Kids of AZN immigrants know what's up!
Good or bad, one thing you can always count on...you'll never go hangry! Then, they'll say you got phat. Ya can't win.
A major culinary influence in his life, the chef named his new resto after his Vietnamese immigrant mom...The Sergeant, a nod to her commanding presence and always making enough food for unexpected guests.
Opening today, Sergeant Ma is the newest addition to Hi Neighbor (Trestle, 7 Adams, The Vault, and MAMA). Open for dinner only. Indoor and outdoor firepit seating available.

* Local Halbut & Uni Crudo w/ carrot-citrus vinaigrette, goose berry, serrano ($28)
A perfect palate opener - the creamy, briny uni paired beautifully with the mild, delicate halibut, while the carrot-citrus vinaigrette and serrano added a bright pop of sweet heat that tied everything together.
* Duck Pâté & Liver Mousse w/ warm pineapple bun, spicy mustard ($19)
A throwback to their very first resto: Stones Throw, they brought back their signature deliciously rich duck pâté & liver mousse accompanied with an iconic HK staple, bolo bao....a fluffy soft bun with a crackly cookie top.
* Grilled Spanish Octopus w/ char siu glaze, baby eggplant, scallion pancake ($26)
I was confused on how to eat this but it appears to be a a rip and dip situation or you can make little sammies with the tender octopus. To nitpick, I wish the sweet caramelized char siu glaze came through more.
* Taro-Crusted Chicken Wing w/ herb aioli (3 pc - $17)
The chicken wings were juicy AF and stuffed with creamy taro with a that distinctive light, crispy, lacy exterior identical to Canto dim sum fav: wu gok (fried taro dumpling). It takes impressive technique to achieve this. GET THIS!
* Coriander Crusted Duck Breast w/ braised leg, yellow peach, anise jus, crispy black rice ($61)
Duck served two ways, the duck breast was nicely rendered with a crispy skin tho the meat was a bit overdone for my preference. BUT, the braised leg was bomb...meltingly tender, rich, and flavorful.
The crispy black rice lowkey reminds me of a hybrid between fragrant Hainanese chicken rice and the prized crispy bottom crust of bo zai fan (Canto claypot rice).
* Coconut-Mango Semifreddo w/ lychee ice, white chocolate puffed ice, pomelo ($14)
Light and refreshing with nice contrasting textures. Hits in rare 90 degree weather in the city.
* Warm Banana Buttercake w/ pineapple, caramel, cardamom custard ice cream (OTH)
TBH, this isn't something I would normally order but Ryan, co-founder of Hi Neighbor, kindly brought it out OTH for a special occasion...and I'm so glad he did because it was incredible. Freshly baked and served hot, the fluffy soft banana cake complemented the rich, creamy cardamom ice cream, while the pineapple added little bursts of fruity sweetness. A very well-balanced, not too sweet dessert.

Overall, solid opening day and another hit from Hi Neighbor. I appreciate the chef's playful touches and creative twists with nostalgic AZN items that felt familiar while still feeling original. And true to an AZN immigrant mom, you won't leave hangry. read more
