New Chef. New Menu. New Concept. Time to update. We went to Up Cellar last night after an…read moreexhausting couple of days. We had a spectacular dinner at the hands of the new chef, Nicholas Murray. His concept is that starters and salads are meant to be shared. With the proteins, maybe not, although each was ample and could have been shared. We started with the Ahi Tuna Toast, Ahi Tuna on toast with heirloom tomatoes and fennel on a piece of sourdough toast. That was an excellent start to our dinner. Our other starter was a Stracciatella, orange supreme, candied pistachios, basil and olive oil panino. This, we thought, was an outstanding dish. Neither filled us so that we could not go on. We then moved to a caprese salad - unlike any caprese we had ever had. Again, heirloom tomatoes, pieces of mozzarella, pangrattato (a traditional Italian condiment made from breadcrumbs toasted in olive oil with garlic and herbs) basil and mixture of balsamic and soy. So delicious. From here, my spouse and I diverged. She ordered the half chicken. Chef Thomas Keller (famous for The French Laundry) believes that a properly roasted bird is a definitive benchmark for professional capability. The reason is because there is no place to hide. Achieving crispy golden skin with completely succulent, non-dry meat requires precise control over heat and timing. Chicken easily dries out and turns bland. My spouse's chicken WAS PERFECT! The skin was crispy but the meat was succulent, even the breast! Clearly, Chef Nick has mastered this deceptively simple dish. It was likely the best chicken we have had in a restaurant (or home). I ordered the trout (a butterflied rainbow trout) served over a white bean puree, butter beans and with an optional salsa verde. I opted against the salsa verde because the trout did not need it. Finally, a word about the desserts. I ordered something called "Liquid Nutella" served with a hazelnut crisp and an in-house vanilla gelato. Oh my. This dish was decadent and resembled most a molten lava chocolate cake. I am not ashamed to say that except for tastes I graciously gave my spouse, I at the whole thing! Chef Nick also urged that we try his key lime pie. We did, but given my predilection to hazelnuts and chocolate, the Liquid Nutella was my winner. Chef Nick has spent the last 20 or so years away from Indianapolis and its environs honing his skills at Beaker & Gray in Miami and Eleven Madison Park in NYC among other places. We are glad he has decided to come back home.

The Cab/Zin blend was not too bad -- better than I had expected, actually, so the tasting was off to a good start. But the dry Riesling was awful. It had a distinct funk to it. As a wine specialist, I feel like I should be able to describe it better than that, but I didn't want to keep sipping to identify the "funk" more precisely. The semi-dry Riesling was drinkable (but way sweeter than semi-dry). The "semi-sweet" Traminette was full-on, dessert wine level super-sweet and lacking any acidity to balance out the sweetness. I couldn't finish that one either because I was actually starting to feel a little sick from the intense sweetness. My husband liked the Zin in his flight, and I thought it was okay. I also tasted his blackberry wine. I usually like blackberry wines because they have acidity & tartness to balance the sweetness, but this one did not. It was just all sweet. The service was fine, and the atmosphere was nice. I enjoyed the classic rock music. The winery shares space with 450 North. I can't say anything about the 450 North stuff or the restaurant because I don't like beer and we didn't get food, so the two stars is based on wine quality alone. I'm glad we stopped by so I know what it is, but we definitely won't go out of our way to visit again.

He did and immediately agreed that something was not right, even stating that the dish should never have left the kitchen. I want to give credit where it's due--the server was kind, professional, and genuinely apologetic throughout the entire situation. He removed the filet from our bill and offered complimentary dessert. When I declined a replacement meal, he encouraged me to order something else and he would have it boxed to go. I ended up ordering alfredo fettuccini noodles. What was frustrating was that I was still charged $27 for the replacement pasta. Considering my original meal was inedible due to a serious kitchen error, I was surprised to see that charge remain on the bill. By that point, I was exhausted by the experience and simply paid so we could leave. The server handled the situation as well as he could. My concern is with the kitchen and the lack of quality control that allowed spoiled meat to be served to a customer. I wish I had asked to speak with a manager before leaving. The seating arrangement is very close quarters to the patrons next to you and I did not want to appear like I was causing a scene or demanding a free meal. In hindsight, I should have made management aware of what had happened to help ensure that no other customer was served food in that condition. What was supposed to be an enjoyable date night ended with shock, disappointment, and concern about food safety.

The woman at the bar who helped us had amazing energy and was extremely friendly and helpful. She recommended two NA wines I could try and described them both in detail. They also had an Athletic Beer available. The space is super clean and chill. There's lots of space inside to hang out and play games. We each had 4-5 beers in that time (since we had to drive out of there on back country roads) and we split an order of mozzarella sticks and our total bill was only $30! Amazing! Note: they do allow smoking, almost everyone in there was smoking, and the ventilation system didn't do much to help the air flow. At one point my eyes were burning pretty bad - but it's a dive bar and I was not expecting it to be non-smoking. It's a cool little joint and I'm glad we went!
