Located on the Waldorf Astoria -1 floor with garden views, Manager Cas Kratz and team warm in a professional manner befitting the address, guests are led from the hotel doors to an elegant room that is well-spaced with subdued lighting and a pop of color from the large floral arrangement at the center. Embracing Dutch heritage with an eye abroad, summer yielding most of the menu from nearby, the 18h00 seating finds Spectrum quiet as diners are presented an extensive Wine list from which Dry Riesling pairs well to opening bites such as a dried Yolk "cup" supporting Potatoes and Roe. Six proper courses flanked by Mignardises and Canapes, plus a bottle of Tulip Syrup to take home, fried Fish proceeds delicate Mochi with Crab topped in Caviar and the first of two Breads plus two styles of Butter. Served at a guest-appropriate pace, no long lulls with staff checking in regularly, Mushrooms take center stage in an otherwise vegetal composition brightened by Cherries followed by Strawberry-glazed Skate with a touch of heat. Not afraid to venture abroad for inspiration, Mullet Fish alongside Chanterelles and Sea Grapes darting across the tongue with tangy Tamarillo, Schutte's Langoustine then builds from tail to head with Chipotles and Chocolate to thrilling effect. Captivated by the Caramelized Goat Butter, enough so that a loaf of Sourdough disappeared quickly, Chef's time in Hong Kong undoubtedly inspired crispy-skin Duck intended to be eaten bite and sip with an accompanying cup of Consomme. Ended our Amsterdam trip with a dining experience at the two-star Michelin restaurant Spectrum, located inside the gorgeous hotel. Their hospitality and attention to detail were definitely top-notch in the industry. We ordered both the regular and vegetarian tasting menus without any hesitation to maximize the experience. We also got the wine pairing, and they have one glass for each individual dish, so we drank a lot... The entire experience was longer than I expected, taking over 4.5 hours. We felt it was a little too long, but it's probably part of European culture, allowing us to fully enjoy it without rush. Each dish was beautifully presented and well-paired with the wine. We could tell the chef and the team put a lot of effort into designing the courses, especially the last course, house-made chocolate. The flavors were reflective of some other courses from the menu. Incredible! My top favorites of the night were: Sorrel: basil, rhubarb, fennel, wheat grass. Featured on the cover photo, it was the first time this dish debuted on the menu. We absolutely loved its unique play on ingredients and refreshing flavor as part of the dessert course. Duck: eggplant, tulip bulb pomegranate, black olive. One of their signature dishes on the menu, and definitely worth the popularity. The duck was tender and well-roasted. Beetroot: shallot, kohlrabi, magnolia, avocado. Personally not a fan of beets, but this one completely changed my opinion. The beet was cooked on charcoal to add a smoky flavor and reduce its earthiness. Basque cheesecake: house honey, black truffle. They did table side service for cutting the cake and explaining the baking process behind it. A two Michelin star restaurant located in the basement of the gorgeous Waldorf with a garden view so feels private & intimate without being stuffy. Has the classic white tablecloth charm but the cooking is more contemporary and the team is great at welcoming you. As expected from hotel fine dining, service is exceptional and a fantastic experience overall! Dinner starts with a creamy white asparagus dish followed by two versions of Dutch shrimp. Kinda salty but paired well with their sig cocktails First course is a crab dish with a bergamot meringue topped with freeze dried foie gras. Super interesting textures, the floral soft crunch & metalic icy powder contrasts well with the mushier (?) crab and eggplant base. Then my fav part of dining - the bread!! First round is a toasted brioche that's simply a buttery delight. Another interpretation of white asparagus. Lighter this time with strawberry and tonaka beans with a carmelized parmesean globe. I rly enjoyed this but thought the fruit to be too mushy? It felt a bit off in contrast to the asparagus crunch so maybe grapes/apples would have been better & the globe was kinda thick so it overpowered the dish. Rly sharp shards too. But this was one of my fav from the night! Another round of bread - two loaves of country bread with Jersey cow and carmelized goat butter (so stinking good). Crunchy on the outside & soft insides. I had to stop myself from finishing the whole loaf and you should too bc the dinner is just starting. Here we have a gorgeous beet marinated scallops on top of eel & truffle cream. Kinda confusing together but loved the scallops by itself, fresh and slightly sweet. The sepia was another fav! Super tender and the peanut sauce & goat cheese combo was very interesting! Langoustine is quite rich and covered in a chipotle/kombu marinade that's rly strong in flavor. The pickly sourness from the lions mane mushroom rly helped balance it out. We were STUFFED by the time we got to the duck. That being said, done very well. Peking style so has the crispy skin & tender meat. It's served alongside a rich herbal broth with some kind of foie gras ball that popped. Desserts start with a pumpkin creme wrapped in carrots. I hate carrots so I wasn't a fan but the next green sorrel dish?!!! This was THE best dish of the night!! Rhubarb wheels with white chocolate mousse, fennel, and wheat grass juice. It's simple yet complex and just so SO refreshing. Such