The dish comes with a thick flat super chewy ribbon noodle. It doesn't look like a big portion, but the noodles never seem to end! We particularly loved the aromatic garlicy spicy oil, which was full of umami and slightly sweet. It coated the noodles perfectly without making it seem like a noodle soup. The spice doesn't hit you at first, but sure enough it comes back with a vengeance. Be cautious if you decide to up the spice levels! It comes with quite a bit of seafood - scallops, baby abalone and crawfish tails. We've never really had crawfish tails in Chinese cuisine, so this was quite interesting. Make sure to suck on the tail before you de-shell to really get all the umami, and then dip the tail back into the spicy oil for a burst of flavour. Surprisingly, the chewy texture of the seafood complemented the noodles really well. Customer service here is impeccable. We saw nearby tables with phone holders, which we suspect you can request if you want to eat and watch your videos in peace. The staff also hand out individually packaged plastic bibs and gloves to avoid the oil from slashing onto your clothes and will top up your napkin supply without asking. The restaurant has a couple of tables but noticeably, some long benches that run throughout. We were sat in the middle, and were asked kindly by the Owner to move to the end of the table once a bigger party arrived. We had no issues with this, but the Owner decided to give us free pop and apologized for the inconvenience. So nice! Little surprise - there's a Beef Noodle Special after 8:30pm on Monday-Thursday.
