By the end, pretty much everyone in our group had found a wine they wanted to take home--including the ones who swore they weren't buying anything. Dennis, our Tasting Room Host, made the experience. He was warm, very knowledgeable, and genuinely engaging with everyone--from the serious wine lovers to our six-year-old--while keeping things professional and elevated. The whole visit struck that rare balance: polished without feeling formal, refined without ever feeling rushed or "in-and-out." Dennis has been with Eberle since 2017, and you can feel how much he cares about the place. He spoke about the winery with such genuine pride, and as you look around the tasting room at the rows of award ribbons from years of vintages, it hits you--this is a place with real history behind it. That sense of legacy and care is woven into the whole experience. The historic wine caves are a must, the complimentary tasting felt generous and unhurried, and the grounds have that unmistakable Paso magic--rolling hills, big oaks, golden light, and room to breathe. We even crossed paths with Gary Eberle (founder, 1979) and his sweet black poodle, Vieto--one of those authentic, only-in-wine-country moments that sums up the welcoming spirit here. If you go, ask for Dennis--he turned our first visit into one we'll plan future trips around. Good to know before you visit: * Make a reservation--it gets busy * Don't skip the cave tour (you can even taste down there) * Large lawn & games--great for kids and mixed groups * Very dog-friendly * Private, romantic tastings available in the caves * Complimentary tastings + military discount available * Plan to stay a while...and bring your camera :)

It's the kind of place where you could easily sit for hours enjoying the landscape and a glass of wine. The wines are consistently excellent. The tasting lineup always showcases the quality DAOU is known for, and one of the great perks is that they often have several library wines available that can be requested and served by the glass. Being able to enjoy some of their older vintages this way makes the experience even more special for wine enthusiasts. What I appreciate most about DAOU is how they've managed to maintain a small, family-style atmosphere despite being acquired by a larger company a few years ago. The hospitality still feels personal and genuine. The staff are incredibly friendly and knowledgeable, not only about the wines themselves but also about the history of the vineyard and the vision behind it. I'm a big fan of this winery and how it has evolved over the years. Between the stunning views, exceptional wines, and welcoming staff, DAOU is always a must-stop whenever visiting Paso Robles.

It is owned and operated by Mr. Dennis Degher, a kind experienced gentleman who knows how to show his guests a nice time. Wine tasting is $30 per person, waived with the purchase of wine. Wine tasting is by appointment only. We made an 11 am appointment for a Thursday morning. There is an automatic gate at the bottom of the hill and you call to have it opened when you arrive. Mr. Degher greeted us when we arrived at the top of the hill. He has an indoor and outdoor tasting area. It was such a beautiful morning, we did our tasting on the patio outdoors. We tried several wines, including a Viognier, Chardonnay, a couple grenaches, a few cab blends, and a beautiful unfiltered port. All the wines we tried were very good. After tasting wine, Mr. Degher took us for stroll around his property. He gave us cuttings of rosemary, lavender, oregano, and bay leaf. We bought 4 bottles of wine, which waived our tasting fee. Mr. Degher is also an accomplished musician who has composed and performed many songs, which he has recorded and can be purchased on CD. Don't miss an opportunity to visit this beautiful little gem at the top of the hill!

The 1954 Jeep tour took us throughout the vineyard where we saw the vines up close and so many deer. Brian educated us on the wine process. There's a good story that goes with that name and no - it's not about the Jeep. Outside the tasting room is a nice covered patio. This was our last and one of our best stops in Paso.

The owner's quick thinking and medic experience helped save three of the airmen, though sadly, one lost his life. That deep connection to history and place was felt throughout our visit. We took the Jeep tour with Cindy, which was the highlight of our time there. She gave us an incredible behind-the-scenes look at the winemaking process -- from picking the grapes to pressing and barreling. As we rode through the vineyards, Cindy shared stories of growing up on her family's farm and the history of Paso Robles. We even got to taste grapes straight off the vine to check for ripeness -- such a cool touch! After the tour, we enjoyed a wine tasting, and every wine we tried was excellent and easy to enjoy. The Viognier really stood out -- crisp, refreshing, and perfect for a hot day. The Crash red blend, created in honor of the airmen and the crash, was a beautiful tribute -- complex yet smooth, with a soft finish and a subtle dryness that made it memorable. And don't forget to say hi to Cri Cri, the winery dog! She's the sweetest greeter and fully deserves all the belly rubs. Steinbeck is more than just a winery -- it's a living family legacy with fantastic wines and heartfelt storytelling. Can't recommend it enough!

The tour started at 10am cause it would be too hot to be outside in the afternoon. Our tour guy was very professional and knowledgeable about this massive vineyard resort. The tour took about an hour and half and finished with wine tasting in the resort tasting room. We were introduced to the entire property, history and facts about this winery. I really liked the cute goats on the ground. I was worried about them being in the heat and out in the sun. But our tour guy assured me that they made sure the animals stay in shaded areas and drink enough water to stay hydrated. The arts of this place are just fantastic. Owner is a big art collector so he covers quite a few cultures including Buddha (my faith)! All the arts are from the original countries so they are authentic. I loved the amazing art installations throughout the vineyard. My sign Virgo was on the top of the hill so we had to do a mill hike to see it. There is an art tour that we will do next time. I really want to know the details and histories of all the arts here. I was so glad that we decided to do this tour. If you ever visit Paso Robles wine country you might want to check this winery out. The prices were reasonable at $45 per person, $30 for resort guests and complimentary for members (2 people). I explained I had been to a few other wineries on the San Miguel side and he said, you know, we're part of the Pleasant Valley Wine Trail (13 wineries on the San Miguel side). I didn't even know about that, but come to find out some of the wineries I previously visited were part of the trail. I was thankful to Pedro for this, as it helped me plan out the rest of that day on the trail. This particular trip to Paso was a few days before the Labor Day holiday weekend. I wanted to get away, but also wanted to be as safe as possible, by going at a time where I felt there would be fewer people. In the morning a few hours before my visit, Vicky called to confirm my appointment. I appreciated that and I'm sure she did too. Vino Vargas is on the far end of the trail, so it's a little bit of the beaten path, but so worth it. Because appointments are highly recommended during this time of COVID, I happened to be fortunate enough to be the only one at the winery at that time. It was such a great experience. I was able to have a great (socially distanced) conversation with Vicky. Learned so much about her and Pedro's wine-making journey, and the wines they make. I suspect it's not something that would happen with much regularity on any non-COVID style scenario where tasting rooms are typically full or busy. The wines were also delicious. I'm not much of a white wine drinker, so I passed on that option on the tasting menu and went straight for the reds. I wound up buying four bottles - 2017 Toro Tinto Tempranillo, 2016 Rio Ruso Pinot Noir, 2017 El Taxi Cabernet, and Paso Rosa Rosé Dessert Wine. I was very luck to have gotten one of the very last bottles of the Paso Rosa and I was thrilled, because it is absolutely delicious. If you can make Vino Vargas part of your Paso Robles adventure, I would highly recommend it. Pedro and Vicky are the nicest and so love what they do. Their wines speak so much about the care they take in making them.
