Absolutely stunning food, an elite dining experience. Our server was incredibly attentive and was able to help guide our dining experience to fit the time we had allotted (about 2.5 hours) as we did unfortunately have another reservation after dinner. Food: Great. The menu is veg forward with local ingredients. Endless sourdough bread to clean the palate and have something to munch on between courses. All the dishes were plated well. Flavors, textures, colors are varying from dish to dish, so the menu didn't seem monotonous. Service: Great. Each dish was explained when brought to the table. Prompt cleanup after we finished each dish. Good pacing between plates. About 2hrs for the dinner start to finish. Ambiance/Vibe: Great. Dim lit and quiet. Ideal for dinner for any occasion with friends, family, and couples. I had a table near the kitchen and expediting station, so could see all the action. Tables are spread out so it didn't feel to cramped and relatively private. Cost/Value: Excellent. About $50 per person for 5 course dinner is great value for this quality of food and service. Absolutely blown away by my experience here. On a trip last month to Amsterdam, my travel buddy told me he had heard from multiple people this spot was a must, so I secured a reservation immediately. This is chef's choice prix fixe menu done right. We opted for the 5-course menu that they serve only on weekends. The evening started with a big problem: my jetlagged self overslept a "nap" and woke up right at our reservation time...RUSHED up to get ready, calling the restaurant in a panic. Here in the U.S. I feel we would have had to kiss our reservation goodbye. However, the man who answered was so kind: chuckled, said no problem, and squeezed us in an hour later than our original time. I tremendously appreciated that consideration and gesture. That same energy was what we noticed immediately upon our arrival, and extended throughout our entire experience. A relaxed, non-stuffy setting...warm, friendly in every aspect. As for the food: every part of our meal was simply fantastic. Perfection. We opted for the wine pairings that went so well with our meal, and each dish was truly incredible. I really started getting full by the end of the meal. Throughout it, I saw produce that was so fresh and beautiful, I'd find myself staring in awe at the simplest things: at the white asparagus. At the pure redness of the absolutely perfect strawberries. The list goes on... Our server was so, so wonderful...the entire staff in fact. What's best, I've never in my life had such an enjoyable experience where they all truly made us feel welcomed...not once were we rushed. Absolutely one of the most delicious restaurants! We were lucky enough to snag a table at a highly desirable restaurant with lots of reservation envy, so really glad we could squeeze one in. We did the chef's surprise tasting menu with wine pairings and we were floored by the entire experience. Each course was its own story giving us uniqueness and complexity from plate to plate. Absolutely a dining dream. Scallops were on point and the horseradish was a fabulous touch. The beet salad was a refreshing cleanser between courses. The venison was perfection, not gamey at all. Our server was a star as well, actually that's what her name translated to and she lived up to that. Loved how friendly and welcoming she was throughout the meal. Creative and delicious! Choux is a restaurant I would definitely eat at again when I am in Amsterdam. My husband and I opted to take a taxi from our hotel to Choux. As the taxi wound its way past the train station onto an industrial street that appeared somewhat abandoned, suddenly there was Choux. Don't let the location fool you--this restaurant was hopping! You will definitely need a reservation. Walking into Choux is like walking into a different world from the outside environs. The decor is modern, but there is also a rustic hint as various ingredients are displayed in pickling jars on shelves around the seating area. Choux offers a tasting menu--they have fresh ingredients and are making certain dishes that evening. Your choice is the number of courses you would like to enjoy. I made the mistake of not writing down the courses we had, but each one was beautiful and delicious. One caveat--pigeon was the protein for the meat course the evening we dined at Choux. We were willing to try it, but it turns out my husband and I don't like pigeon. I cannot blame the restaurant for something that is a matter of personal taste and, honestly, we didn't mind not eating most of one of the courses because the overall experience and meal was so phenomenal. The restaurant has some wines open on any given night, enabling you to enjoy a glass if a bottle is too much. My husband and I opted to try a couple of different glasses instead of ordering a bottle, which added to the fun of the evening. We have dined at a number of tasting menu restaurants in Amsterdam and in other countries. Choux was one of the best from start to finish. It was understated