Their hospitality and attention to detail were definitely top-notch in the industry. We ordered both the regular and vegetarian tasting menus without any hesitation to maximize the experience. We also got the wine pairing, and they have one glass for each individual dish, so we drank a lot... The entire experience was longer than I expected, taking over 4.5 hours. We felt it was a little too long, but it's probably part of European culture, allowing us to fully enjoy it without rush. Each dish was beautifully presented and well-paired with the wine. We could tell the chef and the team put a lot of effort into designing the courses, especially the last course, house-made chocolate. The flavors were reflective of some other courses from the menu. Incredible! My top favorites of the night were: Sorrel: basil, rhubarb, fennel, wheat grass. Featured on the cover photo, it was the first time this dish debuted on the menu. We absolutely loved its unique play on ingredients and refreshing flavor as part of the dessert course. Duck: eggplant, tulip bulb pomegranate, black olive. One of their signature dishes on the menu, and definitely worth the popularity. The duck was tender and well-roasted. Beetroot: shallot, kohlrabi, magnolia, avocado. Personally not a fan of beets, but this one completely changed my opinion. The beet was cooked on charcoal to add a smoky flavor and reduce its earthiness. Basque cheesecake: house honey, black truffle. They did table side service for cutting the cake and explaining the baking process behind it. The black truffle and honey added additional flavors to the cake.

Located on the Waldorf Astoria -1 floor with garden views, Manager Cas Kratz and team warm in a professional manner befitting the address, guests are led from the hotel doors to an elegant room that is well-spaced with subdued lighting and a pop of color from the large floral arrangement at the center. Embracing Dutch heritage with an eye abroad, summer yielding most of the menu from nearby, the 18h00 seating finds Spectrum quiet as diners are presented an extensive Wine list from which Dry Riesling pairs well to opening bites such as a dried Yolk "cup" supporting Potatoes and Roe. Six proper courses flanked by Mignardises and Canapes, plus a bottle of Tulip Syrup to take home, fried Fish proceeds delicate Mochi with Crab topped in Caviar and the first of two Breads plus two styles of Butter. Served at a guest-appropriate pace, no long lulls with staff checking in regularly, Mushrooms take center stage in an otherwise vegetal composition brightened by Cherries followed by Strawberry-glazed Skate with a touch of heat. Not afraid to venture abroad for inspiration, Mullet Fish alongside Chanterelles and Sea Grapes darting across the tongue with tangy Tamarillo, Schutte's Langoustine then builds from tail to head with Chipotles and Chocolate to thrilling effect. Captivated by the Caramelized Goat Butter, enough so that a loaf of Sourdough disappeared quickly, Chef's time in Hong Kong undoubtedly inspired crispy-skin Duck intended to be eaten bite and sip with an accompanying cup of Consomme. Choosing Truffles and Cabbage over Rhubarb with Dill for Dessert, both seemingly a little forced and the former lacking much of the elegance seen across the rest of Spectrum's plates, guests are next asked to play a guessing-game with Chocolates inspired by preceding courses before concluding with Sticky Rice and Licorice bites.

I have been working on my Dutch and our servers loved going back and forth related to words I didn't understand. They also let me practice. Extra points! Make sure to check out the bathrooms. Sounds like a wild thing to say but the art on the way there is spectacular and weird. Everything I can ever wish for. But only at RIJKS® was I really surprised, and only at RIJKS® did I find myself obsessing over dishes long after the meal was a distant memory. The dish that really knocked me for a loop was the amuse bouche, a broth of leeks with tarragon oil served as a small shot. I found myself craving noodles with it; the restaurant is really missing something by not serving this with ramen or udon or something. (The young ladies at the next table said the exact same thing.) The prix fixe lunch menu is an exceptional deal with fantastic dishes: The green gazpacho delivers the freshness of green tomatoes, bell peppers, unripened strawberries, and herbs. The optional laab course is fresh and light, with the goat meat having no funky, "goaty" flavor. The chicken thigh course represented Indonesian flavors better than either of the actual Indonesian restuarants I visited in Amsterdam, while the dessert had a restrained, faint sweetness that finished the meal perfectly. Service was warm and friendly, and the room is comfortable and elegant. The wood paneling sets the perfect balance between modernity and the historicism of the Rijksmuseum that houses it. Most importantly, the meal was an excellent price for the quality of the food and service (€55 for three courses, €20 for the additional laab course). Even if one has no plans to tour the Rijksmuseum, no one should pass up the chance to dine at RIJKS® when in Amsterdam.

Compared to similar experiences in New York City very good value for the money! Drop ins are rare so better plan ahead. As previous reviewer's have noted it is a very trendy hip modern decor. The amuze bouche for the evening was a pair of muscle ceviche which of been fairly well Blanche following their cooking process of removing any fishing this flavor and leading a nice delicate texture. This was paired on the side of the coconut curry soup which was fantastically well executed! (As good as any Thai place I have been!). That being said two dishes did not hear very well together due to the different acidity flavor profiles (muscles very delicate flavor wow the coconut curry was robust and strong). Rating: 5/5 First course was steak tartare: The beef had been put through very smallest meat grinder setting and mixed nicely with herbs served with hot peppers and sour cream. There was a slight "gamey" aftertaste. Rating: 4/5 For the second course we go to molecular gastronomy with a combination of potato and dehydrated Evoo - The potatoes were full of flavor as they have been sold first and then smoke on the grill all sitting on a bed of puréed rosted shallots. Fantastic this all in all. Rating 5/5 Third course was a pan seared whitefish (but without crispy skin) served on top of the cauliflower purée, blueberries, and mixed berry compote. The berries were very overpowering versus the whitefish making the dish less successful. Rating: 3/5 The next course was a slow cooked beef served with a jue reduction of beef+port and sunchoke purée on the side. The beef was well prepared but the star of the dish with the sunchoke purée and the reduction! Once again the beef had a very gamey taste... rating: 4/5 The first dessert this evening was a whimsical mocha and a coda here with the hazelnut croquant powder and a foie gras ice cream - overall very whimsical and delicious - Great balance of sweet and savory ! Rating: 5/5 The second the third was all about texture and acidity versus sweetness: mix of yogurt yogurt ice cream and crumbles of chocolate, Caramell puff rice and popcorn. Another fantastic mixture of flavors and texture. Rating: 5/5

Our waiter so sweet and was as attentive as he possibly could be given the chaos of the evening. Every table was full and the kitchen was working their butt off. I'll summarize each course: Bread and Butter: Amazing and we managed to finish the whole loaf by our 3rd course. Mackerel with Kale: This was tasty, especially the crispy roasted Kale Potato with Eel: The sauce was very flavorful, but there was only 2 small pieces of eel. Halibut with Fermented Mushroom: I enjoyed this, the halibut was so buttery and creamy. Deer with Cauliflower: I've never had deer before, but this was dIfficult to cut through. It was cooked medium rare and had a very slight gamey taste, but still good. The cauliflower had roasted macadamia nuts on top that was to die for. Cheese Plate: The server dropped this off without explaining what was on the plate. I'm guessing it was Brie, Bleu and some other hard cheese. I don't know what the other two dipping jams were, but they were good. Prickly Pear Sorbet Dessert: The presentation was beautiful, but I felt like there were too many flavors going on to really enjoy it. Envy is best reserved for a special occasion and I would definitely come back for a regular dinner to try their traditional tasting menu. It was a great spot to spend the New Year as the crowd was fun and friendly.
