    The crust steals the whole show for sure! A 138‑year‑old sourdough starter that tastes like history baked into every bite. I'm a sourdough geek so I was excited to try their pizza! Tangy, chewy, perfectly crisp at the edges. The toppings were good, but the crust was guiding the entire pizza to greatness! All the pizzas we got were a hit especially the chicken with white sauce. Plus the fun drinks amplified the pizza! I'll be back! Get there early cause it's small inside and usually has a line! Oh lastly the tiramisu melted in your mouth with each bite!

    We came in for dinner on Thursday evening and sat at the bar. Restaurant was busy, but it's also on the smaller side. The bartender had a wealth of knowledge and full of recommendations, which elevated our experience. Both of our drinks were fantastic and I appreciated him not sugar rimming my drink because I hate that. We ordered a Caesar salad which was super fresh and refreshing with tons of shaved Parmesan. His pizza recommendation ended up being too spicy for me so I had to pick out the jalapeños like a child. However, it was super flavorful and I absolutely loved the sourdough crust. Overall, we had a great dinner and got to chat with the bartender to know more about the restaurant and upcoming sourdough cinnamon rolls, yum! Plus 1 star for ample parking.

    5 stars!!! The pizza here was killer. My friend that I went with was gluten free and normally gluten free pizza isn't my favorite. Niles Peacock makes a great gluten free crust that had the right amount of crunch and chew. I can't wait to get to try their full gluten pizza as it looked delicious and apparently is award winning. The gluten free cauliflower was also so tasty. It was crunchy and soft and the sauce had the right amount of kick. The cocktails here are so cute and delicious. They are the right balance of sweet and tart. Our service was fabulous. Hope to be able to come again!

    Wow, another pizza place that blew me away! Offerings, cocktails!!, service, efficiency, clean - I left impressed! Met a friend here on a Saturday night. At 5:30, we were lucky to snag a table. The place is small and popular. Love the free and easy parking in the large lot, no street parking woes to worry about. Pros: -meatballs (3)- piping hot, hearty and flavorful -Crispy cauliflower -- served with a dipping sauce, these were perfectly crispy. A tad spicy-loved it! I will order this every time. -burrata salad was light and refreshing , perfect for sharing! -Honey I'm home pizza - delicious flavors, perfect honey drizzle. Good blend of sausage and pepperoni, good portion size. My only teeny tiny complaint is there is a lot of crust. And while it was delicious, I wish there was more delicious pizza and less crust. The service was incredibly friendly, helpful, and efficient. Our server was so happy, she made me happy. She listened and was attentive . So refreshing! Even on the way out in the parking lot, we saw someone else who worked there and he said " hey you were just at Niles and Peacock!" He actually acknowledged us and I thought that was so nice. The cocktails were delicious and served impressively fast. Bathrooms were clean and accommodating! The biggest problem here is deciding what to order. I look forward to returning and next time, I'm ordering the tirimisu!

    Great pizza spot. Went on Thursday evening and it was very busy. We sat outside. Food and service was really good but it was quite noisy so having a conversation was a bit of a strain.

    My coworker that lives in Edmonds comes here frequently and highly recommended me to try the award winning pizzas. I ordered the hunt and gather pizza new york style 16 inch. The sourdough crust seems to be what people like about the pizzas. I am usually not a fan of sourdough so I was unsure of how I would like it. The crust ended up being enjoyable even for me. It was a nice balance of crispy, chewy, airy , soft. The pizza cost $36 + tax so I felt it was pricey but at the same time comparable to other local pizza places. Look forward to trying the Detroit style deep dish next time.

    Great service. Ingredients seemed fresh and tasty. That said, I wasn't a fan of the Detroit style pizza. The sauce was delicious, but seemed like a spaghetti sauce. Much wetter than I'm used to on a pizza. It soaked through the bread bottom, so it was like eating tomato bread. I did like the crispy/chewy cheese baked into the sides of the crust, and the great pepperoni cups. Not enough hot honey on it to taste. (We'd ordered Honey I'm Home Detroit style) We also tried The Prosciutto of Happiness, New York style. Loved the crispy thin bottom and delicious chewy sides. There was plenty of cheese, but not enough of the other toppings. We shared the brussels sprouts as an appetizer. I loved them, thought they were perfect and surprisingly not greasy considering they were fried and had bacon (crispy little bacon bits). Our friends thought they needed to be crisper and sweeter. Good example about how hard it is to please everyone!

    I stopped by Niles Peacock Kitchen & Bar to pick up dinner for my family while we were staying at a nearby hotel. Julie, the education director at Cascadia Art Museum, recommended this spot for its sourdough pizzas--and it definitely lived up to the hype. The place was packed when I arrived. I stood at the counter for a while, unsure of where to go or who to talk to. The bartender nearby didn't notice me, and the staff outside were busy hosting guests on the patio. It felt a little chaotic at first, and there wasn't much guidance for pickup orders. Eventually, I approached someone working the POS near the kitchen, and he was incredibly helpful. He was patient, kind, and attentive from the moment I spoke up. He took my order quickly, gave me a glass of water, and recommended The Prosciutto of Happiness pizza. I ended up ordering that in a 12" size, along with The Garden in a 16" for my mom, the No Bones Crispy Cauliflower, and a lemonade in a to-go cup. There was a brief payment issue--my card declined twice, probably because we're on a road trip and the bank flagged it. I switched cards and it went through just fine, and thankfully the staff didn't make it awkward at all. The food was worth every minute. The cauliflower was hot, crisp, and flavorful. The pizzas had that signature sourdough crust Edmonds locals talk about--chewy, airy, and golden. The Prosciutto of Happiness was a perfect sweet-savory combo with balsamic glaze and scallions, while The Garden pizza was loaded with fresh vegetables and had a great texture. The atmosphere inside is bold, stylish, and full of character. The artwork on the walls is stunning--I believe the owner is the artist, which gives the whole space a personal and expressive vibe. While the start felt a bit unstructured and I wish someone had acknowledged me sooner, the food and the person who helped me made a lasting impression. I'd absolutely return--just more confidently next time, now that I know the flow.

    I came here skeptical but hyped hearing about championship winning pizza with over 100 year old sourdough starter. You're very close to the waterfront which is a nice plus but also means you're going to be spending that premium for food in this area and Niles is no exception. If anything they lean into that more and are extremely pricey for what you're getting. I got the cheese pizza as that's always my go-to when trying a new pizza spot as you can't hide when all you got is your dough sauce and cheese front and center. The dough definitely needs to be experienced as I've had nothing like it anywhere. While it's super puffy it has a delicate thinness to its texture, cloudy and light in a really gentle and refreshing way. However I immediately hated this pizza because the tomato sauce is an absolute abomination. This is thick cooked tomato paste-y tasting sauce that doesn't belong anywhere near a pizza which should be fresh and uncooked sauce that showcases perfectly balanced bright sweet acidic tomatoes. The sauce completely ruins the pizza and made it near inedible for me. Service was great though, friendly and charming as you'd expect from bar staff at an edmons waterfront upscale spot. I got a paper plane that wasn't very good but reminded me I needed to make a proper one at home so I appreciate the reminder. All in all would recommend trying this place for the dough alone but see if they can go light on the sauce or change it to something simpler altogether though that's likely not possible.
