He wanted the House Made Orecchiette which was a duck sausage but our server said it had a bit of spice but would be manageable. Thankfully, she asked the chef and reported back that it really was spicy so he changed his order to match mine which was the Seared Labelle Farm Duck Breast. Labelle Farm is where they sourced the duck. I love that they know where their food comes from! We both enjoyed the duck immensely. It came with Solo's very own farm fresh vegetables. For dessert, we ordered the cheesecake with blueberry compote. Someone brought it with a candle and said, "happy birthday or anniversary." Nice that they put a candle on the cheesecake but I did say it was our anniversary on the reservation. This one also has an assortment of ramen, noodle bowls and bubble teas. "Hawaii" is a chain with a remarkably large menu. I came in for poke but wound up with a rice noodle bowl, instead. Orders are placed at the counter just like a fast food joint but this isn't really fast food. Most of the food is actually made to order. The staff is really patient. They'll help you navigate the massive menu with many options. If you're dining in they'll bring your orders to your table. I picked thin rice noodles with spicy miso broth and pork belly. I also asked for most of the free toppings and the free hard boiled egg. The pork belly turned out to be a fatty cut. That was on me. Next time, I'll order BBQ pork l,instead. As for that "spicy" broth, they mean it. Next time, I'll also ask for a little less heat in my broth. Still, was a delicious meal which was prepared just for me. I added a large Lycee slushie to my order. It was pretty good but too large. I have to go medium next time. I couldn't finish the meal. I took it home and ate it again for breakfast the next day (I have a cast iron stomach and can eat spicy breakfasts). If this business is part of a chain where are the other restaurants? The manager said most are on Long Island. The Castleton restaurant is the only one in the Capital Region and the restaurant is largely a family-run operation. It's clean, bright, very modern and cute. There's cute wall art. Some illuminated. Others are wallpaper depicting food, pandas and the Chinese god of wealth. This is one of those places with a menu so large that you can keep coming back and not have the same meal twice.

We finally finished the whole transaction (20min waiting for food, 20min spent flagging down the waiter for the check/giving the money), and frustrated we wasted so much time here while on a trip for just OK food, we just left because the server then disappeared AGAIN after settling our bill. Hilariously enough, the only time she seemed to care about us was when we left and she went RUNNING after us to ask us "you did not tip enough, did I do something wrong?" in a rude and fake overly concerned way. After we briefly explained, she proceeds to loudly shame us saying "you supposed to tip me xyz because I provide you a service and if not you're really disrespectful". The audacity. I don't love it when it's just noodles and corn like the cup of noodles that you buy at the store in those styrofoam cups. Kind of a let down.