a smart dish. Bravo!!l Gorgeous bonbons for the finale. They are created using the ingredients from different dishes so you can try guessing which one it is! Cute & fun ending to our 4hr dinner. This place is an absolute must. Food was absolutely delicious from start to finish and had plenty of artistry and creativity to keep one wowed throughout the meal. Wine pairing was worth it as well, although I would highly recommend getting a drink at the start as the wine does not come start for quite a while as you get through the ab and early smaller bites. Noel, Bruno and other wait staff had impeccable and friendly service. Being of Asian descent living in Southern California I did recognize and appreciate Chef Sidney's incorporation of Asian and Mexican influences with European ingredients. My husband and I were celebrating our 5 year wedding anniversary and what better way then to treat ourselves to some fine dining. I'm still processing the entire experience and wavered between enjoying it and it being a let down. Mediocre doesn't describe it at all, so a 4 it is. The space...I think there's potential. We were seated along the wall by the window, but the windows were behind us, instead of beautiful tulips, we saw a blank gray wall. I didn't understand why the tables weren't in front of the window. It made it feel like we were in a basement, which we kinda were... The food, I loved that the chef came to the table and greeted us. He explained how his dishes shows us concept and flavor profiles. There were some incredible bites of food, the conch with caviar, cockles, and foie gras were the standouts. They also had a surprise of chocolates that were reminiscent of the flavors in some of the dishes. Thinking back, the food delivered and then some. Service was really, really, outstanding, but intense. I felt like I was being watched like a hawk, which was suppose to be in a good way, I think. They were always at the ready to assist. I felt bad every time I needed to step away to the restroom, because I'd try to sneak back but they were at the ready to pull my chair and lay my napkin. This was over a 3 hour meal, which we asked them to pick up the pace, it still was so slow, and so there were many, many bathroom breaks. It's tough to write this as I can't blame them for the service experience in how I felt about it. The food was still excellent though. Staff makes every effort to make your dining experience good and memorable. Each dish has an explanation of its inception and what specific wine pairs the best with it. Quite informative! We came here for dinner while evening while visiting Amsterdam. The restaurant is set in the beautiful Waldorf Astoria hotel. Definitely go early and grab a drink in their bar downstairs - there is a gorgeous garden that you can enjoy it in. The meal was amazing and whimsical- the service, the food, and the wine pairing (which we shared and it was only 100 euros or so, which we thought was an amazing deal, and it was a good thing we did share it because it was SO much wine even halved). A couple of my favorite dishes were the foie gras and tuna and the caviar in the shell. A hiccup happened with our main course, when the sommelier brought our wine and poured it and started explaining how it went well with the lamb, but we had both ordered the duck. However, what happened next was amazing - they brought us the lamb and said that we could enjoy it while they prepared the duck, so not only did we get an extra wine, but we got the lamb, and then got to enjoy the wine that went with the duck + the duck after, which did make me very full. The desserts were all also very fun. Definitely one of the better Michelin star experiences we have had. read more

If you like innovative, creative and fun food to eat- don't pass this restaurant up. This restaurant sits inside of the sumptuous Waldorf Astoria hotel. The restaurant is located downstairs adjacent to the spa. The dining room was very fancy, what I would imagine a high class jewelry store would look like minus the cases. Even though the restaurant is a fine dining destination, with two Michelin stars and of course, the white table cloths... I never thought it was pretentious. All the staff I had interacted with was very hospitable and welcoming. When they took away my dishes, I noticed a fun little touch to the service. The staff only where's one black glove for the hand they take away your food with. I've never seen something like that before and I think it's an homage to the restaurant's unorthodox approach that somehow works. The food is brilliant! Modernist food is my favorite. The cooks here know how to play with flavor and texture at a master level. Everything tasted so fresh and was super fun to eat. Everything was straightforward and simple to eat albeit, sometimes pushing the envelope towards weird. My favorite part was absolutely the presentation. Everything I ate was so beautiful to look at. I will try to visit this restaurant every time I'm in Amsterdam now. It was so wonderful and I'm so honored I was able to try it. read more

