The kitchen of Oficina do Duque is Portuguese inspired with touches of the world, conscious and respectful of the traditional and originally Portuguese ingredients, resurrector of forgotten tastes, restless and experimentalist.
Food as ordinary, soulful and traditional as oxtail, roots, offals and turnip greens found a place in the heart of the extraordinary Chiado. The well-known portuguese cream milk is now perfumed with rosemary. A simple "bitoque" (steak with chips) has a sauce that takes 16 hours to make. Bread is made every morning to be fresh every night.
The ordinary is extraordinary. It is the awareness of this essential dichotomy that has always marked Rui's attitude, which today is the signature of the "Oficina" brand and inspires his career. In his own words, "I live to take the banality off of simplicity."
History
Established in 2012.
From the Oficina do Duque restaurant, which opened its doors in November
2012, much has changed to become the space where Rui Rebelo is true
to himself and of which he is the single owner.
Recently he completely changed the space, transforming it literally into a
workshop dedicated to the cookery craft in a work that counted on ancestral
techniques of Portuguese craftsmen as well as the originality of national
creatives. Right now, the Chef it rethinking the menu, introducing new
dishes and crafts into the whole eating experience.
Meet the Business Owner: Rui R.
Rui Rebelo, has worked in the gastronomic industry since he was 17.
Born and raised in the heart of Lisbon, he soon extended the geography of his knowledge to Brazil, London and Barcelona. First, at Caxias do Sul University. Later, in a street food truck in London - to unravel the formalism of the Brazilian school - and, finally, at CETT, University of Barcelona, where he took the Executive and Creative Gastronomy Chef Masters, studied Innovative Techniques and Technologies in cookery and Molecular Cuisine. Today he visits Barcelona on a regular basis to share meals and conversations with the mentors who allowed him to walk in the stars.