excellence from start to finish. Words don't do justice to the experience. We were delighted to not have to make any decisions and to just spend time together. But as our attentive but non-intrusive server brought plate after plate, and gently suggested the most amazing and unknown (to us) wine pairings, at some moment we both realized that we were having the best meal of our lives (and we've been around a while). It was an incredible feeling. Transcendent is the only word that comes close to capturing how good the meal was from start to finish. Pictures don't even help. Highly suggested for those visiting Amsterdam. We decided to try Choux on a Saturday night (packed house - but spaced out tables and the acoustics made it seem quieter). We were seated promptly and asked if we'd like to start with drinks. The menu here is odd, but definitely in a good way. Diners are given the main ingredients to each dish, but that's all. So you're given a glimpse of what you're getting into but not the whole picture. Basically if you're a picky eater or a bit skiddish, Choux isn't the place for you. We chose the 5 course wine paired menu (because why not?), which mixes both vegetarian and meat dishes. My least favourite dish was the squid. The texture was a little too firm and the flavours weren't incredible. My most favourite dish was the dessert. Holy moly that was the best dessert I've had in ages. Pistachio ice cream and blood orange with some sort of granola-y mixture. No idea what was in it but I was delighted. This was everything every reviewer said about it and more! An amazing and unique dining experience! This place is located on a quiet street behind the Double Tree Hilton and Starbucks. If you are walking there, you may question for a second that you are going the wrong way as it is in an out of the way spot. We came on a Wednesday night at 9 p.m. and we had a reservation. It was very busy! We chose to do the 7 course meal and it was a perfect serving size for each person and the courses were nicely spaced. It will be difficult to name every ingredient as there were so many and sometimes it was hard to understand exactly what the wait staff said in describing it due to the language difference. We really loved everything we had and we just did vegetarian dishes and some fish. If you are an adventurous eater and love a delicious, beautifully plated meal with lots of vegetarian choices, you will LOVE this place! What a wonderful experience and I feel they are doing something truly unique and special here. We visited here about 1 year ago and I am so glad we decided to give them a try. I want badly to give 4.5 stars, but can't go for the full 5 this time - despite the fact that it was a real gem in my estimation. The mantra seems to be of fresh, vibrant and vegetale focused. The wines are mostly natural and have been thoughtfully paired, although some felt like misses. The food was beautiful and mostly ever dish was superbly created with ingredients that were regional and seasonal. The service was pleasant, laid back but very attentive. My wife has a real seafood allergy and while they accidentally (I hope) placed fish eggs on one of her dishes they were incredible accommodating making her a new dish before we could take our 2nd sip of wine. If you are interested in vegetale focused cuisine paired interestingly with natural wines at an incredible fair price point (the QPR on this place is through the roof) then this is a must visit in Amsterdam. Tried the 5-course tasting menu with a group of 7 people. Fantastic from start to finish with a focus on very seasonal, vegetable-forward ingredients and flavors - think ice cream made with fresh dill oil and a rhubarb semolina dessert. Plates are beautiful and small but satisfying. If you get really hungry, the sliced bread they serve with butter is quite good! My only minor nitpick would be that the time between courses was a bit long at times (took approx 2 hrs and 15 min from start to finish), but that left more time for conversation. read more

Choux is really a sign of Amsterdam's changing food scene and the focus on seasonal and innovative food. The location is sort of on the wrong side of the central station but still very central but nothing one would just stroll by. That is also not recommended either as it is very popular so reservations are really recommended. We had reservations and showed up on time but our table was not ready yet. Very surprising though we were offered a free glass of wine each and then we also received some complimentary appetizers. Really great service by any standard and even more surprising in the Netherlands where service usually doesn't impress. Service remained excellent throughout the evening so really great staff. The concept here is focus on seasonal and fresh dishes. The menu changes frequently and options include a chefs menu or selecting dishes yourself. Overall good value for money and matching wines can be had at €7 a glass. We were genuinely impressed with the wines, focus is on nature wines but they