Ended up coming here multiple times during my week stay at Copper Mountain. I wasn't expecting a decent bowl of pho anywhere near multiple ski resorts, but I was pleasantly surprised! My wife and I went to Pho Bay in Silverthorne on 03/13/2025. We were seated immediately. The restaurant was very nice and everyone was friendly. Nick came over and helped us with what to order. My wife ordered the egg role bowl, I had the Pork bowl, and six wings with Korean BBQ sauce. The food was delicious. Nick came by several times to check on us. The experience was so good that I went back on 03/15/2025. When I went in, and Nick came over right away. He recognized me from earlier. He even remembered our previous order. I made the same order. Oh Man. How lucky can I be traveling along through the Colorado mountains and stumbling on this amazing Vietnamese restaurant, Pho Bay 2 in Silverthorne, Colorado. It closes at 9 pm, and I arrived just in time to order to order food to go. The shrimp and pork spring rolls , the famous "shaking" beef with rice and the special large bowl of beef soup, aka Vietnamese pho are fantastic and amazingly fresh. I highly recommended these three dishes. I bet other dishes would be great so I will return to taste their tofu or chicken dishes. The restaurant is conveniently located less than a mile of the interstate 70 and has a huge parking lot. The dining area is clean and the decor/ lighting is warm, cozy, and beautiful. The menu is extensive with many enticing Vietnamese dishes. I had a hard time choosing what I wanted so I asked the chefs. "What should I order on the menu. I wanted the best Vietnamese meal tonight." I ordered exactly what they recommended and my meal at Pho Bay 2 was spectacular! The chefs are friendly, helpful, and take serious pride cooking the best food for me, their customers. It's such a pleasant surprise finding a Vietnamese restaurant in a remote city like Silverthorne, far from Denver. Being an American who speaks Vietnamese fluently, I appreciate being able to carry on a Vietnamese conversation while ordering food! The people working at the restaurant are friendly, polite, and happy. They make delicious meals for customers. The ingredients are fresh and the plates of food are beautiful and super tasty and healthy. I can't believe that I can eat a home meal like at Pho Bay 2 while traveling and visiting Colorado. As a socal gal where we have tons of amazing pho options in Orange County, I was a little skeptical about trying this place out. Starving and tired after a long day of snowboarding, my husband and I decided to check it out. Got here around Friday 430PM, tons of seating available but filled up quickly as we were leaving. Service was great, food was amazing and one of the better Asian spots I've tried in Colorado. They give you a pretty good amount of meat for the pho. The broth did lack a little bit of depth, but with the help of the sauces and limes, your broth will be amazing. The broth was a little oily, which is something I don't mind but if you don't like that then maybe this isn't the place for you. Def will be back when we're in the area! read more

Coming from Orlando (second largest Vietnamese population in the US), I am spoiled with the choices for pho and other Vietnamese dishes here. That being said, after a long day on the mountain, it really hits the spot for a nice and hot bowl of pho. We stopped by here along our way back to Black Hawk and was told to sit at a table. We did not have anyone greet us for at least five minutes. When we were greeted, our server took our orders but couldn't answer us if they have bun bo hue or bun rieu - very strange for a Vietnamese restaurant. The broth was very sweet, quite unusual for me since I prefer a balanced broth whenever I eat in my local market. The meet was good and the greens were fresh. We found this place by mistake. We were in Leadville for a snowmobile tour in the mountain. In our way back to Denver, we were starving and I asked help to my favorite app: yes, you got it! YELP! We stoped there. The place was full (good signal) and even the line was very long, in 20 minutes we were seated in our table. We ordered the mussels, PHO and steamed dumplings. Everything was great! Can't get any more ski town than this when you can have pho served at an American style bar... But hey having a pint while you're waiting for your hot noodle soup isn't too bad of an idea. We came in at a bustling time (right after all the ski resorts close) and so many people had the same idea of eating dinner afterwards. We had to wait a little bit since they were clearly shorthanded and didn't have time to seat people, but eventually we got our fun seat at the bar. Service overall was okay but also understandable given the situation - they were pretty straightforward and not too friendly to everyone. We got the medium combo pho and once it came it made me regret not getting a small since there was a TON of noodles in this bowl, so honestly it's decently value given its $17 price tag (kinda steep for pho), I was also very pleased with the flavor of the meatballs, tendon, and thin sliced beef in there.
