They took 15 minutes to be ready and smelled incredible on the ride home. While it may not look like a lot in the picture, trust me, it is. The portions are so generous and you are sure to get your money's worth. The noodles were mouth-watering. They were so saucy and flavorful, and the perfect chewy texture. This spot does not skimp out on the shrimp too and the vegetables are cooked to the perfect softness. Absolutely an amazing spot and I still think about it a lot haha.

Okay, so we order two things: the S3 and the Spicy Garlic Tonkotsu Ramen, and here's what U think about each: Tonkotsu Ramen: -The Meat doesn't have a huge initial, impactful taste, but the flavor settles in a couple seconds after you bite it and it's a very soft, warming feeling. -The Broth is where the spice is, and it's not like "oh my mouth is on fire" it's the type of spice that hits you in the back of the throat, so it's bearable but I couldn't chug it personally, I had to take sips which is nice for someone who devours their food like there's no tomorrow (like me). -The Noodles are.. just your typical Ramen noodles, nothing special to add there but nothing bad to say at all! -The Egg, although not marinated in soy sauce like some places do, was cooked well. The inside was soft and gooey, but the white was fully cooked. Hot, fresh and crunchy. We took the other two and my Pho back to our hotel. When I opened the Pho, the soup was in one container and the noodles and oxtails were in another. Jalapenos, basil, bean sprouts and lime were in a plastic baggie. The flavors were good. The oxtail was cut in an unusual way but had the right flavors. Despite being a smaller restaurant with a lot of various dishes/soups....I was worried that the broths would taste "stale" since they might not have much turnover. However everytime I've dined at Pho Gabo this has never been a problem as if they cook everything regularly in small batches sorta like how Ha VL does it It was a very good rendition at BCC, especially for Portland only 2nd to my mom's version (no seriously my mom's version is S tier). Lots of crab and other ingredients like quail eggs, mushrooms, and a very very good pork loaf "cha." The cha here is really really good and that's saying something bc it's not something I gravitate to.
