Bougainville is the rare fine-dining room that makes you feel simultaneously pampered and curious, as if you had wandered into a jewel box where every drawer hides another small revelation. We loved it so much that we went two nights in a row, cost be damned, and the team could not have been kinder about it. They greeted us by name on night two, teased us for being gluttons in the friendliest way, and then treated us less like guests and more like friends. Service was impeccable and genuinely playful, and the bread service was mind-blowingly good, the sort of robust, deeply flavored loaf one expects from the north of Europe. The kitchen works in precise, intelligible layers. That fish course in my photos is a good example. It arrived first as a pristine, pearly fillet of turbot, resting on a dill-cucumber crème. Then a second server returned to crown it with a glassy sea-green "chip" that ate like sea lettuce, followed by a modest quenelle of caviar and finally a warm ring of sauce that read like a beurre blanc punctuated with herb oil. Nothing felt showy for its own sake. Each addition clarified the dish's argument, moving from delicate sweetness to briny snap to round, buttery depth. Other plates were equally assured. The opening bite stacked raw tuna with bright citrus gel and a neat cap of caviar on a beet-red base, a small, cool fireworks show. There was lobster lounging in a cappuccino of shellfish foam that smelled like low tide in the best possible way. A spring lamb plate paired a rosy medallion with morels and a glossy, concentrated jus, plus little textural asides that made you pause between bites. On the sweet end, a Mexican-coin of mezcal-laced chocolate sat in a pool of raspberry, the smokiness and the tart fruit punching at the same rhythm, which I adored, the sort of thing that should not work but absolutely did. There was also a very noma-ish dessert built around mushroom ice cream over a dark, crunchy crumble with herbal notes on top. It sounded eccentric and tasted inevitable. Part of the fun here is how often they finish at the table. You can see in my photos a strawberry composition that arrived fragrant and already beautiful, and then two servers layered on chilled elements and an aromatic liquid that sent a cool fog drifting over the fruit. That theatricality is never empty. It helps you register the components and remember the dish as a sequence rather than a blur. Because we doubled up, the team very thoughtfully re-mapped the tasting so that night two had almost no overlap with night one. It felt like peeking into a live sketchbook, the same sensibility expressed across new subjects. We skipped the wine and brought our palates in primed by the impossibly good cocktails from Twenty Seven next door, and Bougainville's menu met that standard without breaking a sweat. Two nights, zero fatigue, and the rare sense that a restaurant knows exactly what it wants to say. Elegant, modern, deeply delicious. If Amsterdam has a table that better balances surprise with coherence, I have not found it. Between the room, the view, the bread, the easy charm of a team who can garnish in concert and still joke with you, and a kitchen that knows exactly what it wants to say, Bougainville won me over twice in forty-eight hours. This is a very delicious restaurant, and the food ideas and creativity were impeccable until the final taste was presented. BUT, unfortunately, I couldn't finish last night's dinner because I experienced a nightmare-like service experience! Being treated differently by the waitress compared to other Dutch customers, I believe this is the experience that most foreigners will get in the Netherlands! But what I didn't expect that as a hotel guest and in a Michelin star restaurant, I was also treated like this by two Dutch waitresses. No smile, stiff service, and a stiff tone and of course "oh I don't understand your English" these are my exclusive services from last night. And as soon as they finished talking to me and turn around to treat the Dutch guests next to me, they immediately transform into warm, lovely, lively, and friendly girls. The Michelin experience with an average of 300 euros per person for this meal made me feel like I was spending money for humiliate me and my family. Even watching them perform the typical 'I can't understand your English', hey! Don't play this game with me here. I know my English is damn good! In short, I suggest that no foreigner should dine here until this restaurant realizes how outrageous their service is and makes changes to avoid feeling the same way as I had. read more

