I have been a patron of Pablo's ever since they opened their first shop in the DCPA back in the day. They are a locally owned and operated shop and roaster. This location is where they moved from once they left the local downtown. I like this location because it is bright and comfortable. I am a big fan of their Two Stroke Smoke and Danger Monkey coffees. Their espresso is good but a bit too dark and robust for me because I have developed a taste for a lighter roasted coffee. It still satisfies me in a mocha or latte. Although I understand that they want to encourage conversation here, I don't like that they don't have wifi here. I want to have the option to connect if I am here alone or need to find information for some reason. Not that I have to explain that in 2016. I think this may be the last hold out and they can be quite snooty about it. Buy your whole bean coffee on Tuesdays for a discount. read more

Yo, apathetic baristas, when a customer greets you, responding with a blank stare doesn't show how cool you are, it shows how rude you are. Because I really do like the coffee and ambiance at Pablo's I have given them several tries but I just can't stomach the attitude the counter staff dishes out. I simply don't understand why baristas have such attitude and superiority issues. Give it a rest guys, you work in a coffee shop. Or maybe that's the problem. Either way, I'm over it. Update 2/20- For the past couple months I've been going to Pablo's a lot. Recently I noticed all these black bits on my coffee. It's becoming worse to the point of bothering me. Today I noticed all the black bits already when I was handed my coffee, but waited till I got to work to take a pic. Is this normal? This was not the case a month ago.. I haven't been able to stop thinking about this place since I visited last week, so I went with my roommate today to study. This time I got an iced coffee, and I was exceedingly impressed with the taste and quality of the beans.... I had several "oh my god" moments! I also wanted to order a pastry and tried the lemon currant. Heaven. Then only negative is that they do not offer wifi.. at all. For many this would probably be a negative, but I didn't mind at all. You know that blurb in your profile asking what your last meal will be? Mine will involve a bucket of Pablo's coffee. The first time I had Pablo's coffee I was at Steuben's. I asked the server what kind of coffee I was drinking because it was the best I'd ever had and she told me it was Danger Monkey (yes, that's a name of a blend) by Pablo's. I can't believe it took me so long to get to the source to have more. I am sans caffeine these days so no more Danger Monkey for me (they only have a Mexican blend in decaf), but the decaf was truly delicious. I bought a pound while I was there to have at home. Let me tell ya, that was the richest, most flavorful decaf Americano I've ever had...nice and caramelly too. It was so good that I went back for a second cup. Hey, it's decaf; I can do that. :) The cream and sugar bar had a wide variety of goodies and other sundries, the service was excellent and the atmosphere was relaxing and even a little homey. My buttocks will definitely be taking the trip from Lakewood when I need grounds and I can't wait to try their burritos as well. read more

So I moved away and then moved back like 2 years later and SHAZAM! Pablo's isn't just still there, but thriving. They've increased the seating space from my previous stint nearby by moving the roaster out to its own space and they still took my 2 year old frequent coffee drinker card. I also get the distinct impression that the dude working the register remembers me from before I moved. Now that's awesome. As for the coffee, it's even better than I remember it. The dark roast is just sooo delicious. Oh and the zuchini bread is mouth-wateringly tasty. I've been going here nearly everyday since moving back to town. Very cool atmosphere here for a quick coffee date with my friend and the cappuccino was delicious. We loved all the plants inside and the cool sketchbooks for guests to use on the coffee table. There is art and jewelry hung up and available for you to purchase, which is nice for supporting the community. The space is pretty tight when full but also refreshing not to have a café full of people taking up so much space with their laptops. Come here for a chat and not to work (no WiFi). read more

