In the US, calling yourself a Nepali restaurant means taking a standard North Indian menu and adding momo and some Chinese dishes. In Nepal, they eat a lot more than momo. Mountainous regions in poor countries often use forms of protein that Americans don't particularly care for. (Fill in the blanks yourself on this one.) Doing that in the U.S. would be commercial suicide. At one time, Mount Everest had goat intestine on the menu. Goat intestine is relatively un-shocking given other items that Nepalis hunt or butcher and eat. The goat intestines did not sell well and had to be removed from the menu. So mostly what you get here is a plain old North Indian restaurant. Fortunately, Mount Everest is a very good plain old North Indian restaurant. * * * The headline story here is spice. A. Lots of it.
