It was also fun and educational watching him guide customers and give them a tour of the day's pasta shapes. For me, one of the best marks of quality is when you can look at the pasta and see the texture. You know that means your sauce is going to cover all that surface area, that will adhere brilliantly to your noods. The Cannookie (chocolate chip cookies sandwiching cannoli cream) was way more delicious than it had any right to be. He took the time to explain his techniques and even showed me how he cuts the fresh pasta right there in the shop, depending on whatever style you want. I have family members who are gluten-free--or try to eat gluten-free--so finding a place that actually takes the time to explain their gluten-free options was a huge plus for me.
