partner with a bakery in town (sisters sans gluten) to have a variety of offerings. I had a poppyseed muffin, but they had other breads and muffins that all looked good. The offerings change, but I was so excited to see gf options at all. Highly recommend this spot! Also!!!