Quite honestly the best dining experience I've ever had. The food was delicious but the service was exceptional. Everyone was kind, helpful and I had great conversations with Sascha, one of the owners. I even got to meet Sidney who was kind enough to step out from the kitchen and present one of his dishes to me. Truly a wonderful experience--I can't stop thinking about it & had to write a Yelp review immediately after returning home. I kept saying "Thank you" so many times to everyone that came within a 5-foot radius of my table--I don't think I've ever had service this outstanding before. My favorite dishes had to be: 1) Conch: cauliflower & kaffir custard + caviar served in a conch shell 2) Langoustine: verbena, cockle, razor clam and monks cress 3) Lobster: veal liver, blackcurrant, oyster, mushroom, lemon geranium (I opted for no blue cheese, which this dish comes with) 4) Sepia: coffee, winkles, cardamom, mango & coriander Overall, the entire menu (11 courses) was amazing. I was stuffed! I was there on my own to celebrate my birthday and both Sascha and Sidney signed a birthday card for me. Thank you both so much for making my visit to Amsterdam (and Spectrum) a special one! I will definitely be back one day. read more

We were really excited to visit this restaurant. The phenomenal service started at the entrance of the hotel itself. It was gracious and attentive throughout. Could not have asked for more. We all had the tasting menu. While I won't go into the specific items, here's what I can say about the food experience. The quality of the food was exceptional. Obviously! However, the preparation of several of the items was surprisingly lacking. Yes, the dishes were elaborate and the ingredients top notch, however, some of the dishes lacked salt, or sweetness in some cases. What surprised us is that some of the dishes were almost harsh - in fact so sour or tangy that we involuntarily scrunched up our faces with the level of harshness of the food. One wonders what distinguishes a multi-star Michelin restaurant from a Top 50 one..... IMO it's not so much the level of service or even the presentation of the food (they are all high), but rather the maintenance of a high level of taste appeal and preparation consistancy of the food itself. Sadly, this is where Spectrum didn't deliver on several of the dishes - inconsistent flavor appeal. The most common flavor served was "sour/tangy"..... while citrus, sweet and even some spice were flavors that were not much used. All that said, the overall experience was a good one. This place is an experience to remember. The dishes are creative, playful, instagram-ready and provide a complex array of tastes with every bite. The complete tasting menu is paced over 3-4 hours but this is the first place that has ever asked if it was going to quickly or slowly, so they could time the mess just right. The service is headed by the charming and Uber-pleasant Sascha Speckemeier. He works with a young and inspiring team that seamlessly move between the tables with amazing precision. They had the right meals at the right time at the right table and all spoke flawlessly in the right language according to the guests at the table. When the Som came by to grab our empty glasses and pour the next wine, one of the wait staff would quietly and inconspicuously grab it from behind his back while walking by as if it were a well orchestrated magic trick. I was impressed to say the least. There were a lot of favorites but the 'snail on a racetrack' will always stand out. Hilarious. So many more to talk about....but why spoil the surprise? We visited them about 1 year ago, the year Chef Schutte was awarded chef of the year from Gault & Millau. What an experience!!! To date this is unquestionably the best meal I have had and the entire experience is what I use to measure other restaurants of this caliber. Eating in the Waldorf Astoria Amsterdam is pretty special and the setting is beautiful and breathtaking. I have not met a staff more attentive, professional and engaged with their patrons - you could tell that they that tremendous pride in making the time you spend with them special. The staff was so incredibly available, would stay and discuss food or wine when you were interested and I always appreciate a willingness to make jokes or share a laugh. This is only where it starts because the food was pure excellence - there are no other words really. It was beautiful, balanced in flavor, thoughtful and at times really playful in experience - thinking of the snail served in it's shell as if running off the plate, a plate made entirely of prawn heads and the closing chocolates filled with a flavor from the dishes you just ate - essentially finishing the meal by playing a game of guess the dish. Course after course was presented and there was not even a hint, not even a detail that I would consider changing. While I wish I could've tried his famous Mackerel dish (was not on the menu when we dined) we truly got to experience a great menu and our dinner was certainly nothing short of 3 star worthy by our estimation. For those not familiar with the idea of Michelin Stars, Michelin is a European restaurant rating agency whose recognition is considered to be extremely prestigious. Only a tiny handful of restaurants qualify for a star and then only a tiny subset of those qualify for two. As her majesty and I had never been to a Michelin Star restaurant and we were in a city that had a restaurant with two of them, we thought we had to give it a try. Our expectations were high and we were not disappointed. There simply was nothing about this restaurant that was not extraordinary. Service, ambiance, presentation and food quality were all a cut above anything I have ever experienced before. I have actually never had food that had 2 tastes to it: The taste you get when you put it in your mouth and then the taste you get about 5 seconds later when all of the ingredients mix together. It's almost like an electrical jolt when that second taste hits. Truly amazing. Add to that an extraordinary sommelier who selected some of the best wines we have ever had (amazingly enough, probably the best of the best was a Riesling from Washington state) and the whole experience was fantastic. In my experience, we have nothing like this level of cuisine in the United States and if you have the opportunity and the pocketbook, this type of meal should absolutely be a bucket list item. I understand that it is possible to earn a third Michelin Star, but that must be the nectar of the gods as I truly cannot imagine how dining can be any better. read more