also ensure they serve good wines (as compared to just interesting wines). Food was interesting and innovative and some dishes were truly excellent while most very good. We opted for trying all dishes despite knowing we are not usually fans of for example squid so cannot really fault the restaurant that we didn't like the squid. Overall 4 dishes each was more than enough food for us and we showed up hungry. That said I would still mainly recommend the place for people who are interested in trying some new things. I've been wanting to eat here since it opened, but considering I only visit every other year during the holidays-- it makes it difficult (they close for a holiday break around Dec 22-Jan 8 for their employees.) We finally were able to eat here because we managed to get a reservation! Absolutely delicious and vegetable forward. Also extremely accommodating to allergies and food aversions. This is truly farm to table. The way it works is that they have a menu with four main ingredients of each dish listed. Starting from left to right, the plates get progressively bigger. You can choose between a 3 or 4 course meal, or you can get a tasting menu which is either 5 or 7 courses. My partner and I chose the 5 course menu and we also chose to pair some juice (since we limit our alcohol-- though they have a fairly extensive wine list!) which they make in house! The first two dishes were fairly veggie focused. The squid dish they have on the menu at the moment was the best thing I had all night. They also served a wild hare for the main and they warn customers that any wild game may have traces of buckshot, since they are freshly hunted. This is... very transparent and hallmark of excellent service. The atmosphere is very unpretentious for the level of cuisine and service that this restaurant puts out. We were extremely pleased with everything we received and we hope to have another meal here again. read more

Our first day in Amsterdam we decided to eat here. We ordered the 4 course meal. You can either pick your meals or you can have the chef pick it for you. My girlfriend decided to have the surprise and I decided to pick mine because I preferred dishes with seafood. The meal was really good and the presentation was awesome. we had Michael as our waiter and he was cool. He gave us a list of places to eat in Amsterdam after our meal. 4 course meal for 2 people with drinks came out to about 120 euros which was not bad at all. I had the 7 course meal and my preference was set to anything but meat (so fish is okay). The entire experience lasted about 3 hours with maybe a 10 to 15 minute down time between each meal. The presentation of each meal was uniquely complex and elaborate. The dishes were light and decent with some being really good. My disappointment comes in that most of the dishes were too light for my liking. I was expecting that each would be packed full of flavor that would explode in my mouth but sadly, I found that most were more subtle and refreshing than anything. My boyfriend really enjoyed his meals and all of his was vegetarian. Regardless, I think if you want to have an affordable multi-meal dinner that caters to vegetarians as well, this is still a place to try. read more

Choux was our last dinner in Amsterdam over the long weekend, but it was one that my wife was quite excited about. You might be wondering what part of town it is in when you are wandering behind the train tracks coming out of Centraal Station, but once you step inside, you're in (what feels like) an old industrial space that has been retrofitted as a vibrant restaurant that is nicely done-up but still feels pretty casual. We had our choice of seats despite having made a reservation (a nice option), and we went for the table that was underneath the staircase to (what looked like) an event space upstairs that was not being used. The lighting, though, ended up giving the table some shadows, adding a bit of a quieter feel to what was a lively ambiance. The explanations of the food from the servers was quite good, and our main waiter enjoyed chatting us up about our experiences in Amsterdam, as well as the food in NYC - a pleasant way to pass the time in between courses. The food here, it should be said, is not going to be for everyone. Places like Contra and Piora in NYC remind me a lot of Choux's menu, where untraditional ingredients are used in courses where you may not think they belong. Here, though, Choux is able to integrate a lengthy number of ingredients (despite the EMP-esque menu that lists a few ingredients, without a clue as to what your dish actually is) into dishes that harmonize so well with each other - and without feeling crowded, which tends to be the cardinal sin of dishes that feel jam-packed with every last possible herb or sauce. You can choose from 3 or 4-course meals, along with the 'Demi-Choux' and the 'Choux' courses. We went with the full enchilada (the Choux), which was basically a 7-course dinner with almost every dinner item on the menu served. The amuse bouche was more