Settled on the Mole, Kimchi, Jack o' lantern, Batsauce, Barrel, Aji gold and Carrot habanero....I find that I reach most often for the Kimchi and Jack o'Lantern...but they are *all* killer. None of them overpower, they are about flavor, not macho BS-melt-your-tongue-off-hot. They are a wonderful range of flavors - the Batsauce is fruity and funky, the Kimchi is wonderfully tangy, rich and savory, and I love how light the Carrot is - goes with a lot, tad sweet with a kick. The Jack is simple - and doing simple well, I've found, is a true testament of craftsmanship. Rock on, co-op sauce.
