All around a pure delightful & delicious evening. We were early in the evening (5pm) because we'd never had lunch. Staff greeted us with a warm welcome & the offer to sit wherever we liked. All of the staff were very attentive & helpful. We started with drinks & salads, which were both delicious. The Sangria was yummy, with pieces of fruit mixed in. The salads were top notch. I had the Capri salad & couldn't eat it quick enough, lol. Romaine, ham, hearts of palm, corn, feta cheese, tossed in extra virgin olive oil & balsamic vinegar. My husband had the mixed greens & it was equally delicious. We split a medium Margherita Pizza & it was divine! Light, fresh ingredients, thin crust...couldn't have asked for anything better. We finished up with a double scoop of gelato (pistachio & salted caramel). We dug in & I didn't get a pic, oops! New favorite, local restaurant. Definitely busy & a favorite of many. A special occasion brought my colleagues and I to this spot for lunch (a going away/birthday). I called the day before and made a reservation for seven. It's located in the up and coming area of Gunbarrel, just north of the King Soopers complex. While I typically find it challenging to find parking, lunchtime awarded us with our choice of nearby spots. Upon arrival Callie greeted us warmly and brought us to just the right sized and shaped table. She made great recommendations about how many pies and salads to order. We ordered quite a bit of food and were super impressed that she not only memorized our entire order but that she was so helpful and friendly (she for serious refilled my diet coke 3+ times during the lunch). We started with the salads. A Caesar (with the anchovies on the side) as well as a Capri salad (sliced ham, hearts of palm, and corn). Both salads were fresh, crunchy, and delicious. The Caesar dressing was especially creamy and flavorful (I couldn't help but enjoy some on my pizza crust). The pizzas came out fast and hot. The pizza stands were especially helpful in ensuring we had enough room for all of our plates and drinks. We went for the special (feta, mozzarella, pesto, tomatoes, and basil - crowd favorite), a pepperoni and pesto, the last pizza being an Atomica pie (Italian sausage, black olives, garlic, oregano, etc.). This was my best Proto's experience so far (I've been to one other location). I'll definitely be back to check out their happy hour ($3 large panini, $10 beer & pizza, $5 cocktail of the day, and more). read more

I recently moved here from California and was desperate to find a delicious pizza place. Yay! Protos! Yummy brick oven pizza. Perfect crisp crust with soft inside. I love the char on it. It's a perfect dough thinness. And the flavor of the sauce and cheese and right amount of grease ( I like it when the pepperoni oozes a little grease.) not too much. Just right! Proto's pizza is not much better than frozen grocery pizza. I had a 16", half plain, half pepperoni. Both sides were too salty. The taste of the sauce was overwhelmed by the salt. The crust was like store bought. Anyone who has eaten pizza on the East Coast understands how deficient this pizza is. read more

Hidden gem, for sure. I got a small Tuscan salad. My friend got a small Pesto Pie and an Izzi's. Everything was delicious! Service was good. And even with a 25% tip it was still only $22! Best restaurant in the are, for sure. And with prices like that, it's just one more reason why Gunbarrel should have its own city and zip. If you ordered that in Boulder, it would have been $30 plus tip with a far longer wait for service. read more

Food is great yet unfortunately service is lacking. My friend and I just sat at the bar for pizza and Prosecco. The bartender was rude and dismissive. She never checked in with us after the meal was served and when I called out to her, as she sat playing cards at a nearby table, to ask for another drink she rudely said, "I can't serve you. We're closed." Yet, according to their hours online they close at 9:00. This went down at around 8:15/8:20. A little communication would have been nice. Ive always been taken care at the bar with great staff but seems a whole new crew is on board so I'm not sure I'll be back. Overpriced and flavorless , I have had Napolitano style pizza in Rome, New York, Boston and philly, this does not even come close to the flavor profile expected of this kind of pizza. The traffic jam sold as a "big mess" of toppings were sparse and flavorless. The crust was thin as expected but No flavor. Had takeout dinner here tonight. Service was quick and friendly. Ordered a house salad with the traffic jam pizza which included all kinds of veggies with sausage. The pizza was excellent. Crust was delicious with good dough and you can tell all the toppings were fresh. I've had plenty of pizza in New York and this on par with the neopolitan style pizza I've had out there. This is a must if you're looking for pizza in Gunbarrel. On a side note the bar looks like a fun place to hang out for a drink. read more

YES and NO!!!! I'm very happy that this establishment is now at Gunbarrel (finally another place to eat)!!! No, because my belt can't simply stretch out further!! Came here for a quick lunch break from school. I was promptly seated, there's plenty of room and is the biggest one I've been to (compared to the Denver and North Boulder location). I ordered a Caesar's salad and the small Proto's Pie ($6). Unlike other chains, I didn't get a chance to see if they had the lunch special available (side salad, pizza, and non-alcoholic drink $12), but wanted the Proto pie, so I didn't care. The waitress was very friendly and attentive, she did a great job! The wood oven pizza came out hot and fresh, the pizza tasted great. However, I can't say that the Caesar salad was the best, it tasted more on the tarty side, the whole bowl had one anchovy in it, and the ciabatta-flat bread like crouton tasted a lot tougher than crispy. Overall, I'd recommend this place to anyone around this area, it's worth the drive!! The pizzas never disappoint me, and the service was awesome. I may have to forgive the salad and give it another date, but for now, I'm just going to stick with the pie! :-) read more

YUM! Love this place and the low-key vibe too. Staff is friendly, and you can watch your pizza being made which I really like. The Goombah pizza is one of our favorites, it has prosciutto and capers on it and the whole thing just tastes great. The pizza menu has about 15 to choose from and a build your own option too. You can get them in different sizes, every time I've been my boyfriend and I each get a medium sized (we eat a lot and we always go when we're starving) we almost always have a piece or two (each) of leftovers! They've got a decent selection of wines and beers, and a bar which people sometimes come to sit at and watch sports. I just love that it's freshly baked yummy pizza and it's close to where I live! I love the Proto's in Longmont. This Gunbarrel location doesn't have a wood fired oven, but a decent gas one. My pizza wasn't brought to me right out of the oven so it wasn't quite hot enough for my liking. Maybe most people don't care if their food is hot or not, but I do. Absolutely delicious fresh pizza! The crust is just the way it should be, light and thin. The ingredients were fresh and yummy. I had the white pie with Italian sausage and it was perfect and reasonably priced! The drinks were great, a cape cod and Italian soda. I regularly come here for lunch with coworkers, and we always have a wonderful time. Their lunch menu is the perfect portion for me (a personal pizza and a side salad), although several of my coworkers with get a larger pizza for themselves and eat most or all of it. They have a good variety of toppings, their combinations are both unique and delicious, and everything comes out fast and fresh. The staff is always helpful and friendly, and I've been told they have a good beer selection as well. Highly recommend them! read more

Horrible! $28 for a cold take-out pizza with very little sausage and the added pepperoni might have been an ounce. Maybe a 1/4 cup of cheese. It was about 7 pm and maybe they were out of EVERYTHING, but at least give someone the heads up that they are serving junk. Never will return! Caesar salad Ok, but anchovies was stated in the menu.