O Pablos, I am still a fan. If given the choice, 99.9% of the time I will get your beans above all other offerings. (Just in case you out there are holiday shopping early, you know?) A few months ago they removed the on-site roaster and filled up that back space with some groovy wallpaper and extra seating. Thumbs up. The coffee in and of itself was pretty good. I had a cafe au lait, which was very good. The pastry I had sucked. It was hard and stale.... The service. Well. The barista knew what he was doing when it came to MAKING the coffee, but he was pretty damn rude. No suggestions when we mentioned that we were first timers...in fact, he seemed bothered by us asking for suggestions. Did not tell us when our drinks were ready, they had been sitting at the counter for who knows how long. When 10pm came around, he was not shy about giving us the boot. What kind of coffeehouse is only open til 10pm in that area??? Seriously, folks?? Atmosphere: Loud. I had no qualms with them not having Wifi, since I can browse the web on my phone. But I couldn't hold a conversation in there or hear what my partner was saying b/c it was SO loud in there....the music was loud, the people were REALLY loud. Considering Pablo's was on the top 10 indie coffee shops in the US by Huffington Post, I went in there with much higher expectations (being a teenager of the 90s grunge coffee house era)...but I was SADLY disappointed. Suggestions: The lumberjack looking barista.....needs an attitude adjustment. I work in the food industry and it is NOT cool to give attitude to patrons, especially new folks who are asking for suggestions. Word of mouth is the most powerful advertising out there and while the coffee was really good, the service really drug the rating down. It would also be nice if y'all had more sugar free syrup options. There are a GREAT many of us that can't have the sugared stuff and you leave very little for us by just offering SF vanilla. Also....given your proximity to downtown and Capital Hill...and you're only open until TEN at night...might want to consider extending hours!! Good things: The coffee. It was good...at least mine was. My partner had the Vietnamese coffee and she thought it was too sweet. We might be back, maybe earlier in the day to see if the service is any better, the pastries are fresher and to try out the regular house coffee. Not my favorite place, though. read more

As I've said before, I usually have a problem of giving coffee shops less than 3 stars since in general I simply love the coffee shop atmosphere and product. And as I entered Pablo's, I thought I would again be giving high-ratings and high-fives all around to another coffee shop. The prices here are decent, but four things ruined this place for me: 1: The dread dude behind the counter was mad surly 2: I ordered black iced tea and got iced jasmine green tea. discovered this place yesterday. My husband is a fanatic, he goes buy bean coffee there and has some grinded for the new expresso machine. There was nobody seating (7pm not a great time for coffee time either) but a constant stream of people coming to buy their beans. I thought the place was nice even empty. Update : still going there every other week to fill in coffee order from husband. I tried several other coffee bean providers, but he wants Pablos' (so that's what he gets). Service can be slow at time because there is usually 1 person only but i prefer that than the overly chipper chain cashier. read more

Just stopped by for an iced toddy coffee. I wanted to like Pablo's, but I wasn't blown away. The coffee was excessively bitter, almost like the beans were over-roasted. Two packets of Stevia and the taste was still overbearing, and not in a good way. My friend and I cruised over there this Sunday for the Second Annual Pancake Benefit the African American Community Center. For $7 it was all-u-can-eat pancakes and coffee. We were thrilled to see a sign that read "sausage" but we got there at 11:45am and missed all the lovely meat sticks. I HEART SAUSAGE. We were almost in tears. What a tease! If you go next year I'd recommend going early. The sausage looked lovely. How do I know? Where there were a few stragglers that were left on the table (fallen off the serving dish). I'm really sad that I'm absolutely disgusted by the quality of Pablos' product. I really wanted to like the place, but I simply cannot. Seems like a pretty cool atmosphere, laid back folks and whatnot. Maybe because I'm an ECer I am a little more high strung and in a hurry, but I stopped in around 7:15 AM to grab a chai before work and there were only two baristas working- it was crazy how long I had to wait before I got my chai. Now, I wasn't in any particular hurry, so that isn't *such* a deal, except when I got my chai, it turned out to be simple warmed and frothy milk! Literally so disgusting I'm not sure I can finish it. There are no spices, no NOTHING. I'm not sure if they just forgot to put in the chai or if that's how Pablo's really makes their chai. One way or the other, $3.50 wasted. Pablos doesn't have wifi and that's one of the reasons that I love coming here. They have pretty tasty coffee and there are people that actually talk to each other and staring at their computers like Zombies. Also, there are businesses nearby with wifi, so you can get a wifi password from the cigar shop across the street and then use it at Pablos. That's what I've done when I wanted to use the internet there. Also, there are a lot of go players that frequent Pablos and that makes it somewhat easy to find a game. read more

