My lovely lady and I decided to go with the custom hot pot option where you grab a large bowl, go to the custom bar and choose the items that you want them to cook in your hot pot. They weigh all the stuff together and charge $14.99 per pound. We originally choose the House Spicy broth, but my beautiful partner asked the lady how spicy was the broth, and she did say it was actually spicy; so she asked them to downgrade my broth to the Sour and Spicy broth, as it was more mild. I'm so glad she did, as my broth still seemed quite spicy, especially the red chili oil floating at the top. I'm not sure how she was able to deal with the House Spicy level, but she was able to power through it. The sauce station was quite limited, without any sweet options to mix with the spicy oil and scallions. Overall, this place is ok for Tennessee. A dollop of "Momofuku-style/Lao Gan Ma" chili crunch with its savory, salty, spicy, umami nature helped. Uber-tender small bites of white breast chicken sauted and bathed in an earthy sauce, along with carrots, mushrooms, onions, and zucchini. Good - yes. Great....not quite.
