I was so excited for this place, and then my dreams and hopes were shattered as soon as I physically arrived at this.. well, words can't really describe. This place touts itself as a trendy noodles place, specializing in ramen and shanghai soup noodles when I first read about them during the buzz of the grand opening of the Boston Public Market. Well, that MAY be the case.. yet I never got to try the noodles they "specialize" in. The reason? Because this place, my friends, is literally a stall, and one of the SMALLEST in Boston Public Market. If you're selling food ready to eat... and you're smaller than the ice cream place, the donut place, hell, even the wine jelly stall right next to you, there's something wrong here. Because of the small capacity of this place, they can only offer one noodle dish at a time - and the day we came, they only had udon. Yes, you heard me. One. Dish. Hence, no menu, so don't bother looking. Now, I COULD be okay with this type of business strategy.. IF they utilized social media better. This place has no official website, and only an instagram account, which has been rarely used. That's it. Come on. If you're only able to offer one dish each day, then you need to use social media to tell everyone what is even being offered - that means create a facebook/twitter page! Second qualm - the actual food quality and time. It sucks. We of course got the udon, as we were starving by the time we arrived and was dead set on trying some ramen. I begrudgingly forgave them for not having ramen and got the udon, hoping at least it would be delicious. It wasn't. I make udon at home better than here, and that's saying something as I'm a horrid home cook. The udon they used was the dry-pack type, so it's more instant than the fresher ones where you have to freeze. The soup base was plain, and the toppings were sparse and underwhelming considering I paid $8 for a small bowl that I had to wait about 10 minutes for (again, small capacity, so they can't make too much at once). I think they have a few kinks to work out in terms of their strategy and menu, so until then, I'll be staying away from this place whenever I visit the Boston Public Market. read more

I tried the pork wonton soup and it was pretty good! The wontons were fresh and noodles were good along with the broth. I haven't tried anything else yet but I will consider. I just feel that it $8 is a little overpriced for what you are getting. I can justify the soup $7.00 because the bowl was bigger than the portion. I believe that they could generate more traffics with small and larger bowls. The noodle lab and the public market was dead. With the cold weather, there is nothing better than having soup! I've had this for lunch at least 5 times in the past. I was in the area for a client meeting and thought to stop in for lunch this past Monday, and the line was long but went by pretty quick. They have a variety of options to make your Noodle Soup. I ordered a combo: Any Ramen & Pork Gyoza. I ordered the Tonkotsu Spicy Miso broth, Toppings: pulled pork, bok choy, bean sprouts and a soft boiled egg. You can choose up to 3 toppings, and add $1 for every additional toppings. When I received my food, I had to make sure they gave me the Gyoza I ordered, otherwise they wouldn't check to see if I received everything I ordered. The sauce that went with the Gyoza was in a separate small container rather than inside the same container as the Gyoza- so I asked for a bag, and the Cashier gave me an attitude saying it was .25 cents extra if I wanted a bag and asked "did you ask for a bag when you paid?".... ummm, No how am I supposed to know that if you didn't even offer me one? Anyway... this totally ruined my experience. I wish I didn't even tip 20%! When I sat down and was about to take my first bite of my ramen... I noticed I got 2 measly leaves of bok choy and a pinch of bean sprouts. For $15... it was NOT worth it! I get it- you're busy during lunch hour but don't be cheap on the toppings! I even got 4 toppings so I paid the extra $1 for 2 baby bok choy leaves!!! WTH. 5 stars for the curry ramen! Two things I really love. The flavor of the curry is more Southeast Asian than Japanese. I loved the fried garlic/shallots. I got the egg, pork belly and pickled mushroom for my 3 toppings and each was perfectly flavorful and tender. The line to order moves quickly but it takes a bit to get your food. Also, the broth is super hot which makes the plastic bowl they serve it in very hot to hold while you're looking for a seat -- just FYI. read more

