Motto Ramen is an okay ramen restaurant that serves decent ramen and mid sushi. Three of us got the Shoyu Ramen, which we enjoyed. On the plus side, they are generous with their pork chashu and the toppings are good. Their broth flavor was okay, not super outstanding, but not bad. I ordered the salmon sashimi and the quality was average. It wasn't the best salmon, but just okay. We also got one of the build your own ramen bowls with pork tonkatsu broth, classic noodles, beef rib eye, and green onions. I didn't try this but the person that ate this seemed the like it. Service was a little below average. Our waitress seemed very quiet, tired, and lacked energy. I also had to remind her several times for items requested. this place could easily be overlooked in an otherwise busy shopping center. a lot of the restaurants and eateries are closer to the street, while motto ramen is tucked in the back near target. my husband chose this as a dinner spot for a little saturday date and it was very good. we can in around 7:45 and had no problem finding a seat. there was plenty of tables and booths that were slowly filling as our evening progressed. there are a lot of great offerings across their menu that could accommodate so many different types of palettes. there are many preset ramen dishes as well as build your own feature, an extensive sushi menu, a variety of appetizers, rice bowls, noodle bowls, and curry dishes. we shared a deep friend shumai appetizer that came with a bed of shredded cabbage and carrots and a sweet ponzu dipping sauce. these were excellent! very freshly fried, juicy, and flavorful. i was (and am always) craving something soupy and hot, and i was excited to see a tom yum and a tom kha on the preset menu. i ordered the tom kha with udon noodles a side of crispy pork. the pork was exceptionally crispy and crackly. i found it was even more delicious when dipped into the spiced coconut broth of my ramen. it was also really good with the curry sauce in my husbands dish. my husband ordered the pork katsu curry plate. the menu item says "homemade curry sauce with carrot and potato" next to a photo of the dish with those vegetables. the dish arrived without any vegetables and that was disappointing. the rice and curry were very good, the pork was nice and thin, but the panko was a little heavy and again, the vegetables were very missed. for dessert, i encouraged my husband to try the crepe cake (which he fell in love with) and i opted for the yuzu cheesecake. the yuzu cheesecake had a great creamy texture but i couldn't taste the yuzu. even though there were some negative aspects, i would definitely come back here. we're looking forward to trying more of their menu. read more

Haven't been here in a while. Decided to stop by before going to Hmart. We've always ordered the Ramen here. Saw there were more items added to their menu. I was surprised to see Pad Thai, been craving it. I wasn't sure how it would taste because it's not a Thai restaurant. I thought.. what the heck, lets try it. Surprisingly it was pretty good. Also ordered Katsu Curry, Shrimp Tempura, Shrimp Lover Roll and Thai ice coffee. Everything was good except the Shrimp Lover Roll, tasted a bit mushy and bland. I don't know if it was the roll but something gave me stomach issues after i left :( read more

Motto ramen is located in the plaza with target. There was plenty of parking. Got seated right away. They serve ramen and sushi. They had a build your own noodle and you can choose from different broths, noodles, and toppings. I did the spicy miso with tsukemen noodles. The broth was delicious but it was waaaay too spicy. I told our server and she gave me a small bowl of regular miso broth. It definitely helped, but still spicy. Next time I will be asking for mild. This time they didn't ask what spicy level. I'm not sure if tsukemen noodles are usually like this, but the noodles were hard. I would have liked them to be a bit softer. I got chicken chashu as my protein. It had a good miso flavor! It was delicious. Got the chicken karage as an appetizer, it was good but there wasn't too much flavor. read more

I hate that I have to give lower stars, but I cannot give this place a 5 review. I'd give it 1 but the manager was nice so I will add 1 extra for kindness. We went for ramen. Red Flag 1) the waitress saw us sit down and gave menus to the party who came in after us Red Flag 2) the waitress asked us if we would like anything to drink and we ordered water. It took her forever to bring it Red Flag 3) The party next to our booth found hair in her soup and we flagged down someone for her, because gross! Red Flag 4) Husband asked her if the sashimi was ahi and she said we only have tuna and salmon. Ahi IS Tuna. Red Flag 5) The waitress pulled a crumpled piece of receipt paper out of her pocket to write our order on Neither of us finished our ramen. I had pork ramen and it had corn in it and what tasted like chicharrones rather than cuts of katsu pork. It was salty and the chicharrone-like things were fatty and turned my stomach. Tonkotsu ramen doesn't typically have corn in it! Husband had chashu pork soup and his soup was extremely sweet. For the first time ever, husband did not finish his food and he did not leave a gratuity, which is unusual for someone raised in Polynesia...they eat and eat. When the manager walked by to ask us if we wanted to-go bowls for our food, we both declined, which is also unusual. He asked husband in private what was wrong, and husband said, "It was too sweet. Not the way I am used to. Maybe it's different back home." Husband's sashimi was the wrong style of cut, or at least what he's used to. Being a person who went to culinary school, husband said it tasted low-grade. They didn't have spicy mustard and they didn't even know what that was. So he just asked for wasabi and ginger. We really wanted to like this place and lost our appetites quickly. I liked my ice water better than my soup. read more

