We tasted two olive oils form their harvest. One was more of the less ripe olives and one was of the more ripe olives. Both were tasty. One more and the other less acidic. Both peppery. The. Came a couple of oils form Italy and Spain. I liked the Spanish one much better and it went well with the bread and was candidly amazing in its own Then rhe balsamic vinegar came. Aged to 18 years the fist was perfectly acidic and quite viscous. The second one an infused with ripe figs for a year. More sweet for me but perfectly balanced. For example, while others had an olive oil gelato, I had an olive oil sorbet with a blood orange gummy. It was really interesting. In no way did I feel deprived or like I was missing out. In fact, mine might have been better than what the others had. That was the last course though. Before that, we did olive oil tastings with bread and popcorn and balsamic vinegar tastings with cherry tomatoes. They used to make all the food in house but now partner with some local places. Amberly also did a wonderful job walking us through details around the tastings and it was very informative. The whole thing takes place indoors and the interior is cute with plenty of olive oil lining the walls. I would absolutely go back to do it again in the future and recommend it to anyone considering it!