I really love coffee. I can't live without it. I tried once, and let me tell you, it wasn't pretty. I have had all kinds of coffee from Pablo's and have never been disappointed. I also love that you can come to Pablo's, get your cuppa and veg, or meet people and sit and chat without glaring from behind the bar. I also love the staff at Pablo's almost as much as the coffee. Pablo's is still ok, but it has nothing on the new wave of quality obsessed coffee places that have hit this town in the last couple years. The beans are simply over-roasted. They get away with doing Vienna or French roasts on all their coffees, which is kind of disappointing especially for the single-origin African beans they get in. For some reason however, the coffee doesn't taste like charcoal, and it actually still has some body. It's rather that the over-roasting makes all their beans taste quite similar (ie. they've lost the single origin characteristics). And I actually do like their macchiatos. They are definitely potent. And priced well. The last annoying factor is that they are anti-wifi. I understand it's to facilitate community, but seriously I don't even come here ever anymore because of this fact. Sometimes, I just want to sip my coffee and do some work (the two go hand in hand) and that's simply not a possibility without wifi. Trident in Boulder has the same philosophy but at least they offer it. read more

Top notch coffee stop in Denver! Pablo's does their own roasting, which I discovered they had to move to a separate location due to their increase in demand (good sign of good coffee). I stopped in for latte and scone to check the place out and was quite impressed. Pablo's seems to have the total package here: good coffee, good pastry/food options, good location, good atmosphere, and good staff. The barista was super helpful and produced a poweful latte, complete with "froth art" in the form of a cute little leafy thing. It tasted as good it as it looked. I accompanied my latte with a raspberry scone that was equally good. They offered several flavor options, including vegan (which doesn't help me as I really like butter!) as well as a breakfast burrito and similar food options that looked tasty on the tables across from where I sat. The place has big window with lots of natural light, and plenty of indoor and outdoor seating. The east 6th Ave. vibe was in full force with a mix of YUH's (young urban hipsters) complete with their skinny jeans, tats and scraggly beards, some young ladies coming from yoga class and some business folks stopping in for a coffee break between meetings. The atmosphere encourages you to stay and hang out for a while, while enjoying your beverage of choice. Pablo's ranks high in my book of places to go for coffee. Will come again for sure. The coffee here has always been good. The vibe great. HOWEVER, some of the employees here are about as nasty as it comes. I go here (used to go here) a lot, 3-4 times per week. I would buy coffee on Tuesdays for the discount. The last time I went in I bought a pound of beans from the redheaded guy who works in the evenings, and he was fairly busy so I took my coffee to my table. Ten minutes later when I was ready to leave I walked up to the counter and started to pick up the coffee labeled the same as what I ordered and he snapped at me "That is not yours. NOT YOURS AT ALL." I politely asked him where mine was and he said "over there where I called your name five fu***** times." He said this loud enough that several people overheard, including my kid who was with me. At no point was I rude to him, and I tipped with my order. I'm not going to kiss some hipster's ass who thinks they have a license to be a complete jerk just because they sell independent beans. I'm happy to go elsewhere from now on. read more

First off, I'm not a writer, artist or Democrat, so I typicaly don't like to "hang out" in coffee shops. I'm also not a coffee snob, I usually save my money on weekdays and drink the crap coffee at work. So, having said that, I did meet a friend here for an iced late on a hot day. What do you know...there' a line out the door. They've got a number of tables, a couple couches and some outdoor seating. The iced latte was pretty good. They play some chill music, but not too loud and not too quiet to hear over the hum of all the other conversations going on. It appeare all they had to eat was sweeter items, which is a bummer, but I did go in later in the morning, so maybe they have some non-sweet items and were just out? Overall, a good place to get a cup of joe and convese with the homies. I can see why this place is always pretty busy. read more

The coffee is good and the prices are pretty much in line with most coffee shops. The atmosphere is nice and the decor definitely screams coffee shop, which is a good thing. Not a bad place to relax and have a caffeine injection. The iced mocha I had really hit the spot. There are two major problems that force me to give a 3 stars instead of 5. I don't know what the deal is with the whole anti-wifi thing, but a coffee shop without wifi these days is crazy. The coffee isn't THAT good to give up what is pretty much mandatory these days. Also, the selection is pretty limited compared to similar places, and the selection of munchies is minimal to say the least. There are quite a few good coffee shops in the Denver area, and pretty much all of them have wifi along with the good coffee, atmosphere, and a bigger selection of drinks. I can't believe I didn't know this place existed. I can walk to it from my house! My coffee intake has gone up about 300% (approximately) since discovering this place. Mostly I come here to buy their excellent beans to brew in my home. I like their single origin African and Mexican beans as well as the breakfast blend. AND I believe you get $2 off per pound on Tuesdays. Their espresso drinks as well as their daily drip/press pot coffee is also excellent. If you want a 8oz cappuccino (and not 12) I'd specify by ounces when ordering because I have received a 12oz when ordering "small." The scones are really good, too. Light, fluffy, sweet. No wifi. They do this on purpose to prevent wifi-hobos from camping out indefinitely. I am OK with this. They also have a small parking lot! read more