First time eating at a Michelin-starred restaurant - which was on my bucket list. The service, technique, presentation, preparation ... all outstanding! We stayed in the Waldorf Astoria and just had to eat here on our last night in Amsterdam. We ordered the 7-course menu with wine pairings. It felt more like 35 courses because they brought stuff for us to taste even before we looked at the menu, then kept bringing these amazing chocolates well after the dessert and cheese courses. I can't emphasize enough that the level of service was outstanding. Simply marvelous, friendly and elegant without being pretentious. I have to admit, that I wasn't sure what everything was that I put into my mouth, but it sure tasted interesting and delicious. The only caveat ... and this is a stretch ... is that the flavors are very northern European, which I'm not too familiar with. So is the best *tasting* food I've had... no. But I'm glad we spent the money for this incredible epicurean experience. Worth it. read more

This was the first Michelin star restaurant I have ever had the opportunity to experience. With that being said, I have been fortunate enough to dine at some very nice restaurants throughout my life, however, this dinner was something completely different. I'll start with the aspect of the evening that was engraved into my mind the most. The service, it was impeccable, like watching something out of a movie. Half the fun of the dinner was just watching the waiters perform their art. It was truly a level of service that I hope everybody gets to experience once in their life. Next, the food, the best way I can articulate my experience with their dishes would be that a lot of the flavors I tasted were completely new too me. I tasted flavors I didn't even knew existed. Some of these flavors I didn't necessarily like, but they were different and bold. Thus, in my personal opinion if you are looking for a restaurant with traditional taste I would not recommend this place. Lastly, the price tag. The overall dinner does come out to be fairly expensive. It was roughly $250-300 dollars per person. This included the meal, a decently priced bottle of wine, and a tip. Thus if you are looking for a budget meal, this is not the place to visit. To sum it up, this place embodies everything I imagined a Michelin star restaurant to feel, look, and taste like. read more

We ate here for our aniversary. Simply sublime! We had six courses and each dish was intense and daring, yet not overwhelming (thus leaving some room for the next course). Dining here is like going to a culinary rollercoaster with spectacular dessert and cocktail amuses as a fanatastic climax. I was also impressed with the amical and down to earth attitude of the staff which made us feel very much at home. Dined here last Friday night and my god what an experience. Our reservation was at 8:30 and we arrive about 45 minutes early and they sat us right away with delight! The food alone..... mind blowing. Full of so much creativity and passion. My boyfriend and I did both tasting menus, his the traditional and mine was the vegetarian. Both were phenomenal and packed with great flavors, textures, and presented beautifully. The STAFF. The staff made our experience. The Maître Dee, Sasha I believe his name was, was incredible! He came over and conversed with us many times, gave us tips and insights on the beautiful city, and even delivered a personalized birthday and anniversary card for us which was so heartwarming. The staff was easy-going personality wise and was able to make a very high end Michelin starred dinner, comfortable and even more enjoyable. What a fabulous experience from the beginning until the end! I had the pleasure of dining here about two weeks ago with my son and daughter when I was in Amsterdam and I'm still thinking about it today. From the moment our Uber pulled up to the hotel (a ringing endorsement for the Waldorf Astoria Amsterdam must be given as well) we was treated to top class service, from the doorman opening the car door and then having a whole army of staff greeting us and escorting us to the restaurant. The team at Librije's, led by Sascha, was absolutely amazing. Every single person who came to our table was so professional but incredibly warm at the same time and went out of their way to make the evening special for us. The food presentation is what you would expect for this level of restaurant. The dishes were interesting and unique, but my favorite had to be the wine pairing. Every wine selected was delicious and complemented the food perfectly. When I think about it, the experience was presented as a story and the journey of the meal was tied together in the end by chocolate pieces that represented the flavors of each dish we ate. There's also a surprise dish in there that was playfully teased throughout the meal, but you just don't realize it until you see it. All in all, this definitely ranked around the top of all of my Michelin starred restaurant experiences (mainly due to the staff) and I would absolutely dine here again the next time I'm in Amsterdam. read more