Just came back from about a month in Japan, so my standards for ramen is probably more particular than usual. Almost faltered with coming in but so glad I didn't. Got the crispy pork ramen. Broth was decent, and would've merited a 4 stars. But the pork made this dish an easy 5 stars. Protein portion was generous. I didn't take a pic before eating because I didn't expect to be pleasantly surprised like so...so much so that I'm posting this as I am seated at the restaurant. Noticed the negative reviews were from 5-6 years ago, but if you look at the recent posts, they're pretty stellar. Was curious so I asked the server and was told the ownership transitioned to 4 friends about 2 years ago. I have without a doubt once H Mart opens in this plaza that this place will be buzzing. We have been here many times! Service is friendly and we have tried various ramens all the way to their fried rice. Ramen taste is a hit and miss. Some days it's yummy and others it came be a bit more greasy etc. Last time I thought mine was fine and hubby felt like his had an interesting pork taste. After ordering fried rice once we stopped ordering it because the taste was off....way overly buttery and I couldn't explain how that was fried rice. It's conveniently located inside the plaza with the Target with plenty of parking space. Lots of roll choices and usually the ramens are not bad...just lately it hasn't been consistent. I might try it one more time next time. read more

I'm a gluten free girly and there were rice noodles that weren't pho noodles!! You can even build your own bowl if you want I LOVED the motto black ramen with the black garlic oil. i've been to motto ramen a few times, but during my last visit i got a dish that i loved the flavors of so much! motto ramen is located in a big plaza alongside target, hmart, daiso, and chick fil a. it's a decent size restaurant that doesn't get too busy. they have a wide selection on their menu (ramen and non ramen items). i opted for the tom kha ramen with crispy pork and no bean sprouts. the tom kha flavor was perfect! the crispy pork was also delicious and reminded me of the crispy pork belly you would get a supermarket. i would say the noodle portion was a bit small compared to other ramen shops. motto ramen is for sure a place i would visit again and again for their tom kha ramen :) read more

Tried the shoyu creamy ramen and it did not disappoint. The broth was super rich and flavorful without being too heavy, and the noodles had the perfect chew. The toppings were fresh, and everything came out hot and fast. Definitely one of the better bowls I've had in a while -- would order again for sure. Had a really nice atmosphere with great service! THIS PLACE HIT THE SPOT!!! It is a hidden gem! We've been looking for a legit ramen place in the area and this definitely satisfied our cravings. We ordered The Shoyu, Motto Red, and Motto Black and everything was spectacular. It is at par with the best ramen places in the OC for sure. The ingredients were fresh, the chasu pork was chefs kiss and it is marinated perfectly (not too thin and not too thick). Service was quick and the young gentleman was very attentive of our needs the moment we walked in. You have really good customer service skills at that age! Hands down still my favorite ramen! Even though I think they changed hands awhile back, they still serve the same ramen and added MANY items to the previously small menu. I get the "Moto Black" which is filled with Black Garlic oil, bean sprouts, egg and woodear mushrooms... DELICIOUS!! Tonight I tried the new version of pork bun. They have two kinds. The new option is fried and crispier, but after trying it, I prefer the regular. Frying is crispier, but also tends to be drier. Both made with their exceptional pork belly which melts in your mouth. (Not a fan of thin pork in most ramen). This pork belly is AMAZING. Very flavorful and cooked to perfection! Their fried rice is normally over the top, with the same pork belly, shredded. Today, however, I smelled too much fish sauce. Maybe a fluke because it's usually VERY good. read more

