    Stumbled into this wine bar on a Sunday afternoon and was definitely impressed. The reds got more delicious as we went down the list. We also had excellent discussions with the owner and wine maker Denis. Everyone should definitely make this their first stop when visiting!

    Where to start? Mr. Degher was a great host. We arrived at opening and had a blast. This wine tasting room is kick back with a bunch of photos from his past. Three of us ladies sat and enjoyed the delicious wines and learned so much of what we liked. There wasn't anything we didn't like but each of us had a different wine we loved. We listened to music (unfortunately not Mr. Degher's) and tried wine and had some good laughs. If you love music and enjoy down to earth people and environments this place is for you.

    From the stunning views to the laid back vibe, Dennis has created a beautiful space to enjoy his incredible wine. Domaine Degher is my favorite place to visit in Paso and the wine alone is well worth the trip. Every time I visit I find something new to love.

    I love that it's two wineries inside this cute wine bar! We happened to see Cassidy here after enjoying her at Pianetta. I didn't partake in the wine tasting for the Domaine Degher side but I loved that their wine club is called G-string. They have a wine that they use a robotic wine opener on to extract the wine without opening the bottle. I googled a little about Domaine Degher to see the reason behind the name. Couldn't find anything but I did discover that Domaine Degher sits atop the registered organic Old School Ranch Vineyard!

Domaine Degher sits atop the registered organic Old School Ranch Vineyard in the rolling hills of the northwest side of Paso Robles AVA on California's Central Coast. Owner/winemaker Denis Degher's lifelong love affair with music orchestrates his powerful yet elegant wines. "Making wine is like making love or making music... very improvisational. You start with a vision and harness the mystery of nature. Then with each ever-changing vintage, you strive to shape this raw life force into a wine of natural grace and beauty, while keeping your mind's eye on your creative vision." Domaine Degher's vision includes minimalist intervention, vinification in very small lots & sustainable farming practices. Then allowing each vintage to speak its own language as it engages your sense of taste and smell. Domaine Degher specializes in Red Rhone blends & Cabernet Sauvignon production using ENTAV clones Grenache Noir 362, Syrah 470, Mourvedre 369 and Cabernet Sauvignon 337 & 169. Tastes are by appointment only

    Dennis makes Great Wines and a good variety. They have Live Music the later part of the month on Fridays. Check it out.

    My experience with Vino Vargas began when I made my appointment and Pedro (owner and winemaker)…read moreinquired how I found them. I explained I had been to a few other wineries on the San Miguel side and he said, you know, we're part of the Pleasant Valley Wine Trail (13 wineries on the San Miguel side). I didn't even know about that, but come to find out some of the wineries I previously visited were part of the trail. I was thankful to Pedro for this, as it helped me plan out the rest of that day on the trail. This particular trip to Paso was a few days before the Labor Day holiday weekend. I wanted to get away, but also wanted to be as safe as possible, by going at a time where I felt there would be fewer people. In the morning a few hours before my visit, Vicky called to confirm my appointment. I appreciated that and I'm sure she did too. Vino Vargas is on the far end of the trail, so it's a little bit of the beaten path, but so worth it. Because appointments are highly recommended during this time of COVID, I happened to be fortunate enough to be the only one at the winery at that time. It was such a great experience. I was able to have a great (socially distanced) conversation with Vicky. Learned so much about her and Pedro's wine-making journey, and the wines they make. I suspect it's not something that would happen with much regularity on any non-COVID style scenario where tasting rooms are typically full or busy. The wines were also delicious. I'm not much of a white wine drinker, so I passed on that option on the tasting menu and went straight for the reds. I wound up buying four bottles - 2017 Toro Tinto Tempranillo, 2016 Rio Ruso Pinot Noir, 2017 El Taxi Cabernet, and Paso Rosa Rosé Dessert Wine. I was very luck to have gotten one of the very last bottles of the Paso Rosa and I was thrilled, because it is absolutely delicious. If you can make Vino Vargas part of your Paso Robles adventure, I would highly recommend it. Pedro and Vicky are the nicest and so love what they do. Their wines speak so much about the care they take in making them.

He was really great & friendly. He also was very knowledgeable about Paso Robles and answered every question that we had. There were 10 of us and we can be a little too much, but Chris was super patient with us. He went out of his way to go back to the last winery when one of the girls left her phone at there. He worked with all my questions and gave a ton of recommendations based off what I was looking for. He gave great options for food and made all the reservations needed for the day. We were lucky enough to have Jed as our guide for the day. Pick up was on time and we went rolling on. He got us checked into the wineries and made sure we were settled and checked back to make sure we were on schedule. He was easy going even when we decided to cut the tour one winery short and grab coffee instead. He even called to cancel the reservation- super planned and thoughtful Would definitely book with Jed again if in the area.

Richard's wealth of knowledge is phenomenal. This was such a wonderful and fun experience. If you schedule a tour you need at least 2.5 hours. We were actually there for 3.5 hours and it was worth every minute. Thanks, Richard, for imparting your love for olives. Can't wait to return with friends. We planned a trip to see his farm on the last day of our trip. I sadly can't drink right now, so what else is there to do outside of family activities and wineries? Olive oil farming! It was a great way to end our time on the central coast. Richard started by telling us about his story of becoming the Olive oil man. He helped us learn about Olive trees (we had brought a branch from our tree), the olives themselves, and the milling process. He brought us into his tasting room, and we tried various oils and a vinegar, as wells as a few flavor pairings. We really have a new appreciation for not only olives, Olive oils, and farming, but Richard and smaller, non-commercial farmers. Every bottle is a labor of love crafted by him, his wife, and even his dog. The visit felt like we had visited an uncle, and we did buy oils (he definitely doesn't ask you to, but after tasting then and knowing the process, you definitely want to.) We were going to send some as gifts, but it's hard to appreciate something as much unless you've experienced it. We experienced the San Miguel Olive Farm and we're better for it. Thanks again Richard! We definitely will try to come up one October to experience the harvesting to complete the journey.