traditional - a butter bean fried tempura-style and served with a lightly-infused lavender sauce (light but delicious and floral), alongside cream of celeriac with a tapioca chip, radish and seaweed, where the texture of the cream was such it tasted like - and felt like - you were eating a vegetarian version of an oyster...very interesting and tasty. But the adventure starts after that...kohlrabi served with kohlrabi ice cream(!) would not be how you expect to start off dinner, but the frozen/chilled vegetable plate, served with white strawberries (very slightly sweet) and kefir shaved to resemble feta was a very refreshing start to the meal. From there, thin strands of squid served with oyster and rhubarb-infused vinaigrette, along with chards and golden beets, was another light, refreshing dish (although there could have been more squid, IMO). The next 3 courses would be more along the lines of mains, and when the weakest one was a tastefully-marinated veal ribeye with a dusting of clam powder and served in a rich au jus - you know you're eating a delicious meal. The best was definitely the lightly seared trout, which was served in a miso-infused beurre blanc sauce dotted with a generous serving of trout roe and with a whole egg yolk that gave the sauce even more richness and depth. Each bite was an umami bomb to be savored. The spelt risotto was perhaps a bit less absorbent than your regular arborio rice, but sitting in a pool of parsley-colored, garlic-infused veloute and topped with rehydrated morels, it was a perfect earthy interlude between the fish and the meat course. Unsurprisingly, dessert veered back towards the experimental - seeing string bean ice cream topped with dandelion petals and various greens atop a bed of goat cheese was an interesting beginning to the end of the meal, but despite being very much like the kohlrabi course at the start, this worked due to the nuttiness from the macadamia nuts and a lightly sweet piece of veggie-infused cake. The last course was a color bomb to match the flavors - a vibrant scoop of blood orange sorbet served with pistacio, sliced carrots, carrot poppy cake and poppy-dotted chips. It was definitely a dessert course, but the mixture the poppy with the acidity of the orange, along with the pistachio - it all worked well together despite being flavors you would probably never think to have in one place. If you are not adventurous when it comes to food, Choux is not the place for you. But the execution of what are some of the most imaginative plates I have ever eaten here is incredibly well-done. Despite the cool, rainy weather at this time of the year, this meal really made you feel like you were enjoying the bounty of the year's first harvest. Phenomenally executed and definitely the most memorable meal of our time here during our visit to Amsterdam - and highly, highly recommended. This reasturant is absolutely amazing! During our stay in Amsterdam we went back twice, both visits the staff was so accommodating of our group. They took the time to understand our dietary restrictions, and really meet all of our needs during our dining experience. I couldn't have asked for a better time. Choux is definitely one of my favorite place in the city. It's not cheap, but great value for money. Choux is a seasonal restaurant, so they chance their menu quite often which is great fun if you're a foodie. They use seasonal ingredients which makes everything taste better. The food is creative and different, always interesting food combination, interesting component and ways of preparing food. I'm vegatarian and we took the chef's menu, which a 7 course surprise menu, and they have adjusted every course for me, and it felt like every single cause was being thought even though it wasn't the original menu. I do have to say that for a 7 course menu the the dishes were a bit too big for us, but hey, can't complain about too much food... The 7 course menu cost 55 euro, but you can also choose less courses and pay less. Defiantly recommended for good food lovers, creative, delicious, highly recommended! read more

Choux is a modern and sleek restaurant overlooking the water. The service was attentive, capable and friendly. Choux tends to focus on vegetables with a bit of animal protein and the courses were all beautifully presented. Examples included peas with toasted pumpkin seeds and kefir, oysters and clams wrapped in turnip slices, parsley ice cream, olive and sheep cheese, asparagus torte with morels and smoked egg yolk, chard and potato puree, white and green asparagus with greens, wonderful squid with green pea puree and purslane, and excellent roasted pigeon with beets. All the courses seemed a bit sweet, beyond what might be expected from the ingredients alone, but all were inventive with unexpected combinations. The wine pairings were generally good except for the orange wine (not made from, but a style using white wine grapes). Although I've enjoyed other orange wines, this one from Georgia was not the best example of an interesting genre. read more