This is where I went for my coffee while visiting Denver. They roast their own, which is nice. Wonderful coffee -- smooth, flavorful, not burnt! Staff was really friendly and made excellent drinks. Every morning that I get coffee before work, I go through the "Pablos or Daz Bog" routine. Daz Bog usually wins out because it's closer, quicker, has the most friendly staff, and those little pastries that cost something like $1.25. But every now and then, I find myself moseying towards the Pablos. Why, you ask? Simple: the coffee is better. Danger Monkey is my favorite Denver coffee (although I do need to explore the Novo a bit more, to be fair). If I want to get a latte or cappuccino and really enjoy the flavor of the espresso, Pablos is my go-to place. Their dirty chai is also my favorite that I've had because the chai is spicier/less sweet than a lot of places and a nice departure to the over-the-top sweet drinks that I'm slightly partial towards. Also notable is their croissants/pastries - these are the big, flaky, don't-plan-on-eating-lunch kind, particularly the one filled with almond paste. I also recently discovered their spinach breakfast burrito. It's pretty big and oozing with eggs, potatoes, veggies, and some sort of sauce. Who knows what it's comprised of, but it's delicious. Some of the baristas/cashiers are super funny and some are more stand-offish. It's hit or miss. If only you were a hair closer, Pablos, and didn't get such long lines, and maybe had mini pastries, I'd probably be yours. But for now, I'll carry on with the flip-flopping. read more

Pablo's is my favorite coffee joint in town. As someone who doesn't really get any kick out of corporation coffee places (that shall remain nameless....), Pablo's is the antithesis of those places! They have mix matched furniture, paintings by local artists for sale on the walls, and their walls are often painted bright colors (although I think recently they're painted to not AS bright colors). It's a great place to meet up with friends, meet someone new for the first time, or get a little reading or work done. I'm more of a tea drinker than a coffee drinker, so I can't comment on the coffee. That being said, I will say that I haven't met a tea there I don't like. They have a wide variety of teas, and all teas come in a small individual tea pot that you can use for 2-3 cups of tea (without having to get up and ask for hot water refills). The staff is mostly friendly, although a few of them are um, less friendly than others. Fear not though, I've never met anyone there who is rude and even the less social workers fit into the vibe of Pablo's. You can't have a cool, eclectic, anti corporate coffee house without some alternative too cool for school kids running it, right? ;) read more

I honestly didn't have an amazing experience here and it's not worth it for me to return, though it seems to have a loyal following. I stopped in on a Saturday morning to a fairly short line but rather long wait. The line doubled by the time I left, so I am glad I arrived on the earlier side. The coffee offerings are very basic and also on the pricier side. I paid $4.50 for a dirty chai and it was just OK. I'm on the search for the perfect local coffee shop and this one fell short. read more

The thing I was most amused by is that I ordered a large coffee for there and it came in probably a 20oz glass tumbler with an insulator awkwardly forced over the bottom of the glass. Not sure if all the others were dirty and that's not normal, but I hope it is the usual because it was awesome. The coffee was terrific. They have a great patio area and it is patio season after all, so I spent a minimal amount of time inside. This is apparently a great place to bump into people you know. Pablo's is...rather special. It appeals to a certain type of crowd, and when I say a certain type of crowd, what I really mean is the hipster crowd. However I do think they have fantastic coffee, there is usually a table always open, and I can count on getting dollars off per pound on my coffee every week. I love the local feel. I love seeing artwork on the walls, and one time I even got to see an artist in action in the coffee shop. I got nothing done that I needed to because it was fascinating to watch him. It is a family friendly atmosphere so there's a good chance there will be some kiddos. Just smile and nod. And get another coffee. I do think the baristas can become a little friendlier. Maybe it's just me, but I want a happy barista with a smile on their face, not someone who doesn't care to interact with me and just wants to go back to their phone. read more
