Never before have I been so impressed with the food but unable to exceed a 3 star rating. The food here is incredible but the service is horrendous. The waiter? I learned why they called them WAITers. My family and I were 2 minutes away from leaving our table to go somewhere else when he finally took our order. My grandmother attempted to order spaghetti with olive oil because she had an upset stomach and they would not let her order that until I lied and said she had an allergy. Later in the night, three of our meals arrived and we waited another 30 for the other until we finally asked if the last two meals could be canceled. They said the meals were ready, but we waited another 5 for one meal and almost 15 for them to come out with the last. However, the food really unique for the area and remarkably fresh. I had the Spaghetti Aglio and it was one of the best dishes I've had in Florence. Such a shame that staff is so rude. read more

I got the pesto and zucchini pizza: the pesto is too salty!!! And the it's impossible to taste the zucchini flavor. Also the "pasta" of pizza it's too hard. It's really good but too hard to finish it. I'm Italian so I know Pesto is a really strong flavor. So you need to calibrate all the ingredient to make it soft or balance other ingredients of pizza to have a good equilibrium. Flys are everywhere and it's a pity for this nice location. After passing and glimpsing at the pizzas customers were having we were enticed to try it. As I have recently fallen in love with truffle, the fact they offered truffle pizza was a must try. As we came there in the evening it was very busy and we could not see any free tables to seat ourselves. So we stood and waited for a few minutes politely for the staff to address us, they had their hands full after all. Another couple walked right in and the waitress seated them straight away at a table. This is when I made an upset face and raised my arms in a "what about us"-manner. Which finally made her to address us and said "don't worry, you'll get food as well"... Thankfully, they had another free table. It was crowded and the menu's dirty. The staff wasn't fully attentive either the rest of the evening. But after all, we came there for the truffle pizza (with salsiccia). The pizza came after a while and it was good. Neither bad nor extraordinary. The base was good, the bread had the right texture. However, note that the truffle was some truffle mix either with truffle aroma and/or chopped pickled truffle. A slight disappointment as real sliced truffle tastes a lot better. All in all good pizzas, better than most places in Florence in the tourist areas. Horrible service. read more

After a week in Venice where a great restaurant is (extremely) hard to find, SimBIOsi was an absolute joy. Gorgeous interior with a spectator kitchen where you can watch all the food being prepared and a charming and helpful wait staff. Was a 5 star experience on every level. We had their delicious roasty pig with potatoes which was succulent and juicy with a crackle crisp skin. A young Prosecco still fermenting in the bottle and Caramel mousse for desert was the perfect grace note finish. Prices are extremely (!!!) reasonable considering the quality and artistic plating of their dishes. Can't imagine anyone not loving this cozy and relaxed restaurant where the cooking is so obviously done with heart and soul. read more

What an awesome place! Location was perfect as it is on the same street as the apartment i rented. But what we really liked was the staff and menu. 4 people working a Monday night and the service was great. A very interesting menu will keep you contemplating your dinner. I had the venison burger with blueberry mayo and greens. My daughter ordered the spaghetti aglio oli which turned out to be a bit spicy for her. My son had some kind of gnocchi that was awesome. This was the best meal I had during a 6 day visit to Florence. I came, not based on reviews, but because I walked by twice a day, as the restaurant was near my hotel, and I was intrigued by the decor and how happy the crowd sounded (on a section of street with a lot of competing cute restaurants). I strongly recommend the pasta tasting menu -- it was just sublime. I can't eat a lot of food, so I had to skip the last item, and even so, it was just exquisite. Gourmet and locally sourced. Delicate, creative flavors. The dessert was a clever chocolate faux aubergine. I chose my time well, since I came when they were at busy and I was solo. This time the waitstaff was very friendly. Hopefully this honest and open review would at least correct SimBIOsi's course so that they may provide pleasant dining experiences for their future patrons. They definitely have a beautiful venue on San Gallo and a potential to do very well, but their service was poor and their food was average to say the least. The review from Andrew T. about Americans having to relax about rushing a meal has nothing to do what I'm about to post next. It has to do with basic customer service. There are many restaurants in Florence that have aced both the great tasting food as well as not making you feel like you have to scurry out of the restaurant. I will not belabor this point, but there is non-pizza and a pizza side only. Meaning if you are on the dining side, you can't order pizza. Very weird which I don't get. Perhaps an improvement would allow the crossover in the future. We proceeded our walk up to the non-pizza side of the restaurant. We said to the host and wait staff that we had no reservations, and they stated to wait to the side. 10 minutes later, the host notices us again and asks us if we were waiting for a table. That already rubbed me the wrong way, but sometimes miscommunication does occur. We were sat in a nice space and admired the beautiful interior brick arches. It is really a beautiful venue. Tick tock...15 minutes later, not a hello from wait staff or offer for water. We thought it was just us "impatient" Americans, but lo and behold the same happens to some Europeans next to us. At least offer us water please. That would make the 15 minute wait much more pleasant. Finally the server comes on over. Not an ounce of pleasantness from her. No friendly, "hi and welcome to SimbBIOsi." A very cold run down the order of items from water to food. Almost like she was "rushing" us instead to order. Bread and water was brought over. We later found out that there was olive oil and balsamic vinegar which the tables around us received, but not us. The food was sub-par. The mixed cheese plate had to be slices of the same cheese, which was "blah" meaning no salt no pizzazz. The pasta was average. Waiting much longer for a beef dish which actually was very pleasant. By then we didn't want to eat anymore and just wanted the check. By the time we finished the meat, the salad was just coming out of the kitchen. The server proceeded to say that the salad was ordered to be eaten with the meat. First off, when does someone want to eat salad at the end of a meal. Secondly, hospitality rule #1, don't make guest feel like a liar. The salad was ordered by one patron, and the beef dish was ordered by me. Needless to say, the start and end of this dining experience went from bad to worse. There was one server out of the three that was very pleasant and attempted with service recovery. If we had her from the beginning, this experience might have turned out differently. read more

