Three stars for roasting their own beans, and the cute sunny interior. We buy our beans here and grind them at home because their coffee is so delicious. Its pricey, but worth it because you're supporting local business and not the Starbucks machine (although Im not going to pretend that I dont hit Starbucks up every once in a while when Im hard up for a sugar free vanilla latte). Oh, and they do Vietnamese coffee which is my favorite sweet treat, and not enough coffee shops will do it, so big ups for that! Addendum: The dude who made my Vietnamese coffee went to answer the phone after preparing it, leaving it hidden by the register without letting me know it was ready, so I sat on the couch like an idiot (it was to go) for fifteen minutes wondering what the hell was going on. I went over to my fiance's and said "Where do you want to get coffee!?" She said "Pablo's.... No argument there, I love Pablo's on 6th. We roll over and stand in line, ordering 2 Americanos while admiring the beans over on the side: Coffees from Ethiopia, Brazil, Ecuador, Mexico standing in 18 inch glass jars. I love this selection which is why I come here so often. I get to take advantage of the $2 off Tuesdays often, and with the rewards card, you can get a free 1/2 lb wiht the purchase of 6. I'm gonna buy coffee anyways so might as well get that going! Anyways, back to the ordering of the Americano. The guy behind the counter is a little less animated than Starbucks baristas, but I've come to expect that... I don't really come for the hi-power, hi-smile atmosphere, but it's still nice when I do get that. I grab my coffee at the bar next to the espresso machine and Anna follows closely with hers. We go and sit at one of the roundtops, which are wood laminate with coffee stains impressed in the wood . I observe to Anna that they have replaced the couches in the corner with some nicer cosier, couches... nice upgrade! The rest of the wooden chairs in the middle of the restaurant are still harder, so I woudn't lounge too long (i.e. to read a book or do work for hours). I start sipping my A'co, and I'm slightly surprised.... It feels off. The flavor is a super dark roast, and the mouthfeel isn't what I expected... less silky than other A'co's I've had. I dind't think much of it until Anna said hers tasted super harsh too. She actually went back to the counter and replaced hers with a drip. I finished my Americano, thinking that it was no the best one I've had. What I do want to impart to you, dear reader is this: Regardless of this experience, I've come to Pablo's often enough that I love their whole selection of coffees to buy and take home! I don't love the coffee selections here, with one exception: The Veitnamese Coffee is awesome. I also like the outdoor seating. No WiFi is super lame. They better change that. I've been to Pablo's close to 20 times in the last couple of months, and while their lattes are some of the best around, the attitude is getting old. Its not that any of the employees are outright rude, but its tough to get more than a "hello" out of their mouths. In all of the times I've been, one of them has yet to try and strike up a conversation. Slow times, busy times, it really doesn't matter. Maybe its my lack of tattoos? I really do love the coffee here. I've never had a bad drink, and the baristas absolutely know what they are doing. I just don't know how long the coffee itself will be enough to keep me coming back. read more

Errr....what happened to the latte art? Not even a simple heart...we wanted to purchase some beans to take back...was hoping to try some coffee via press. But apparently....they cannot make anything that's NOT on the menu...so how are we supposed to purchase any beans without tasting it? I've always been a big proponent of local, independently owned coffee shops; particularly the ones that have some character in addition to serving a good cup of java. Pablo's just happens to be such a spot. The atmosphere at Pablo's is very laid-back. The walls are lined with artwork by local artists (which is also available for sale) and the staff's music choices are always eclectic and tasteful, but not overbearing - you can still get some reading/writing done and not be distracted. There is ample seating room with tables, couches and a small bar area. They also have a nice outdoor patio that is perfect for beautiful summer evenings. The coffee at Pablo's is wonderful. They roast their own beans, which you can also buy in bulk. And, Danger Monkey is a pretty cool name for a coffee roast. It's is dark, smooth and flavorful. When you buy a cup of coffee at Pablo's, you also get a free refill. Not many places offer that. In addition to coffee and tea, they also carry a selection of delicious pastries like scones and croissants, as well as a few other food items. One thing you won't find at Pablo's is wi-fi, and that's for a good reason. This place seems to take pride in being a neighborhood coffee shop with a setting that encourages creativity, conversation and interaction. You can bring a book to read, a journal to write in, a sketchbook, or a friend to talk to or play chess with. Not that there is anything wrong with having wi-fi, but there are plenty of other coffee shops in the area that offer it. I'd sooner spend my money at Starbucks. the staff was unfriendly from the start they seemed annoyed as soon as I walked through the door. the pastry case looks a mess and unappealing. and with such a short menu I thought for sure the quality would be better but this was not so. in general my experience of Pablo's Coffee was vanilla and unimaginative. typical white try hard coffee house that underwhelmed my senses. there are too many cafes in Capital Hill to warrant a second visit to this establishment. read more

