We decided to try this newer restaurant in Eagle for a Mexican breakfast. The restaurant was warm and welcoming. I ordered Huevos Rancheros and the portion was generous and rice, beans and sauce were yummy. Server was attentive. The eggs were overdone and one of my pet peeves is when you ask for more chips and salsa and you are charged. On the positive side, the server told us before charging. Not as good as the one in Meridian, but better than other Mexican restaurants in the area. A good margarita makes up for some of it but....they DON'T have a full alcohol license yet so be warned. Canned margaritas, beer, and wine only. Service is quick and friendly. A plus. Small dining room that was busy but the small bar area was empty. But they have several TV's if you come to catch a game. Food is just ok. Chili relleno and chicken enchilada were good, not great. The other plates were the same. We decided to venture out from our favorite Mexican restaurant in Star. I could not be more disappointed with our dining experience. The near empty parking lot should have been a clue. I ordered what I always order from any Mexican restaurant, shredded beef tacos and my husband ordered fajitas. The 3 tacos were served in shells that felt stale around the edge and were soggy and fell apart on the bottom immediately after being served. Combined there was about 5 small bites of beef in the tacos. The shells were otherwise half filled with potatoes , a shred of cheese, and a few peppers. Sorely disappointing considering the hearty serving of beef per taco I am used to. My husband's fajitas were also disappointing. Although the pile of meat and veg looked impressive, the flavor was lacking and the meat was tough. We both experienced uncomfortable GI symptoms shortly after we left, so maybe an additive in the food that our bodies were not used to. Service was fine, music was too loud and obnoxious; all in all, avoid and go somewhere better. read more

Came in for an early dinner at this Mexican restaurant and had such a great experience. Our server Cristian was incredibly kind, attentive, and made us feel welcome from the moment we sat down. We ordered the tortilla soup and flautas, and both were absolutely delicious. Everything tasted fresh, flavorful, and clearly made with care. Came in to sit at the bar and make a to go order. Staff had no problem with that, had the chips and drinks and made our order. They waited to make the dessert at the very last moment of our visit to make sure nothing melted too soon. Great verde and chili Colorado and those are great staples. read more

We were looking for a quick, late meal and Pueblo Lindo served up delicious food very quickly. My husband and I tried the fajita salad and the shrimp salad. Both were delicious. We had an amazing meal at Pueblo Lindo in Eagle! My wife and I shared the steak fajitas--it came out sizzling, hot, and perfectly cooked in just under 10 minutes. The flavor and texture were absolutely spot on. And paired with a cold draft beer? Just perfect. What stood out beyond the food was the cleanliness. Even the restrooms were spotless. From our seat near the front, I noticed the staff at the kitchen's orders-out area sanitized the stainless surfaces between every order. Impressive. The staff looked sharp in black attire, and every guest who came in was greeted with a smile. It's a nicely decorated, comfortable, family-friendly restaurant--and with a full parking lot, clearly a local favorite. Several team members took care of our table, and our main server Alex deserves a shoutout. He had just the right timing and attention--a true pro. I went to try Pueblo Lindo's new location and specifically their Paloma. The Paloma was pretty much grapefruit soda without any grapefruit juice so it was rather disappointing. The Fajita Nachos had a tablespoon of refried beans, if that. The kitchen realized they forgot the vegetables and brought them on the side several minutes later. The waiter offered to have the nachos remade but I declined. The chicken was dry and the dish was unappealing. To the waiters credit he gave me 50% off even though I didn't complain. I had high expectations for Pueblo Lindo due to the positive ratings of the Meridian location. For a newly opened restaurant and a relatively simple food choice I was very disappointed. Went there for take out. By the time we got the order home (2 miles maybe) we couldn't tell which order was which. It was all jumbled. DON'T WASTE YOUR TIME, GO TO TACO BELL! We were in a large group, but they dedicated one waitress who was aided by 2 busboys and THE MANAGER. I speak Spanish, I ordered in Spanish, waitress obviously a native speaker. She messed up half my order. They gave me 10% off the bill. I got a drink and we all got a small glass of water. I was not offered a second drink when mine was empty when meal arrived. Everyone else got a second drink except one person. She filled everyone's water glass but mine. Someone at our table noted I was neglected, offered me her water!​ Well below average food, heinous service, don't come thirsty! When I complained, the waitress said " Not my fault, I put it in correctly." She served my plate! It was in every way her fault. My husband and I went on a Saturday evening around 6:45. We thought a twenty minute wait for a table was quite reasonable. When trying a New Mexican restaurant we have a standard order for comparison with other Mexican restaurants; this comparison order always includes a chili relleno. I addition I ordered a chicken enchilada and unsweetened iced tea; my husband added a shredded beef enchilada and a negro modelo. Drinks, chips and a half full dish of salsa eventually made it to the table. No refills on the tea or salsa were ever offered. I requested a refill on my tea, but never received one. The chili rellenos were good, but the sauce mixed into the protein and covering the enchilada was much too sweet for our taste. read more
