    Food: Awful. This restaurant felt like a place that copied a sushi restaurant. Fish was not fresh - smelled. The sauces were unbalanced for many dishes. The wagyu dumplings tasted as if someone dumped cinnamon. Service: It was NYE. I get it - the restaurant is busy. However, after booking my table for 1 month in advance to celebrate an anniversary, they placed my husband and I on a high top by the entrance of the restaurant. We didn't want to sit there. Frankly, it was a horrible seat. The hostess was incredibly rude about it when we inquired about being seated elsewhere. The manager found a way to accommodate us in the main dining room, but I was shocked by the service. The waiters were very pleasant, however, so nothing against the wait staff. My last thought is - this restaurant felt like one giant cultural appropriation of Japanese food and culture. Everything inside the restaurant, including the food, felt like imitation.

    Had a friend excited to try this place, especially because Jeff Bezos went. Very cool atmosphere and nice bar in the downstairs space. Service was great, drinks good. All good things end there. The food is not good. Very let down with the actual taste of everything. Tuna tar tar was not edible, spit it out and returned it. Very thing else as just meh. Good for a night out drinking, eat before or after.

    After the new Chef Jake arrived (previously from Nobu Miami) this restaurant is my go to. The food is INCREDIBLE. Ambience is sexy, music selection is great. Waiters and waitresses very attentive. It's the spot if you're out in Aspen.

    I have traveled the world eating at good restaurants and this was my favorite in Aspen. The music, ambience, food and service was outstanding. Highly recommend the scallops. Lychee martinis were great too! Eating there again this week!

    Wagyu gyoza

    Ooph. Where to begin. The best thing I had here was my glass of wine and the spicy edamame. The menu looked so promising but failed to deliver. I don't eat seafood but was so excited about the Wagyu ramen. The presentation was nice but it lacked flavor in just about every way. Quality of meat did not taste like the A5 I'm used to eating back in CA. I ended up giving the dish to my boyfriend because he did not like his roll - ate one piece and by the look on his face I thought he was going to return it to the plate. I ordered the wagyu gyoza instead since I was still hungry and it had an overwhelming taste of cinnamon? Also was very dry so ended up dunking them in soy sauce which was a shame. My boyfriend enjoyed the other hand rolls he ordered but again, nothing special and just didn't match the price tag. He's had much better sushi for half the price. Perhaps we are spoiled by restaurants like Nobu and Sugarfish where we live so our standards are higher. Service was fine, nothing remarkable but they were busy so that's understandable. Our server was kind. The design/vibe of the restaurant was cool but the music was so loud we had to shout over the table to hear each other. Disappointing overall after spending nearly $400. Will not be back for dinner but maybe for a drink at the bar.

Great bun to filling ratio and the spicy slaw was a complemented the burger well. The fries were pricey and I didn't realize that they weren't a side but an appetizer, but these fries were super crispy and delicious. You could tell that they were fried freshly on the spot. The creamy sauce it came with paired well with them! Deviled eggs were savory and had a kick from the pickle relish. This was my first time eating creamed corn and I liked it! It was warm and creamy, with a slight kick from the jalapeño slices.

So glad we did. On our last night in town, we had reservations at a restaurant down the street and came here for a pre-meal beverage. Upon entering the Hyatt, a see-through fireplace to the left serves as your initial glimpse into the tasting room. Coming from the traditional mountain chic of the hotel, the Marble Bar's decor is strikingly different, with its HGTV clean lines / grey / white modern aesthetic. Yet it still manages to be wonderfully cozy with multiple small group sitting areas, complete with fur throws and the aforementioned wood burning fireplaces, as well as bar seating if that's more your thing. There is also an outdoor fire pit that looked tempting, but it was snowing pretty heavily, and we said another time. The place was quiet with only 2 other patrons when we first arrived, but after about 30 mins it was quite lively. The mixologist (not to sound pretentious, but 'bartender' just doesn't do her justice) was amazing. I'm so sorry I can't remember her name, but if I say Boston then it should be obvious who I'm referring to. She was a great conversationalist, excellent cocktail fabricator, and really helped get our evening off to a perfect start. We would have stayed longer if it weren't for those reservations. As for the most important piece, the beverages! We had 4 different whiskey based cocktails amongst the group, and all were absolutely fantastic - there was a lot of sharing. I had The Paragon and enjoyed it so much went home with a small bottle of the Moonlight EXpresso (not a typo) Reserve to try to recreate the magic. I was told it was one of the first liqueurs created by the owner, and the website has a recipe for cheesecake, which I certainly will be trying. The actual distillery is located in Carbondale (a road trip is clearly in order), but this tasting room outpost located in the Hyatt in downtown Aspen is very highly recommended.
