Proteins all served at correct doneness in the Pho Dac Biet so you get the tougher cuts well done and rendered and the thin steak raw so it cooks in the broth. Great side accompaniments, Thai basil still on the stalk and living, fresh bean sprouts, Sri Racha and chiles in oil depending on your tastes, squirt bottle of hoisin. The only tiny nitpick I have is I wish they had bigger spoons available for those of us who like to mix sauces and soup in the spoon instead of muddying up the bowl. Also Vietnamese coffee is prepared old fashioned, not in a boba cup where you can't tell if it was made just now or weeks ago. Great service. This is a tiny little joint which is exactly what you expect from a world class Pho place.

You go in and take a seat, eat your food, then walk up to the cash register on the left side of the restaurant when you're done. Oh and it's cash only, no check or credit card here. So I had the House Special #2 Pho whoch included beef steak, flank, tripe, and meatball for $13.95. I also ordered a side of egg rolls for $4. And the Bubble tea for about $4. I'm not sure why the price all of thar somehow became $26 which annoyed me that the fees weren't transparent. Now despite expecting hold in the wall prices, Pho Ca Dao is pricier than expected. The…read moregood things: very inexpensive, the roast pork in the pork banh mi is juicy and flavorful, and the bread is on point, a perfect baguette. So why three stars? Taste and volume! The banh mi was like 75% bread by volume -- I had to hunt for my pork to make sure it was in there. But even the veggies were less than I'd expect, and they tasted more like raw shredded carrots/daikon than pickles. There wasn't a good balance of filling to bread, nor was that beautiful contrast of fat, acid, crunch, and sweetness that IMO defines the proper banh mi. Similarly, our fresh spring rolls were solidly sized, but they were primarily filled with noodles and bean sprouts -- with no mint or basil! I have trouble understanding a spring roll with zero herbs in it. If this were the only option in the neighborhood, maybe, but with Tau Bay and Lu's right next door, this will not be my go-to.

For the record: they make the best banh mi in the United States, especially for vegans. This hole-in-the-wall is a staple for quick, delicious, inexpensive Vietnamese dishes with numerous vegan options. They don't label their vegan options, but do call out the vegetarian dishes (most of which are vegan, but ask questions to be sure). The deli revolves around their delectable banh mi. For vegans, you can get a tofu, mock duck or curry mock duck sandwich (mock duck is seitan from a can); just make sure to specify "no butter" and you got yourself the best vegan banh mi in the United States. The tofu banh mi ($4) is ridiculously cheap but oh so good. The tofu is fried and lightly covered in a savory soy-based sauce; the carrots, cucumbers, cilantro and daikon are fresh. And the bread---oh man, this is the best Vietnamese baguette around. It's light, flaky, warm and delectable. The vegetarian (vegan as long as you get rice noodles) noodle soup ($8) is hearty, savory and delicious. I've been living in Southern California for the last 7 years and there's no shortage of banh mi in this area. But none of them match the one in Minneapolis.

I ordered the pho, which was simply beef and meatballs. The broth was homemade, basically the same as what a Vietnamese friend made when they had our family over. Yes, you have to adjust the broth, if you're into pho. And yes, you have to ask for the fish sauce, and the sugar is in packets. The service is impeccable. The dining room is in order, without stacks of boxes in the hallway, and clean. There's plenty of parking. The bathrooms are clean. The owners treat you with kindness, a smile, and gratitude for your business. All these things count a lot nowadays. By the way, their homemade Tiramisu is out of sight! Warning - rant and support for local business: I was sad to read all the 1 star reviews. Most of it was for the blandness of the broth, and comparisons of this place to authentic spots in Frogtown, St. Paul. A little bit of history: they were here long before Maplewood Mall food court is now filled with Asian fare; even before Pho King showed up in the food court for those who remember. Back then, Vietnam Star was the only viable Asian option in these parts. By these parts I mean around Maplewood Mall and Costco. Here's the thing, the primary clientele here are Anglos, not Asians. In fact, today for lunch I was only 1 of 2 Asians in the dining room. So my expectations are adjusted accordingly. It is not in Frogtown, even though that's technically not that far away. But when you're shopping in Maplewood, Frogtown might as well be in Wayzata. So when I'm around here, I know the food in the mall maybe more to my taste. However, sometimes I don't want to sit in a big mall full of people, watching my back, pay a lot of money for small portions, and be treated like crap on top of it. Sometimes, I just want to go to a nice place, be treated like a human being, and sit down in a booth to have a big bowl of pho. So what if I have to adjust the broth? I'm in Maplewood for crying out loud. Let's all be fair and support local businesses that are trying to make it work.