Went to Bougainville for dinner to celebrate a birthday and had a wonderful experience. We were seated at the Chef's Table which was a real treat. Meeting Chef Golsteijn and interacting with him and his staff as each dish came out was truly terrific. Everyone was friendly and the service was impeccable. The dishes were creative and wonderfully prepared and presented. We had a seven-course meal (plus an extra dessert) and there wasn't a miss. 7pm reservation for 2, arrived at 655pm. First ones to sit for that timeframe, it seems? Missus rates this a 4.3/5. Ordered a drink - la vie en rose. Sweet - nice taste - great for the early courses. Second drink was "Bee's knees" - tasted like "lemonade" - I thought it was more like a lemon drop, but it's still good! Four 'premeal appetizers' First was watermelon that was marinated Second was Thai green curry on a small seaweed cracker Third was a caviar spoon Fourth one was basmati rice foam with coconut and split peas, matcha on top. Really interesting! This finished around 745pm - looks like we'll be here for a bit! (guessing 2.5-3 hours) Tasting Menu notes below (listed in menu order - Also actual served order) Course 1: Wild Seabass Two types - kibbelling (fried) and ceviche (running beans, jalapeño) Missus liked both. I liked the temperature of the kibbelling - perfect - very well made. The ceviche reminded me of a tender red snapper - the extra flavours really jump out at you. Course 2: Zucchini Flower Green sauce is spring onion; brown is miso Fennel, garlic, zucchini, bell pepper Temperature was the same as the body - not cold! Missus said that if this were a family-style big dish she'd eat it all. Course 3: Lobster Macadamia nut and water chestnut for crunchiness (bottom); crescent beets, Harissa for spice, brown butter on the bottom Missus really likes lobster: "Dutch really know how to cook seafood" I asked the staff how it was made - the lobster is fresh (killed at 5pm) - probably contributes most to the "freshness" of the dish. Course 4: Veal Veal covered in flour and crispy short rib; Emulsion with balsamic vinegar. Veal with Baba ghanoush, roasted eggplant, and some kind of reduction (sauce). Tasted Mediterranean, kind of? Missus thought this was ok, but a bit salty for her taste. Course 5: Dutch Lamb - theme is Turkey - hummus, Lebanese bread, back of the neck of the lamb. Chanterelle mushrooms Aged 10 days - smell mostly gone Missus (usually not ok with lamb) thought texture was great, didn't have lamb flavour - which she personally liked. Some of the dishes has the same cranberry sauce used in many places. Course 6: Strawberry & Sakura Strawberries - frozen and dried. Missus thought it was refreshing, liked the chocolate underlayer, but it was ok. Didn't really understand the liquid / mixed ingredients. The sorbet on the top was neutral flavour - didn't add anything to the raw dish. Music background is ambient, but expansive (in terms of eras covered) - anything from Lionel Ritchie to Phil Collins, Simple Minds (don't you forget about me), Lee Fields (ladies) Interesting serving technique - usually two people bring you the food (not always same two) - and one stays behind to explain (the other smoothly walks away) I noticed that others getting the wine pairing. The cups weren't as full as others, but you could tell the difference between the red wine pairings and white wine pairings. Random time check: 907pm (2 hours in) - still not at the last of the "mains" - so probably here for 3-3.5 hours, given how slow the food is. 931pm - lamb is done, but still waiting for course 6 (dessert). Somewhat disappointing how spaced out the dishes are. The other tables had staggered start times, so nobody started later than 830pm, but it felt like there was only one seating. read more

After doing significant research on Michelin-starred restaurants in Amsterdam, we settled on going to Restaurant Bougainville as it looked like much better value than the Michelin two star restaurants we researched. Also didn't hurt that TripAdvisor rated it the #1 restaurant in the entire city! The food here is extremely creative and well-made, with extreme levels of attention to detail. You can tell how much thought goes into every dish. My favorite dish from both a presentation standpoint and tastiness standpoint was the lobster. Other hits for me were the codfish, plaice fillet, and duck. Service was amazing, as to be expected from a MIchelin one star restaurant. Our server, Lendl, took great care of us. Each dish came accompanied with a lengthy explanation of what was in it. Restaurant Bougainville certainly provides the complete full service dining experience. An amazing meal for a relatively affordable price. If I had something similar to this back home in the U.S., I would most certainly be paying over $200/pp. Definitely worth trying again! read more

Absolutely fantastic Breakfast Experience today. It was a fun, creative and delicious dishes. There were some familiar items but others that I wasn't expecting. The restaurant was able to accommodate my wife's food choices and exceptions. We were very grateful for that. The restaurant also offers an expansive cocktails and drinks menu. Came here for dinner. Nice hospitality from entrance to our table. Decor is modern with pop figures on the wall, which isn't my style but whatever. Their menu they have 2, actually. A regular cheap and a chefs that's almost double the price. Some menu items overlap while chefs menu has greater hits. Both come in 5 or 6 courses and with wine pairing. I tried the chefs menu with wine pairing. Nice surprise that they bring out a couple of appetizers before the menu starts. They were all delicious. Meal as expected was very tasty, and the wine pairings were great although heavier on white wines. Also, the truffle old fashion on the cocktail menu is very tasty and unique. read more