To all fellow Americans visiting Italy: They don't meals on the same timetable that we do. They don't rush meals. If you read any restaurant review by Americans with low ratings that talks about the "service", it's most likely because they are impatient tourists who aren't adapting to the local lifestyle. Relax. You're on vacation. I ate here twice with my wife in the evening. Both times the service was lovely. The second time we even needed to catch a train, and had no problem getting the check when needed. I have no idea what people are talking about with bad service. The wood-fired pizza is delicious. The crust is more akin to fresh, hot bread than a flavorless cracker crust you might find here. The sauce was delicious. I got the anchovy pizza, which was a fun adventure that I can't do often in the U.S. They were bursting with fishy flavor, if that's your thing. I thought it was grand. It's also much less expensive than some of the fine dining restaurants. If you are staying in Florence and need one or two nights off of the more lavish dinners as we did, this is still a really fun place with cool ambiance. We each got our own pizza, a glass of wine, and took in the atmosphere and the view of the quaint street. We didn't find another good pizza restaurant while we stayed in Italy after this. Another advantage of here is its proximity to a cool little lounge/restaurant/coffeebar, La Ménagére. Even on Monday that place was packed. When you're done with dinner, head over there for a nightcap. read more

So, very important... up front, two things. 1. The restaurant is divided into two parts - one serves only pizza, and next door they serve pasta and more - but no pizza. We happened to walk into the NO PIZZA side which was OK, but it would have been nice to know that in advance. If you want to order pizza (and we saw many couples do this) you have to get up and leave the restaurant and go next door! I'm not sure why they do it that way but just make sure you go to the right place - depending of course on what you want - pizza or pasta. 2. There's a huge "community table" that makes up most of the seating in the restaurant. So get ready to cozy up with a lot of strangers and try to pretend you're not uncomfortable. Community tables aren't my forte, but we did OK I guess, but if you don't like that kind of thing, and prefer your privacy at the dinner table, you might want to choose another place. When the three of sat down, we realized we only had one menu and three drink menus. When we asked for another menu - they said: "I'm sorry, we're all out now." No problem, I thought, we can just wait a couple minutes and wait till someone finishes ordering and we'll get another one. So we wait. I ask again and I get the same answer. As she is telling me this, she's seating 3 people next to us and *they* have 2 menus. What's the deal!? Anyway, I didn't like that. Here's what we ordered: TOMATO & BASIL SPAGHETTI (2/5) - Homemade spaghetti, that part was good. The sauce, however, did not impress, Kind of hard to describe the problem with the sauce, but I would say salty and no depth of tomato flavor - flat. SPAGHETTI W/GARLIC, OLIVE OIL & ZUCCHINI CREAM - (2/5) When I read the description write-up of this dish in the menu, I became weak and started to drool. I had to have this dish -- it sounded perfect! When the dish arrived at the table, it looked good, but again, the sauce wasn't good. It was off - salty and too much oil. It was disappointing but on the upside, it inspired me to make this dish at home. I love the idea. Service was really bad - inept - non-existent. As I type this, I'm thinking this place is more like a two because our experience wasn't really "A-OK" which is what a 3 rating is supposed to stand for. Maybe we should have gone to the pizza side. I knew Florence wasn't known for their pizza, but I expected better nonetheless. Had the Margherita, but added on burrata because I'm a bit obsessed with the stuff. The crust was soggy near the middle--my mom accounted it to having watched the chef plop the burrata straight from the container to the pizza, bringing whey-water with it, but I believed it to simply be poor structural integrity. The cheese was a bit too chewy, the burrata lacked its usual creamy appeal, and the tomato sauce lacked any depth or character--not outright dusty or bad, but just basic, run-of-the-mill.