I totally heart this place. AMAZING coffee, the baristas are coffee wizards, and you won't get the evil eye if you linger for an hour or two over conversation... or if you happen to be studying for mid-terms! There's definitely a mix of folk here: young professionals having "strategic" meetings, antique bicycle-riding hipsters, neighborhood moms, students, people furiously typing away on Macbooks, and some middle-aged peeps. I think the diverse client base is a testament to the product: the coffee rules, and the people behind the counter are friendly and informative WITHOUT being pretentious. They will also quite often change the music playing overhead when they find a particular song annoying. One of my favorite (and random) aspects about the place is the fact that they have ancient McOld dictionaries lying around. I come from a long line of English teachers, so this makes me strangely happy. Local artist work usually covers the walls, and the seating is eclectic in design. I prefer to sit at the tables versus the higher tables with stool-seating. Also, it tends to get busier around 4:30-5:00pm during the week when I have been there. Tips: Try the teas, as well! They also offer baked goods, i.e. big cookies, croissants, scones. No wifi. Bring a book or a friend instead! read more

They roast their own coffee in house, which is pretty good, but the staff has the classic independent coffee house arrogance that crawls right up my spine. I spend way too much money at Pablo's. But that's ok, it's worth it. I live down the street and have tried almost every coffee shop within a mile's radius of Cap Hill, and none of them stand up to Pablo's. So even though there are closer shops, I go the extra distance for Pablo's. With that being said, there's almost always a line, which sucks. And never a place to sit, which is cool for me, but may suck for you. Also most of the people working there will give you the side eye through their smudgy hipster glasses, so if you're not wearing a Zoobilee Zoo t-shirt and a monocle, you may not get as much respect. ( I would totally love a Zoobilee Zoo t-shirt btw). If you like coffee, you'll like Pablo's. Death before decaf! I love coffee. All kinds. In my world, coffee can move mountains. I can't wait to get up and drink a beautiful cup of goodness. Pablo's is what a coffee shop should be- No internet and damn good coffee. Drink up and have a conversation, read a book, make some art- that email about the viral cat video can wait. They have frequent buyers cards for bags of beans and cups, which is great when you start thinking about the money flying out of your wallet when you have a coffee habit. read more

Fantastic Coffee Here! I suggest this to all coffee-drinking out-of-towners! I went there for months before even realizing they don't offer wifi! It's a true cafe. I enjoy the atmosphere. I stopped going there for about a year because there was an incredibly nasty cashier!! He is gone now and my friends and I feel better about going there. Everyone else is very very friendly and sweet! The art they allow to be posted is always interesting, The relatively new sitting spot is quaint. I saw a mini photo shoot going on in that area of the cafe during my last visit. I like this place so much. The pastries they offer are moist and the prices are more than decent. I am sure there are those that are diehard fans of this place. It's OK for a quick cup of coffee and a meet up. The coffee is t fantastic, they made my americano too watery and it was bitter. Not many choices for creamer (I wanted heavy cream). No WiFi which was a bummer for a business meet up. Limited pastries and things to choose to eat in the afternoon. I heart Pablo's! After getting used to Pablo's coffee, it is really hard for me to go anywhere else. Amazing coffee - roasted right here in Denver. Best of all, I can get a pint glass full - with a free refill - for two bucks. YES. Pablo's is a cozy, slightly-dirty-but-not-gross local coffee shop - if you could smoke inside, it would remind me a lot of the places I went when I was a young kid. Some people study, some people pretend to read...and some people actually talk to each other. There's new art every month or so, and lots of friendly plants all over the place. Pablo's does not have wi-fi. AND I HOPE THEY NEVER WILL. Nothing is better than watching some douchebag yuppies come in, take over a couple of tables, buy *nothing*, and pull out their laptops...only to realize that there is no wi-fi. I've been going to Pablo's since before it was Pablo's. Fortunately, this incarnation of the corner coffee shop has staying power. Two reasons: great coffee and great service. Danger Monkey is an awesome roast, one of my favorites. I've never gotten anything less than a perfect latte. The employees are usually friendly (never rude) but what makes the service great is the obvious pride they take in making a perfect drink. The lack of wi-fi doesn't bug me and it's kinda nice to not be surrounded by people with their heads buried in pixels. I've eavesdropped on some good conversations there, the kind I expect to hear in a coffee shop. I'd join in but I gave up on the revolution a long time ago. Sorry Novo, At this time Pablo's is my favorite coffee served in the Denver Metro Area. With the mild and marvelous black label, the whimsically wild danger monkey, and the subtly sweet mexico, Pablo's coffee is what I need in the morning to get my day going. On E. 6th Avenue, they have their own café. It is a bright brick room filled with plants and natural light (not to be confused with natty light). I'm not sure if they have any food worth eating, but they got the caffeine fix I crave, which is why I keep coming back. read more