I love the concept of Noodle Lab and have tried it twice at this point. They've got a couple house made ramens and everything is made from scratch. They also have a couple rice bowls. Tonight, I ordered the vegan curry ramen with bean sprouts, onions, and an egg. This came down to just over $9. Not bad, I thought, for a bowl of ramen that's completely house made. Unfortunately, it was just a OK. The soup was almost pure oil, or at least, tasted and looked like it. While the flavor wasn't bad, the few sips I had made me sneeze and cough because of the heavy spices. Too much oil and too much spice. The noodles were fine but had a doughy and undercooked texture to them. While I didn't dislike Noodle Lab, I also wasn't terribly impressed. (in Boston Public Market) I have been dying for a ramen place in the Gov't Center / Downtown area and boom Noodle Lab opens! It is only the 2nd day so my 3 stars could change. Today, they had the Shoyu Ramen for $7.99 (ramen noodles, 2 slices of fish cake and 2 pieces of pork). Comes out to $8.55 after taxes. The noodles were really good with its soft yet not mushy texture and there was a good portion in the bowl. The broth is just right. Not overly salty. I just wish there was a bit more. The pork was the only big downfall. It was overcooked. If it was more tender and not dry, I would want more than 2 pieces. At least 3. Overall, it's not bad if you have a ramen craving. I would definitely give them another go. If I could make any suggestions, I would probably replace the spoon with the bigger plastic soup spoons (since it is hard to drink the broth with a dinky spoon) and definitely perfect the protein. Not sure if there was an option to add more protein. Again, it is only their 2nd day so I am sure they are working out some of the kinks. P.S. They take card. You can't sit down here. When you are seeking out vegan food in Boston, there are a lot of selections to choose from. I am glad Noodle Lab was one of ours on Monday! The employees made sure that our selections were appropriately selected to meet our dietary requests (rice noodles instead of Ramen; vegan friendly broths), and explained what was included with our orders. The broths we selected (curry and Tom Yum) were very obviously homemade and delicious. The vegetables were fresh and plentiful; my daughter and I selected the standard sizes and both of us were delightfully full without being weighed down. I've been coming to the noodle lab ever since is it was a much smaller stand with one item on the menu that changed daily. I really miss those days!! The food was amazing and each day was a different item which was fun.The people who worked there then were always so friendly. They often gave you a small sample of the broth or sauce which was nice. I used to come sometimes three or four times a week on my way home. It's changed alot over the few years and I'd say not always for the better - with a standard menu and a katsu curry special that rarely rotates. Overall it's a fair bowl of ramen but portions for protein and toppings can be small and pricey. The soft egg is always hit or miss whether it's over cooked or not. I love getting a rice bowl but everytime I ask for broth over the rice they usually give me attitude and try to ignore me, even if I say i'll pay for it. It's more of a larger noodle shop that pumps through the lunch crowd with less attention to quality. I'll still come for a quick lunch on a cold day here and there but I long for the old stand back with the creative menus, delicious flavor, and friendly people! read more

This place turns out interesting variations on noodle soups with delicious and fresh ingredients. To the reviewer who described this as "ramen" - its not ramen. They don't even claim to make ramen. That's like me going into a pizza place and saying "they make very strange open-faced sandwiches here!" It's called Noodle Lab because the owner makes different flavors every day of soup styles, all with Asian influence. E.g., Hakka style, Cantonese noodles, pho ga, pork dumpling soup. I love this place. The owner is there during most lunchtime hours making sure her standard of quality is maintained. The soup size is perfectly filling, which means nothing goes to waste, and I don't have to take a nap afterwards. The only reason I gave them 1 less star than perfect is that I sometimes find the broth to be overly salty. Yes, the bowl could maybe be priced less than $7.95, but you are paying for the ingredients and for the variety. This is my go-to spot for a quick, flavorful lunch in the area. read more

