After the three-taco dinner, I honestly struggled to reconcile what was on my tray with its Michelin Bib Gourmand recognition. The biggest problem was the one thing a barbecue restaurant needs to get right: the meat. It arrived cold and lacked flavor. The tacos fell apart as I ate them, and nothing about the taste made up for that. I've had considerably better tacos from food trucks. At a place with this reputation, I expected much more. The sides didn't rescue the meal. The cornbread was dry, the mac and cheese was mediocre, and the atmosphere felt lifeless during our visit. The meat should have been the star of the show; instead, it was the biggest letdown. The staff, however, were wonderful--warm, friendly, and genuinely welcoming. They deserve credit, and the service was easily the best part of the experience. This wasn't an inedible meal. It was an underwhelming one from a restaurant I used to enthusiastically recommend. Two stars reflects this visit, and I hope the kitchen gets back to the standard that made me love this place.

Around 10:45 AM, everyone lines up according to their number. We were #24, and it took us almost 40 minutes to reach the front and place our order. We ordered: -1 lb moist brisket -1/2 lb garlic sausage link -1.5 lbs prime beef rib (feeds 2-3 people) -CS tacos with pulled pork (comes with 2 tacos) For sides, we got the coleslaw, potato salad, mac & cheese, cobbler, and smoked beans. I really liked the smoked beans and cobbler! Everything was absolutely delicious and worth the wait. All of the meats were flavorful, juicy, and tender. The CS tacos were good, and I highly recommend getting the pulled pork to go with them. The prime beef rib was the standout for me. They only offer it on Saturdays, so definitely get it if you're there. The staff was friendly and attentive. Despite being busy, they checked on us frequently and even helped clear our table multiple times. What surprised me was that I ordered the Stuffed Potato Salad on a whim and it was out of this world! Warm potato salad (taste way better than it sounds) covered in chopped briskets, queso, ranch salsa, and green onions was so comforting and so delicious, I was crying! I also ordered a 1/2 of brisket and even though I had to take it home to finish work, it remained so tender and moist even after the drive home. The crust/bark was also so flavorful without being too much and I'm glad it wasn't just a hard layer of black pepper that was hard to crunch through. I'm also not really a coleslaw type of person, but their sweet & spicy coleslaw was the best I've ever had. I wolfed that down and would definitely get it again! We all need more fiber in our diet anyway and thankfully this is a painless way to do it (unless you can't handle the touch of spice I suppose). I'd really like to come back on a Saturday morning sometime with another sucker to accompany me, because an hour drive plus an hour or two wait on line is quite a big commitment. But the beef ribs are definitely on my radar and I probably will want to try their turkey, cobbler, and mac & cheese sometime. I'm also happy to say that even though I came late on a Thursday near closing and a lot of things were sold out, they still had brisket and that's my favorite cut of meat. I'll definitely have to swing by next time I have errands around here.

I did notice the quality maybe dipped a little as the hours expanded, but it's still a very good option to some of the nearby establishments down the road or over in the North Main area that tend to have giant queues. The ribs were $12, and my "1/2 lb" consisted of two individual ribs. They tasted good, but they weren't nearly as tender as I've had here before. I paid about $29 just for the meat, and for that price I expected much better quality and portioning. I understand that I came close to closing time, but I still paid full price and should receive the same quality of food as any other customer. If the brisket is past its best or there isn't enough left to make a proper order, I'd rather be told that so I can order something else. I'm not writing the place off because they've been good to me many times before. But this particular order was definitely not up to their usual standard, and the pictures speak for themselves.
