I thought I was going to get like a small cup of ice cream or a churro or something. That's when I noticed this pretty large line outside this popup called Mike's Shaved Ice - which I thought was odd because none of the other dessert places nearby had any line at all. Was this place really that good that people were willing to wait 20-30 minutes when they could get something else for another place for free? Turns out, yes, it is This might take the cake as the best dessert I've had in Seattle My goodness, this was good I think I've had shaved ice before at some point, and I recently had a snow cone, which is somewhat similar, but nothing could have prepared me for how incredibly good this tasted. I got 3 flavors - pineapple, blue vanilla, and orange dream, and each bite had so much sweet, juicy, just-absolutely-perfect flavor that it was bursting in my mouth. When I took my first bite, I was in awe at how amazing that was. The ice was shaved so thin you couldn't even really feel the individual crystals at all. After taking a bite, it lasts a few second and melts away into your tongue, leaving nothing but that amazing syrup poured on top of the ice. It was truly a magical experience Picture this - you're scooping away, encountering zero resistance at all, and each bite can be one of 3 diverse but incredible flavors. Also, this thing is pretty damn big as well I've gotten this far without even talking about the vanilla ice cream inside. It seemed to normally be a topping, but I got mine inside because reasons? I'm not complaining at all though, because after you get to the ice cream, a lot of the shaved ice is melted, so you're kind of just eating the ice cream with the flavored syrup, which is also a fantastic experience. If I ever get the chance, I would like to try it with the ice cream on top, however This is slightly expensive for ice cream, but well within reason when you see how much you get.

Staff is always nice and makes you feel a sense of community. Quality of their ingredients are always so fresh and can be very nostalgic and give you that home feeling if you're from HI. You can always find these guys with a long line, but everything is worth the wait and surprisingly goes by quickly. Fluffiest ice, just the right amount of sweetness for their syrups, and balanced toppings. Will always support local businesses, especially when they're connected to Hawaii!

If you're craving some bingsoo, make the trek to Bellevue if possible. This store is shared with Xi'an Noodles with a shared restroom and wifi available. Located in the Belgate plaza, there is plenty of parking. Mixed Berry Bingsoo - my favorite bingsoo because the berries are packed with flavor, sweet, and enhance the dessert. With a mix of sweetness, tartness, and acidity, the bingsoo has balance and the contrast actually helps each flavor shine. The berry juices even add flavor to the bingsoo below (and there are berries at the bottom). The only mediocre aspect is the whipped cream on top which is just whatever. Taro Bingsoo - the menu has alternated between ube ice cream and taro ice cream but I think it's always been taro ice cream because it's not overly sweet. Red bean is also sweet but after devouring the toppings (including the ice cream), the bingsoo itself doesn't offer much. It's sweet shaved milk with condensed milk but the taro flavor isn't as potent.