When requesting the correct order, the staff were very rude and almost did not want to correct/acknowledge their mistake. This was very surprising and caught us off guard. I had wanted to try Noodle Lab for a long time and was thrilled to finally get a chance when we stopped at Boston Public Market on Saturday. They don't open until 11 but it's worth the wait. Very authentic menu with lots of choices to add to your ramen or tonkatsu dish. I went with the regular tonkatsu which is surprisingly hard to find. It was ready in no time and so affordable. We came away with a bowl loaded with pork belly, mushrooms, an egg and lots of noodles. The star was the broth. The real stuff that so many places tend to get wrong for some reason. I could drink a bowl of just that rich broth and be happy. Needless to say we devoured the bowl and were tempted to turn the car around and go back to buy another bowl. It was a beautiful dish. If you're a fan of ramen and/or searching for a really good tonkatsu then you need to stop here. I wish I lived closer so I could go weekly! read more

This is a great experimental ramen booth in the middle of the Boston Public Market. I'm in Boston once a week for work, and 2 out of the last 3 weeks I've decided to eat here. Relative to everything else in the market - and in the Financial District/North End part of Boston - $7.99 for a ramen lunch is a GREAT value. I'm used to paying $10-11 elsewhere for ramen that isn't nearly as good. The fact that they only offer one type of ramen a day makes the ordering process super easy. 'I'll have....the only ramen you're offering today, please!' It's a small booth in a larger market, so be prepared to wait to order (especially as word gets out), and then hopelessly look for a table to sit at while you eat. read more

Wow! Their veggie ramen is amazing! It's totally non traditional, in that it is a coconut curry broth, but it is soooo flavorful and cheap! When I get this ramen at lunch time, it does make me want to nap at my desk afterwards, but it's worth it. I usually get this with the bok choy, edamame, corn, and/or spinach in an attempt to get some veggies in. The broth is the best part because it is super rich and flavorful. It tasted like pho which was great cause that's exactly what I was craving. Soup was made pretty fast but my one and only complaint is that they didn't fill the container to the brim. There was too much space that could've been filled with more noodles/broth. For $7.99 (which isn't bad, don't get me wrong) I better get all the noodles. Would I come back again? Alright so let's cut to the chase here. The ramen is definitely not authentic and it's meant to be fast food. Does that mean that it's bad? Not particularly. They usually only have one bowl that they sell throughout the day and they also sell a few sides like dumplings that you can get. I came on a day where they were selling a chicken curry ramen. I've heard that they don't have ramen every day, that sometimes it's something like rice noodles or whatever. Any way, I was a little surprised with the style of curry that they chose. Usually people will choose Japanese curry with ramen but they chose to go with a Thai inspired curry. The ramen came with potato, carrots, tomato, soft boiled egg and chicken. The chicken was cooked well and juicy so I was happy it wasn't dry. I appreciate the fact that the potato wasn't raw and actually cooked through. What I was most impressed with is the fact that they attempted to soft boil the egg. It was a little over but it was nice that they didn't just full on hard boil. Some criticisms is that you don't a lot of noodles and broth. But hey it's fast food ramen. There's better places that you can get ramen for lunch, however I certainly believe it's better than instantly ramen. The curry did get pretty oily, which was gross, but otherwise tasted amazing. The noodles were really tough and chewy, which can be a pro. Ok. So the product is kick ass. The noodles are cooked just right, the broth is phenomenal in that it is not a big salt lick/it has a perfect balance of flavors, and the add ins fantastically complement the basics. It's delicious, super fresh and served piping hot. The downfall is that this is a tiny 2 person operation--the woman owner cooking and 1 cashier---in an incredibly busy location. I am not exaggerating when I tell you I was about 6th in line and waited over 20 minutes to place the order. And I say "the order" because they only serve one type a day. Wasn't really an issue because id rather they have 1 awesome ramen then 10 mediocre but be prepared to get what they chose for the day. But coming here for lunch during the work week might prove impossible. Anyhoo, the ramen is awesome, the slowness of service blows. I recommend trying them because it is a high quality dish, but I'd suggest you go after the lunch rush if you don't wish to risk your job for the ramen. read more

After wandering thought the Public Market, I decided to order the chicken pho soup from Noodle Lab. The woman working at the counter was very friendly and answered my questions about the dish. I noticed the lady serving me was measuring and weighing everything she put into my soup, including the noodles and chicken. Once I got my bowl, I did notice the amount of rice noodles I was given was pretty skimpy, and even the size of the container was small for the $8 I had paid.