This place has no right being this good, it's ridiculous We are regulars here and I always forget to take a photo because we're so excited to dig in. This time I remembered, but not before getting halfway through our meal! Anyways, if you're sick of subpar ramen and sushi definitely give this restaurant a shot, you won't be disappointed (and be warned, you probably won't ever want to go anywhere else after you've eaten here once ). This ramen/sushi place is in the plaza where Target and Chick Fill A is. Anyone who is familiar with the area will know that parking is limited during peak times. It's located next to beauty salon and by Target Inside gives the vibe of a classic Sushi place. However, they also have sushi and rice dishes. In addition, they have a dedicated vegan option. You are given two menus: sushi and the rest of it. Sushi is not all you can eat. You can choose selected ramen or build your own ramen, where extra $1 can make it spicy Order the chicken pad-Thai and the motto special. Chicken pad Thai is very moist and the plating is clean, and gorgeous. Motto special plus spicy bowl spicy is little small but it rewards in taste. It's not spicy if you are spicy lover and it will tickle your throat. Service is awesome, even though it was kind of empty at the time Overall, highly recommended on giving this place a try. We specialize in japanese ramen noodles. Our broth were made from the scratch daily in the store with high quality water. We never use tap water. Our broth characteristic is rich, milky, creamy and contain a lot of bones marrow. Come and taste the difference.

I started working since i was young at restaurant, and I moved around the state for new experiences. I started work restuarant in Asian Fusion , Japanese and Thai.I like to cook, making sauces , created, presentation and trying new things - Ramen and sushi are of my favorite interests. I create my own sauces, chashu,spices, and broth with filtered water. I went to many sushi and ramen places and ate ramen and sushi from young age and always tried the original tonkotsu, chicken and tsukeman and all sushi nigiri's , sashimi and rolls .There are many sushi and ramen shops all restaurant's different .I would like to make unique flavor pork and chicken broth with home made chashu with quality control to serve for all customers enjoy our food.

I ordered the chicken curry katsu. The katsu came out super crispy... light, crunchy breading that held up all the way through without getting soggy. The curry itself was rich and flavorful without being overpowering, and it paired really well with the rice. Everything felt intentionally balanced, just the right ratio of curry to rice. I would definitely come back if I'm in the area.

[Missing noodles, expensive ramen, bad customer service, and no reason to come back.]…read more I visited this restaurant to place a to-go order and picked up my food during a late lunch around 1:40 p.m. I ordered two items, including a bowl of tonkotsu ramen. When I got back to work in Santa Ana and opened my bag around 2:30 p.m., my ramen had NO NOODLES. It was literally just broth and toppings. I called the restaurant expecting a simple apology and a reasonable solution. Instead, the manager would not even speak to me directly and chose to communicate through a waiter the entire time, which made the situation even more frustrating. We went back and forth multiple times with the waiter acting as the middleman. First, they told me I could come back and pick up the missing noodles. That was not realistic. I was already back at work, and it takes me about 25 minutes to get from Fountain Valley to Santa Ana. Driving all the way back for a side of noodles made no sense. So I asked for what seemed like the easiest and most reasonable solution: a complimentary bowl of ramen on my next visit. Instead, I was told no, but they could give me "extra noodles" next time. Extra noodles next time? What exactly was that supposed to do for me when I was sitting there hungry with no actual ramen to eat that day? Then the manager, again through the waiter, said she would personally drive noodles to my job. I even told them that did not make sense because by the time she got there, it would be around 4:30 p.m. At that point, my lunch break would be long over, the ramen would be cold, and all of it would be a waste of my time, her time, restaurant resources, and gas. But I agreed, because at that point it was obvious they really did not want to simply offer me a free bowl of ramen on my next visit. And to be clear, I was not asking for some huge free meal. I was asking to be compensated for the ramen I already paid good money for and did not even receive correctly. For how expensive ramen is, that should not have been a difficult ask. About 10 minutes later, the waiter called back and said the manager would give me a free bowl of ramen next time I came in, which was the exact solution I had suggested from the start. I can only assume she realized how far the drive was and how unnecessary and impractical that solution would have been. Mistakes happen. Forgetting the noodles was one thing. But the way this was handled was unnecessarily difficult, inconvenient, and honestly kind of absurd. I did not ask for a refund. I was looking for an apology and some common-sense customer service. Instead, I got a lot of back-and-forth and a manager who would not even speak to me directly. Kudos to the waiter for doing their best to mediate the situation. Even they thought the situation could of been handled differently by the manager. Very disappointing experience. I will not be returning, and I would not recommend this place to others based on how this situation was handled.

I've tried ox tongue at a few different restaurants and also even in Japan, but the one here at Tsukasa is most definitely different than the ones I have had at other restaurants in the U.S. The charcoal grilled ox tongue pieces were very thick, and of very good quality. They were easy to bite and chew, which is a huge plus in our books. Yes, the meal is simple, but sometimes a simple meal is the hardest to prepare. The soup was not oily at all and there were plenty of green onions and the oxtail pieces were so soft. Everything was fresh and delicious, from the main entree to the rice and the veggies, and not overly greasy in any way. Yes, the price is higher than others in the food court, but there is a reason why it is also one of the busiest.