Great way to start my first day in Denver in this charming coffee house in a great neighborhood of old houses, tree-lined streets, charming cafes and local businesses. Their Espresso is FANTASTIC! Perfect combination of smooth and mild with just a hint of fresh roasted boldness. I accompanied this with some old fashioned coffee cake and that, washed down with my Americano was euphoric. It was like catnip for humans. The joint is cozy, open and lite with nice outdoor seating and they play good music. The folks that work here are very nice and it is obvious that they get to know their customers. I'm glad I got out of central downtown to come here so thanks Mile High Yelpers for your reviews. Oh, Pablo's. The coffee shop I love and hate. Every time I walk in I feel a vibe of adult teenage angst here. Everyone is so debbie downer, but in a cool "that's what we are going for" type of vibe. The coffee is strong and the breakfast burritos are good. I wish I could rate this a 3.75, because I will always return here if I'm around the area - but I never leave in a better mood like most coffee shops that have over caffeinated peppy people. Pablo's is hit or miss for me. Pros: The coffee is awesome and the breakfast burritos are damn near perfect too! The atmosphere is great for people watching or for quiet conversation with a few friends. Cons: The order line can/will stretch out the door. Seating can be difficult to secure during the morning. The Staff is where it gets "hit or miss" for me. Some of them are super friendly, outgoing, and attentive... When I went back for a 2nd (I accidentally ordered a regular and not a decaf), I complimented him and asked if I could watch how he made the foam art, and he mumbled something, then ignored my friendly request. I asked about internet and got a pretty haughty response,"NO, we DO NOT have internet and we probably NEVER will!" Geez. Excuse me for asking. This is a GREAT coffee shop. Period. It's one of the best I have been to. First some minor details: parking is on the street, there is NO wifi, it's not easy to plug in your computer, and it's on the expensive side with a latte costing $4. But I can certainly deal with all these minor inconveniences for one of the best cups of coffee I have ever had. I'm a big latte fan and that's what I got. It was perfect, not bitter and not too acidic. One of the owners was tending bar and he was very informative. This is a social coffee shop so they consciously avoided having internet installed. However, if you must use the internet there are about 10 signals that you can receive from nearby businesses. You will need to find a way to get a password from one of those businesses if you want to work on wifi at Pablo's. Pablo's also has a large number of house roasts. These are made by the owners and are extremely popular both for having a cup of coffee at the shop and for taking home. In addition to the coffee, Pablo's has a limited selection of baked goods. However, I didn't try any of them. They looked pretty good, as though they are made by hand. With the amount of thought and effort that goes into Pablo's coffee, I would feel safe assuming that the baked goods are also top notch. Pretty inexpensive and tasty. They could use more sugar free flavors. Good place to come and chill on a hot day. No wi-fi for you Internet lechers. They were also at Yelp's Crafternoon Delight this past weekend and we got to talk to the people who were there representing the shop. I got a chai tea last time I was there since my coffee experiences have been blah. I went here for the first time today and ordered an almond milk latte. It was your average tasting latte- not great and not bad, just middle of the line. The space is great, though- there are lots of tables/couches. I saw a sign that said they didn't have wifi, which is totally fine with me, but the music was way too loud to hold a conversation with someone sitting across the table from you. If a place doesn't have wifi, I would think that it would be more conducive for having a convo, reading a book, etc. I wouldn't go out of my way to come here for a latte again, but they roast their own beans, so I'd definitely be willing to buy some and brew them on my own. read more

Update: another gem.. My daughter was with me when I stopped by to pick up some beans and she ordered a chai, which I usually do not drink as I don't care for the spice flavor. She was very impressed and said it was practically "perfect" which is a complement I have never heard from her. I had to taste it for myself and I admit I actually liked it as well. She even admitted she has become a repeat customer for their Chai... Give credit to their Batista as they must know their trade... I am not a coffee snob by any means although I won't drink instant or brands like folgers. So I guess I lay somewhere in the middle. I do have to say though that this was the best decaf Americana I have had and some of the best coffee I have tasted since leaving Australia. Strong , not too bitter and with a hit of smoke and caramel at the end. We were there on a Friday night and the atmosphere was very layed back and relax. The decor is very eclectic which seems just right for an independent coffee house. If I lived closer I would be there all the time. read more

What a cool place ... I have visited only early in the morning when its nice and quiet so I dont know how service is later in the day . Both times I have had the " shot in the Dark " on the recommendation of the co-worker I was with and it was excellent . A good flavourful cup of bold coffee with a shot of espresso. A good way to start the day . They had a reasonable selection of pastries , and I went with my standby Croissant , always good with a dark rich cup of coffee . Service was good . The other clients were quiet and private, it's early in the a.m. so those folks were just getting started . Not at all like a ( hate to say it ... Starb**cks ) which are noisey, trendy etc...