Where to begin? What a stunning experience. We were treated so well from the moment we walked in the door. We were greeted and seated at a lovely table by the Window to Dam Square. We had some bubbles while we settled in and some incredible Amuse Bouches to get our palates awake and refreshed. We opted for the 6 course menu plus some oysters to start. Of Course we had to do the wine pairing which is always a great idea to see what direction they want to take you. It did not disappoint at all. We had the oysters prepared both ways (classic and Bougainville style) excellent. The kingfish was delicious, as was each dish, Scallop, Rutabaga, quail and venison... all the way through the delicious dessert. The wine pairings were great, instead of telling you what you were drinking at the beginning that would wait until you were already pairing the wine with each dish and then show you the wine. I really enjoyed that, it left you free to just experience the wine and food together without preconceived notions (it was also fun to try to guess the wines) the pourings were ample as was the food. We left at the end of the evening very happy, full but not over full and with a lovely wine sweet spot. I need to mention that the entire team, we had 5 maybe 6 folks waiting on us and they all were spot on. We highly recommend Bougainville and will certainly make it a stop on the next trip back to Amsterdam. read more

I did the 6 course tasting menu. All 6 courses kept getting better as the meal went on. The 2nd course of the potato dish was my favorite dish of the whole meal, it was sweet salty and just melted in your mouth. Combined with the atmosphere with the low lights and the calming music, it enhanced the flavors of the food and the conversation our party had. Wow! Just wow! Lets start with the service, The service here was literally the best service I have ever had in my entire life, the servers were so in sync with each other, extremely friendly and helpful. You can tell they enjoy their job and enjoy their customers. You couldn't even get up to use the restroom without one of them running to Open the door for you while the other folds your napkins. The mood for was fancy with a warm welcoming homey feeling. Reverts to them caring about us actually being there. Nice views and nice music. Not overally crowded or loud either 10/10 Finally the food. I maybe no professional chef but I'm hard to please when it comes to me saying wow that was amazing but just about every dish was absolutely incredible. The food melted in your mouth and had many different flavors throughout the bite. Each dish also had a different style and flavor If i make it back to Amsterdam and feel like doing a repeat Michelin star, this will definitely be the place I go to and will certainly be the place I brag about to my friends. We love the TwentySeven bar and when we read that Bougainville got a well deserved Michelin star we decided to dine here tonight. Is on the top floor of the hotel, the portier downstairs will take care of your coat, and you will take elevator to the dining room. We started off with a glass of vintage Champagne, selected 7 course meal with 1/2 glass wine pairing for each, as we are here to taste the food and not to get to intoxicated. For that we go to the bar Twenty Seven. The wait staff was like playing orchestra! All our meals were served simultaneously, and the table was cleaned up in the same manner. Underwhelmed. Was not a fan of most of the dishes. While there were a lot of servers present, seemed unorganized and not consistent. I have never been to a restaurant of this caliber that left a dish on table while one member of the two person party was not present. We were never offered another drink when taking empty glasses. Quite simply, one of the best meals and experiences we have ever had. Our other standout is Silvio Nickol in Vienna. Why we loved this One Star Michelin estaurant: -unpretentious - very welcoming. From the minute we walked through the gorgeous doors at Hotel Twenty Seven and were greeted and taken up the elevator, we knew hospitality was top of mind with them. Personal attention throughout our entire meal. -The view, the luxurious booths, the artwork and the well dressed staff. -The food. Simply the best. Outstanding service, knowledge and genuine hospitality- not forced. They want you to have a great time. Every dish served with the flourish of a hand, expertly plated and oh, the flavors. Some beautiful dishes taste bland...here...quite the opposite. I wanted ot ask for more! -Executive Chef stopped by our table and my fiance had included his chef/restaurant owner on the reservation - low key. We shoudn't have been surprised that the staff had researched my fiance and was genuinely interested in his restaurants and background. He asked if we wanted to see the kitchen after dinner. We really wanted to and by the time we finished, it was so late we didn't want to bother them. Next time - yes! -Wine Director Lendl popped by our table to chat and his experience is vast.
