But the tapered dish had a small amount of ricotta at the bottom, about a fourth, then half the jar full of pesto, then top fourth of tomatoes.(see picture). I couldn't even dig down to get the ricotta and the huge amount of pesto was overpowering. I politely brought this to the waitresses attention by kindly saying I wanted to give some feedback and explained the expectation and that there was very little ricotta and hard to get to it. She handed me a spoon and a plate and I tried in front of her to get to it and said that's not working. She did say she would give the feedback to "them", but did not offer to replace it or fix it. Perhaps offering to bring more ricotta? For the rest of the evening she did not address the situation and I only ate two small bites and sent the entire dish back. At the end of the meal when I saw this was added to my bill, which I should add was $84 plus tip, over $100, w ricotta being $18 for just me not including the other two at the table, I asked if anything could be done about the ricotta dish that I did not eat. She said she would ask, but came back and said her manager said no because this was just my preference!! I felt sorry for the waitress. If the wait staff is not empowered to resolve these issues on their own then the manager should have come to the table! I said okay, paid the bill and left. Management prefers to argue and defend (without the facts) vs find a solution and humbly accept feedback. I am a manager myself in the luxury market...and customer feedback is at the heart of growth.
